Weinviertel in Deinem Viertel geht in die n\u00e4chste Runde und so hei\u00dft es auch heuer im Jahr 2017 wieder f\u00fcr 16 Top M\u00fcnchner Gastronomien &#8222;Weinviertel in Deinem Viertel&#8220;. Anders als letztes Jahr, stelle ich nicht alle Gastronomien alleine vor, sondern \u00b4teile` mir die M\u00fcnchner Weinviertel-Tour heuer mit meinen Kollegen Harald Scholl (&#8222;<a href=\"http:\/\/tellerschubser.blogspot.de\/\" target=\"_blank\" rel=\"noopener noreferrer\">Tellerschubser<\/a>&#8222;) und\u00a0Dorothee Beil (&#8222;<a href=\"http:\/\/www.bushcook.de\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bushcooks kitchen<\/a>&#8222;). If you prefer to visit specific restaurants and don&#039;t want to look for chairs, simply check the... <a href=\"http:\/\/www.weinviertel-in-deinem-viertel.de\" target=\"_blank\" rel=\"noopener noreferrer\">Website<\/a> from Weinviertel in your neighborhood 2017 and finds all participating restaurants there.<\/p>\n<p>Many Munich wine merchants are also participating again this year, offering a wide range of great wines for your home \u2013 in case you can&#039;t get enough of a particular wine in a restaurant (<a href=\"http:\/\/www.weinviertel-in-deinem-viertel.de\/10-weinhaendler\" target=\"_blank\" rel=\"noopener noreferrer\">Dealer list<\/a>). Heute m\u00f6chte ich euch \u00fcber meinen Besuch im ersten &#8222;meiner&#8220; vier Restaurants berichten &#8211; die Neo-Brasserie &#8222;Hoiz&#8220; in der innenst\u00e4dtischen Karlstra\u00dfe. Auf der Speisekarte der rustikal-gem\u00fctlichen (&#8230;eben mit viel &#8222;Hoiz&#8220;&#8230;.) eingerichteten Brasserie, stehen sowohl Loup de Mer (Fisch vom Lurz Fisch- und Feinkost aus M\u00fcnchen), Steak Frites, Spare Ribs, Tatar vom Bayerischen Weideochsen (Allg\u00e4uer Metzgerei), aber auch Austern, ein unterschiedlich &#8222;getoppter&#8220; Caesar Salad, (aktuell) Spargel-Nudeln und auch Snacks bzw. Kleinigkeiten in der Kategorie &#8222;Das geht immer&#8220; (z.B. Flammkuchen, K\u00e4sevariation, Austern&#8230;). Auch diverse Desserts, wie zum Beispiel eine Schokoladen Salz-Karamell Tarte oder Haselnussmeringue (Baiser) werden angeboten. Neben der kreativ im &#8222;Lesebuch&#8220; \u00fcberreichten Standard-Speisekarte \u00a0bietet die Brasserie au\u00dferdem auch ein Mittagsmen\u00fc (Pasta oder Risotto im Wechsel samt Espresso f\u00fcr 15,50\u20ac) von 11:30 Uhr bis 15:00 Uhr an. Bei einem Blick auf diese, f\u00e4llt auf, dass zwei der drei Weinviertler Weine &#8211; darum ging es ja prim\u00e4r bei meinem Besuch &#8211; gelistet sind, sprich dauerhafte Posten sind und auch nach Ablauf der Weinviertel in Deinem Viertel 2017-Aktion verf\u00fcgbar sind. Im Hoiz n\u00e4mlich wird nur mit\u00a0hochwertigen Zutaten gekocht. Das Ergebnis ist eine Mischung aus modern-rustikaler und ins bayerische gehende K\u00fcche, welche mit einer gro\u00dfz\u00fcgigen Auswahl an den dazu passenden Weinen erg\u00e4nzt wird. Diese Kombination gepaart mit dem freudigen Fakt, dass die Hoiz-Terrasse bis 01:o0 Uhr morgens ge\u00f6ffnet hat, klingt doch nach dem perfekten Sommermoment, oder?<\/p>\n<p>Nun zum Test: An einem der zahlreichen Zweiertische platziert, gab es f\u00fcr meine Begleitung und mich einmal die\u00a0<span class=\"s1\">Spare Ribs vom Th\u00fcringer Duroc Schwein (- bekannt f\u00fcr seine feine Marmorierung mit hohem intramuskul\u00e4rem Fettanteil -) mit Bourbon Marinade, (ziemlich salzigen) S\u00fc\u00dfkartoffelfries und einem gelungen marinierten Maissalat (f\u00fcr 18,50\u20ac) sowie das Tatar vom Bayerischen Weideochsen (aus dem Allg\u00e4u) mit Schalotten-Cr\u00e8me Fra\u00eeche und ger\u00f6stetes Malzbrot (f\u00fcr 14,50\u20ac oder 19,50\u20ac als Hauptgericht). Bevor die Hauptgerichte serviert wurden, \u00fcberraschte man uns neben frischem Brot mit hausgemachtem Rote Beete-Aufstrich, mit\u00a0einen `kleinen\u00b4 Appetitanreger in Form eines Brotzeitbrettls mit K\u00e4sew\u00fcrfeln, Kapern, Bayonne Schinken IGP (zart, dezent und leicht s\u00fc\u00df aus S\u00fcdfrankreich) und Toskanischer Pancetta Rigatino (Bauchspeck). Ein k\u00f6stlicher wie auch qualitativ hochwertiger Einstieg in den kulinarischen Abend.