Aber nein, ich war einfach nur so gl\u00fccklich da sein und wieder einmal einen Blick hinter die Kulissen von Rischart werfen zu d\u00fcrfen. Mein dritter Besuch bei Rischart, mein zweiter in der Produktionsst\u00e4tte in der Buttermelcherstra\u00dfe. Das erste mal ging\u00b4s f\u00fcr den <a href=\"http:\/\/biancas-blog.de\/alle\/rischart-cafe-kaiserschmarrn\/\" target=\"_blank\" rel=\"noopener noreferrer\">Hochzeitstortenanschnitt im Cafe Kaiserschmarrn<\/a> auf die Wiesn, beim zweiten Mal war ich zur Weihnachtszeit f\u00fcr die <a href=\"http:\/\/biancas-blog.de\/alle\/elisenlebkuchen-von-rischart\/\" target=\"_blank\" rel=\"noopener noreferrer\">Elisenlebkuchen von Rischart<\/a> vor Ort. Diesmal, vielleicht ahnt ihr es schon, ging\u00b4s um das Ostersortiment, welches ihr inzwischen schon bei Rischart in den einzelnen Filialen kaufen k\u00f6nnt. Beinahe m\u00f6chte ich schreiben: Los geht\u00b4s ins Paradies, denn f\u00fcr mich ist das Rischart, bzw. das Traditionsunternehmen\u00a0<a class=\"_2wma\" href=\"https:\/\/www.facebook.com\/rischart\/?ref=page_internal\">Max Rischart&#8217;s Backhaus KG<\/a> in der Tat. In meinem Blut m\u00fcsste mittlerweile schon Rischart Schnittlauch-Zopfbreze nachweisbar sein und auch das restliche Sortiment inklusive saisonaler bzw. anlassbezogener K\u00f6stlichkeiten (Datschi, Krapfen, Petit fours, Lebkuchen oder auch der Osterfladen) wurde schon rauf und runter von mir verkostet. Sp\u00e4testens, wenn man Werbeslogan wie (aktuell zur Osterzeit) &#8222;Feel the Fluffy Fladen&#8220; oder &#8222;Lass mich Dein Datschi sein!&#8220; zur Zwetschgen-Zeit liest, dann muss man eigentlich schon Lust bekommen. So zumindest ging es mir und das \u00d6ffnen der Backstuben-T\u00fcr\u00a0glich fast dem \u00d6ffner der Wohnzimmert\u00fcr damals als Kind, wenn man wusste dahinter verbirgt sich der Weihnachtsbaum mit Geschenken. In diesem Fall waren es Backwaren noch und n\u00f6cher und fein duftende K\u00f6stlichkeiten von der Breze, den verschiedenen Kuchen, Croissants, Nussschnecken, s\u00fc\u00dfen Teilchen und Torten, bis hin zu den aktuell nat\u00fcrlich auf Hochtouren produzierten Osterwaren, welche mich nach dem Eintreten erwarteten. Die Backstube besteht aus verschiedenen Hallen, \u00fcberall wird etwas anderes produziert, vorbereitet, von A nach B gefahren, verziert oder auch belegt. Eine echte Reiz\u00fcberflutung f\u00fcr mich, das Ziel war nat\u00fcrlich die Osterfladen-Station. Auf die n\u00e4mlich, sowohl in Form als klassischer Osterfladen, als auch in der etwas fr\u00fchlingshafteren Variante mit Marillen, habe ich einen n\u00e4heren Blick geworfen. Rein auf diesen bezogen, ist der Rischart Osterfladen wesentlich leichter und fluffiger, als die meisten Osterfladen, die ich in meinem bisherigen Leben gegessen habe. Schnell f\u00fchlt man sich in der Regel danach etwas schwer bzw. als h\u00e4tte man zu viel S\u00fc\u00dfes gegessen. Der osterliche Rischart Fladen\u00a0&#8211; im \u00dcbrigen in 300 Gramm und 500 Gramm-Gr\u00f6\u00dfen in der klassischen Variante erh\u00e4ltlich &#8211; hingegen ist nicht zu s\u00fc\u00df, bzw. luftig leicht und bekommt seine S\u00fc\u00dfe in erster Linie