Jetzt, nach meinem k\u00fcrzlichen Besuch in der neuen Del Fiore Eis-Manufaktur in Sendling, muss und m\u00f6chte ich es nochmals \u00f6ffentlich machen: Wer auf gutes Eis steht, wird das von Del Fiore Gelato lieben! Unumstritten: Das Eis ist anders und schmeckt anders. Wer bis dato gern in die Tiefk\u00fchle beim Supermarkt gegriffen hat oder gerne Eis in Dielen aus teilweise 20 cm hoch get\u00fcrmten Eis-Boxen isst, der wird sich wundern nach dem ersten L\u00f6ffel. Sp\u00e4testens nach dem zweiten, wollt ihr nie mehr ein anderes essen.<\/p>\n<h1 style=\"font-size: 15px; margin-bottom: -7px;\"><b>Was\u00a0sich bei Del Fiore Gelato getan hat<\/b><\/h1>\n<p>Als Del Fiore Gelato noch in den Kinderschuhen steckte, Mitte 2014, habe ich mich schon daf\u00fcr interessiert und euch \u00fcber das Caf\u00e9 am G\u00e4rtnerplatz, samt Men\u00fc und eben auch dem Eis\u00a0<a href=\"http:\/\/biancas-blog.de\/alle\/eisdielebistro-del-fiore-isarvorstadt-italienisch\/\" target=\"_blank\" rel=\"noopener noreferrer\">berichtet<\/a>. Nun hat sich einiges getan und ich freu mich, das\u00a0mit euch teilen zu k\u00f6nnen. Del Fiore Gelato n\u00e4mlich kommt in den Handel, bzw. ist es schon jetzt in 30 verschiedenen L\u00e4den in M\u00fcnchen verf\u00fcgbar. (<a href=\"http:\/\/delfiore-gelato.de\/der-handel\/\" target=\"_blank\" rel=\"noopener noreferrer\">Hier<\/a> kannst Du Dir Del Fiore Eis f\u00fcr Zuhause im 500ml (und bald 150ml Becher) holen.) Ab Mai\u00a0werden peu a peu auch zahlreiche weitere Feinkostl\u00e4den, Bio-Stores und Co. folgen. Bio? Ja, richtig! Das Del Fiore-Eis ist inzwischen bio-zertifiziert. Bio selbst, sind aber ganz bewusst nur die Sorten, bei denen Stefano De Giglio &#8211; der Inhaber und Entwickler von Del Fiore Gelato &#8211; gew\u00e4hrleisten kann, dass die Zutaten in 1A Bio-Qualit\u00e4t verf\u00fcgbar sind. Ist das nicht so, wird das Eis aus nicht-biologischen Zutaten hergestellt um den Qualit\u00e4tsanspruch zu halten. Das n\u00e4mlich ist das wichtigste bei dessen Eis-Angebot: Top-Qualit\u00e4t! Und diese h\u00e4ngt von verschiedenen Kriterien ab. Entscheidend ist hierbei nat\u00fcrlich auch das Ergebnis, das fertige Premium-Eis, welches als Endprodukt eben ganz massive Qualit\u00e4tsunterschiede zu anderen M\u00fcnchner Eisdielen aufweist. Anders, als in der Regel bei der Eis-Produktion angesetzt, wird hier kein &#8222;Standard-Zucker-Basismix&#8220; verwendet, welcher mit verschiedenen Geschm\u00e4ckern und Aromen angereichert wird, sondern je nach Frucht wird der entsprechende &#8222;Eisk\u00f6rper&#8220; kreiert. (&#8222;Eisk\u00f6rper&#8220; ist in dieser Verbindung sogar ein eigens ins Leben gerufener Begriff, da eine solch innovative und nahezu revolution\u00e4re Methode der Eisherstellung wie bei Del Fiore bis dato noch nicht umgesetzt wurde, sprich plump gesagt, kein Wort daf\u00fcr in der Fachsprache vorhanden ist.) Im Konkreten hei\u00dft das: Ein Haselnuss-Eis hat beim Del Fiore Gelato eine vollkommen andere Zusammensetzung\u00a0und Zucker-Art als Basis, als es ein Kokos-, Pistazien- oder Vanilleeis hat. Einfach ausgedr\u00fcckt: Die Frucht steht im Fokus. Erst wird die beste Haselnuss, die beste Kokosnuss (junge Kokosn\u00fcsse mit bestem Aroma) oder auch die hochwertigste