\u00a0Ein Tatar ist in meinen Augen &#8211; gewollt oder ungewollt &#8211; stets eine gute Messlatte\u00a0f\u00fcr die Qualit\u00e4t der Speisen und das K\u00f6nnen des Teams vor Ort. Viele hab ich probiert, einige verschm\u00e4ht, das bayerische Tatar im Hoiz jedoch \u00fcberzeugt geschmacklich, ist sehr fein und bekommt nochmal einen zus\u00e4tzlichen \u00b4Touch` durch die recht eigene und auf dem Tatar platzierten Schalotten-Cr\u00e8me Fra\u00eeche. Mit dem Wein &#8211; gleich mehr dazu &#8211; ein gelungenes Dinner. Vor diesem gab es \u00fcbrigen als Starter im Glas einen spritziger Aperitif. Einen trocken-blumigen Muskateller aus der Pfalz von Andres &amp; Mugler. Das Hoiz, mit Platz f\u00fcr bis zu 85 G\u00e4ste, \u00a0ist in meinen Augen der richtige Treffpunkt, wenn ihr einen entspannt gem\u00fctlichen Abend in lockerem Ambiente, mit feinem, aber nicht abgehobenen Essen, ohne viel Schi Schi und Schnickschnack genie\u00dfen wollt. Der Service ist locker, kompetent und freundlich. Mit Zeitdruck solltet ihr am Abend nicht kommen. Fragen zu Speis und Trank bzw. auch Extraw\u00fcnsche werden gerne am Tisch beantwortet und W\u00fcnsche umgesetzt. Flexibilit\u00e4t ist f\u00fcr das nette Hoiz-Team kein Problem und so k\u00f6nnen auch Allergiker und Menschen mit Einschr\u00e4nkungen gut im Hoiz essen gehen. Gesch\u00e4ftliche oder private Anl\u00e4sse und Feiern k\u00f6nnen nach Absprache und Men\u00fc-Besprechung im Hoiz in Form geschlossener Gesellschaften gebucht und durchgef\u00fchrt werden. Nat\u00fcrlich seid ihr hier auch einfach nur f\u00fcr ein gutes Gl\u00e4schen (Weinviertel) Wein, einen sommerlichen Drink oder Kaffee (Pascucci) und\/oder kleinen Snack willkommen. Die regul\u00e4re Speisekarte wechselt je nach Saison ca. 5-6 mal im Jahr. Bewusst dazu gew\u00e4hlt haben wir Fleisch! Der\u00a0Naturwein hat eine best\u00e4ndige Struktur und eine spannende Textur im Mund. Marillensaft vereint sich bei diesem mit einer breiten Palette an Gew\u00fcrzen wie Safran, Zimtrinde, Muskatbl\u00fcte und -nuss, welche f\u00fcr eine frische Note und nussige W\u00fcrze sorgen. &#8222;NV&#8220;, das steht bei diesem Wein \u00fcbrigens f\u00fcr &#8222;Nicht vorhanden&#8220;, was sich auf den Jahrgang bezieht. Da es sich bei dem Naturwein um einen\u00a0im Solera-System aufgebauten Wein handelt ist die Nennung &#8222;eines&#8220; Jahrgangs nicht m\u00f6glich. Das Solera-System n\u00e4mlich ist ein System, bei welchem sogenannte \u00fcbereinander gestapelte&#8220;Botas&#8220; (F\u00e4sser) unterschiedlich alte und gereifte Weine enthalten. Dabei beinhalten die F\u00e4sser der oberen Reihe die j\u00fcngsten, die F\u00e4sser der untersten Reihe (&#8222;solera&#8220; = &#8222;am Boden liegend&#8220;) die \u00e4ltesten Weine. Durch ein bestimmtes Verfahren, vermischen sich dabei alte mit jungen Weinen miteinander (&#8222;Verm\u00e4hlung&#8220;). In einem solchen Verfahren hergestellte Weine bezeichnet man als Solera, wie es eben der REVOLUTION White von Zillinger ist. Stark schmeckbar die Gerbstoffe, welche sich beim Genie\u00dfen bemerkbar machen und f\u00fcr die erw\u00e4hnte und bezeichnende Textur sorgen. Struktur bekommt der Wein durch den maischevergorenen Chardonnay, die Scheurebe sorgt f\u00fcr Frucht und Eleganz.