durch die saftig-australischen Sultaninen sowie die gehobelten Mandeln und den Hagelzucker als Garnitur. Einzigartig macht den Osterfladen der besonders feinporige und somit insgesamt wesentlich feinere Hefeteig. Anders als bei vielen B\u00e4ckereien, wird zuerst ein Vorteig gefertigt, welcher viel Zeit zum Ruhen bekommt und insgesamt ein st\u00e4rkeres Aroma beim fertigen Fladen frei gibt. Dadurch wird dieser schon einmal wesentlich fluffiger (&#8230;da haben wir\u00b4s das &#8222;fluffy feeling&#8220;&#8230;) als andere Osterfladen und beh\u00e4lt parallel seinen nat\u00fcrlichen Geschmack. Weder zu zuckrig also, noch zu klebrig und mit viel Zeit und Ruhe in den einzelnen Produktionsschritten hergestellt. Das (n\u00e4chste) T\u00fcpfelchen auf dem i d\u00fcrften die frischen bayerischen Eier sein, welche in dem Teig landen und dieses so noch luftiger werden lassen. Der Teig kann sch\u00f6n aufgehen, wird in liebevoller Handarbeit zum typischen uns bekannten runden Osterfladen geformt und gebacken. Das Ergebnis 3oo bzw. 500 Gramm gro\u00dfe, golden gebackene Osterfladen die sooo Lust machen direkt ein St\u00fcckchen zu probieren. Von der Teigbasis her gleich, nur eben mit lieblich-fruchtigen Marillenst\u00fcckchen versehen. Durch diese bekommt der Marillenfladen von Rischart eben nochmal eine ganz eigene und fruchtige Note, sorgt daf\u00fcr nat\u00fcrlich zus\u00e4tzlich f\u00fcr eine &#8222;andere&#8220; und intensivere S\u00fc\u00dfe und den ganz\u00a0besonderen Oster-Geschmack. Beim direkten Probiervergleich fiel es mir relativ schwer einen Favoriten zu nennen. Geschmacklich, wenn man den Fladen pur und ohne zum Beispiel Marmelade oder zus\u00e4tzliche Butter probiert, ist ein deutlicher Unterschied erkennbar und die Marille schmeckt klar heraus. Fluffig und weich sind sie beide und beide haben mir gut geschmeckt. Der klassische Fladen ist ein wenig mehr als &#8222;Osterfladen&#8220; im Kopf &#8222;eingespeichert&#8220; wie ich finde und daher noch traditioneller. Das kann ich auch!&#8220;, habe ich mir gerade in Sachen handwerkliche Lebensmittelherstellung schon lange abgew\u00f6hnt. Meistens n\u00e4mlich, wenn man dann selbst ran darf, merkt man relativ schnell &#8222;Oh, doch nicht!&#8220;. Ich zumindest wurde ein weiteres mal beim &#8222;Marillenfladen formen&#8220; in dieser These best\u00e4tigt. W\u00e4hrend im vorderen Bereich die 300 und 500 Gramm-Teigkugeln zu klassischen Osterfladen geformt, au der Teigoberfl\u00e4che eingeritzt und mit Mandeln und Hagelzucker bestreut wurden, ging es etwas weiter hinten den 350 Gramm-Teigportionen samt Marillenst\u00fcckchen an den Kragen. Dort n\u00e4mlich standen schon zwei Herren an der jeweiligen Station und formten &#8211; teilweise mit zwei H\u00e4nden und Teigkugeln gleichzeitig &#8211; die Fladen. Ich hab das dann mal versucht nachzumachen und &#8230;.ja&#8230;.lassen wir das Thema einfach sein. \ud83d\ude09 Meine Fladen wurden eher rissige Teigw\u00fcrste und so leicht ist es wie gesagt gar nicht, sch\u00f6ne und einheitliche Fladen in der genau richtigen Teigmenge zu produzieren. (Durch das Ruhen und nat\u00fcrlich auch Backen ver\u00e4ndert sich das Gewicht des