Vanilleschote ausgew\u00e4hlt und im Anschluss darum ein Ger\u00fcst &#8211; der erw\u00e4hnte &#8222;Eisk\u00f6rper&#8220; &#8211; gebaut. Spannend, oder? Ein v\u00f6llig neuer Ansatz und der Hauptgrund, warum jedes Eis ganz besonders und anders schmeckt. Ich hatte in der Manufaktur die M\u00f6glichkeit am Beispiel &#8222;Haselnuss&#8220; zu erkennen, wie gro\u00df die geschmacklichen Unterschiede sind. W\u00e4hrend viele Haselnusssorten f\u00fcr Eis einer langen oder l\u00e4ngeren R\u00f6stung bed\u00fcrfen, um das Aroma im Eis zu verst\u00e4rken, fiel die Auswahl der Haseln\u00fcsse f\u00fcr das Del Fiore Eis auf eine ganz bestimmte Nuss aus dem Piemont. Ihr schmeckt beim Del Fiore Eis und seinen pro Eisdiele 12 verschiedenen Sorten vorhandenen Eis, stets ein im Durchschnitt 30% zuckerreduziertes und stets bis ins Detail abgestimmte Eis. Das Vanille-Eis zum Beispiel enth\u00e4lt nichts weiter als Milch (Berchtesgardener Bio Milch), Sahne, Eigelb und nat\u00fcrliche Vanille. Kein zus\u00e4tzliches Vanille-Aroma, nein, die pure Vanille. Es gibt also keine &#8222;pauschale Formel&#8220; als Basis f\u00fcr das perfekte Eis. Diese lautet bei Del Fiore ganz klar: Jede Frucht individuell behandeln und die perfekt darauf abgestimmte Zucker-Art und Basis generieren.<\/p>\n<p>F\u00fcr das Del Fiore Gelato-Eis ist au\u00dferdem eine Reifezeit von mindestens 12 Stunden Standard. Das ist die Zeit, die dem hochwertigen Eismix geg\u00f6nnt wird, um sich v\u00f6llig entfalten zu k\u00f6nnen. Ein ebenfalls nicht unwichtiger Punkt: Del Fiore Gelato achtet neben der Qualit\u00e4t auch schwer auf Nachhaltigkeit und die Umwelt. Das wusste ich nat\u00fcrlich schon vor ab und selbst der gr\u00f6\u00dfte Kulinarik-Banause wird einen Unterschied bei den verschiedenen Eissorten schmecken. Das Del Fiore Gelato hat in meinen Augen das Zeug dazu, M\u00fcnchens erste richtige &#8222;Premium Eismarke&#8220; zu werden. Nicht falsch verstehen: Wir haben viel gutes Eis in M\u00fcnchen und bei manchen Buden wird angestanden, als k\u00e4me das neue Iphone gerade raus. Aber ein solch aufw\u00e4ndiger und eben nicht im Ansatz auf &#8222;geringste Herstellungskosten&#8220; bedachter Prozess in der Eis-Herstellung, gepaart mit der Top-Qualit\u00e4t bei der Zutatenauswahl, ist mir in M\u00fcnchen bis dato noch nicht bekannt.<\/p>\n<p>Wie anfangs beschrieben: Sicherlich wird der ein oder andere, im wahrsten Sinne des Wortes, erst mal ordentlich schlucken, wenn er bis dato noch nie Del Fiore Eis hatte, der klare Unterschied ist aber in Sachen Qualit\u00e4t ganz schnell schmeckbar. Nicht zu s\u00fc\u00df, kein bisschen klebrig oder einen zuckrig-unangenehmen Geschmack im Mund zur\u00fccklassend, bestechen die Sorten durch die Bank. Mein Favorit: Joghurt und Honig, und zugleich die s\u00fc\u00dfeste Sorte. Danach kommt dann Kokos und Pistazie. Die &#8222;Klassiker&#8220; Vanille und Schoko sind in meinen Augen die Vorreiter in Sachen &#8222;unerwarteter Geschmack&#8220;. Schwer l\u00e4sst sich in Worten beschreiben, was euch hier erwartet, ich bin mir aber sicher, wer offen f\u00fcr Qualit\u00e4t ist und vielleicht sogar nach einer veganen und\/oder biologischen Alternative f\u00fcr Top-Eis sucht, der wird neuer Stammgast beim Del Fiore Gelato.