Teiges, was vorab nat\u00fcrlich einkalkuliert werden muss.) Den Teig selbst macht nat\u00fcrlich auch das bayerische Mehl und die bayerische Hefe sowie die frisch aufgeschlagenen ebenfalls bayerischen Eier samt deutscher\u00a0Markenbutter so saftig. Nach dem Formen, Einschneiden und Bestreuen wird sich ein wenig ausgeruht\u00a0&#8211; also nur als Osterfladen \ud83d\ude09 &#8211; und dann wird alles gebacken. Und da entgingen mir nat\u00fcrlich auch all die anderen Osterk\u00f6stlichkeiten nicht. Das Highlight und auch kaum wo anderes als bei Rischart in M\u00fcnchen zu bekommen bzw. schon gar nicht in dieser Qualit\u00e4t: Die Pinza.\u00a0&#8222;Pin&#8230;was?&#8220;, mag sich jetzt der ein oder andere fragen (und habe auch ich fragen m\u00fcssen), aber hey&#8230;das m\u00fcsst ihr probieren. Wenn ihr Fladen m\u00f6gt, m\u00f6gt ihr Hefeteig. Und wenn ihr Hefeteig m\u00f6gt, werdet ihr die Rischart Pinza &#8211; ein traditionell italienisches Ostergeb\u00e4ck &#8211; lieben. Das ist eine in der Herstellung sehr aufw\u00e4ndige Ostermehlspeise mit dezentem Geschmack nach Orangeat und Zitronat. Dazu frische Eier, echte Markenbutter\u00a0und ein sch\u00f6n saftiger Teig, der beim Essen f\u00f6rmlich auf der Zunge zergeht. K\u00fcnstliche Zusatz- und Konservierungsstoffe sind nat\u00fcrlich nicht enthalten, lange Frische gibt\u00b4s trotzdem. Noch hab ich keine Pinza probiert, aber gleich hol ich mir Nachschub von Fladen, Marillenfladen und eben auch eine Pinza. Wenn ich noch Platz bzw. genug Muckis zum Tragen habe, dann pack ich mir oben noch eines der ebenfalls einzeln in der klassischen Osterlamm-Form hergestellten Osterl\u00e4mmer drauf. Die gibt es in vier verschiedenen Sorten mit Puderzucker, Vollmilchschokolade, Zartbitterschokolade oder auch mit wei\u00dfer Schokolade und Kokos. Hach&#8230;wie sehr ich mich schon jetzt darauf freue, alles auszupacken und mir ein wenig von Rischart\u00b4s Ostersortiment zu g\u00f6nnen. Oh ja, eines der wichtigsten Dinge h\u00e4tte ich fast vergessen. Die Oster-Torten (drei verschiedene Sorten: Sommertraum mit Mango-Maracuja Mousse; Schoko-Mousse und Spanische Vanille) und die Oster-Petit fours. Auch die geh\u00f6ren nat\u00fcrlich fest dazu und ich werde mir als absoluter Petit four-Junkie mindestens jede Sorte (Erdbeere, Schokolade, Mango, Haselnuss) einmal holen. Wer es mir gleich tun will, der muss unbedingt am Gr\u00fcndonnerstag und Ostersamstag losziehen, denn nur an diesen beiden Tagen, werden die Petit fours verkauft. Im Vorjahr n\u00e4mlich wurden insgesamt 18.700 Rischartfladen (klassische Variante in 300 und 500 Gramm) hergestellt. Wahnsinn, oder? \u00c4hnlich bei den fruchtigen Marillenfladen: 3.600 St\u00fcck gingen \u00fcber die Rischart-Tresen und landeten in den M\u00fcnchner B\u00e4uchen. Bei der beschriebenen Pinza dauert die Herstellung f\u00fcnf (!) Stunden und es wurden 2016 ganze 3.547 St\u00fcck verkauft. (Heuer wird es mindestens eine mehr! ;-)). Bei den Osterl\u00e4mmern waren\u00b4s insgesamt bei allen vier Sorten 5.400 St\u00fcck. Die 2.540 Oster-Petit fours sind definitiv nicht alle von mir gekauft worden ;-), einen Teil habe ich dazu aber sicherlich beigetragen.
