Ich muss zugeben, dass ich bis dato noch nicht vor\u00a0Ort war, ich war also sehr gespannt, was mich erwartet. Anders als man vielleicht beim Namen vermuten m\u00f6chte, landen hier nicht ausschlie\u00dflich und rein traditionelle franz\u00f6sische Gerichte auf den Tellern, sondern vielmehr eine Kombination aus mediterraner und franz\u00f6sische K\u00fcche in moderner Art und Weise. Bevor\u00b4s ins Detail geht ein kurzer &#8222;Abstecher&#8220; bzw. Gedankengang, welchen ich in der Brasserie hatte: Ich beobachte immer mehr den Trend, weg von \u201eSchi Schi\u201c auf dem Teller, hin zur klaren und &#8222;einfachen&#8220; Linie. Mehr und mehr wird wieder verst\u00e4rkt der N\u00e4he zum einzelnen Produkt und der Kombination derer, in Form spannender Kreationen, Beachtung geschenkt. An Stelle der oft nahezu an\u00a0&#8222;essbare Kunstwerke&#8220; heranreichenden und mit, in meinen Augen, viel zu viel Tam Tam angerichteten Speisen, z\u00e4hlt inzwischen wieder mehr der Geschmack des Einzelnen und dessen \u201eSchlichtheit\u201c. Eine kulinarische Bewegung, die mir sehr gef\u00e4llt, auch weil das einzelne Produkt und die gew\u00e4hlten Zutaten selbst wieder intensiver und &#8222;allein gestellter&#8220; schmeckbar sind.\u00a0Einfach ausgedr\u00fcckt: es kommt wieder mehr auf jede einzelne Zutat an und so macht es mir pers\u00f6nlich mehr Spa\u00df zu Verkosten und zu essen. Zwei bis drei\u00a0ausgew\u00e4hlte und gut aufeinander abgestimmte Zutaten, dazu Kreativit\u00e4t und nat\u00fcrlich das erlernte Handwerk des Koches, sind die wichtigsten Grundpfeiler f\u00fcr gute Gerichte und Men\u00fcs. Nun w\u00e4ren wir auch wieder bei der Basis der K\u00fcche, welche in der La Brasserie umgesetzt wird. Hier gelingt die\u00a0Verbindung von guter Qualit\u00e4t, ansprechender und nicht \u00fcbertriebener Anrichte sowie Zutatenkombination ausgezeichnet. Zweimal erwischte ich mich w\u00e4hrend meinem Aufenthalt in der La Brasserie dabei, wie ich sowohl meine Begleitung, als auch dem Inhaber und zugleich Stefan Beyerle\u00a0sagte, wie begeistert ich doch bez\u00fcglich der f\u00fcr mich geschmacklich neuen Kombinationen auf meinem Teller bin. Mir hat es also ausgezeichnet geschmeckt. Ein l\u00e4nglich geschnittener Gastraum mit meterhohen Decken und gelben W\u00e4nden, viel Tageslicht, vorab eingedeckten Tischen samt Tischt\u00fcchern, Kerzen\u00a0und Servietten, dazu viel Gem\u00fctlichkeit und Flair durch frische Blumen, Weinfalschen hier und da und bewusst gew\u00e4hlte Dekorationselemente im gesamten Speiseraum. Weiter schweift der Blick auf das S\u00e9par\u00e9e im hinteren Bereich mit sechs weiteren eingedeckten Tischen f\u00fcr gesonderte Anl\u00e4sse oder auch etwas ruhigere Stunden. F\u00fcr mich war wohlf\u00fchlen hier\u00a0nicht schwer und sp\u00e4testens, nach dem mir der freundliche Service die Hand gesch\u00fcttelt und mich zu meinem Eck-Zweiertisch samt offenen Blick in das\u00a0gesamte Restaurant gef\u00fchrt hat, f\u00fchlte ich mich &#8222;angekommen&#8220;. Der erste Eindruck, noch vor der ersten Gabel, durchweg positiv. Lang dauerte es nicht, da wurden wir, meine Begleitung und ich, nach unseren Getr\u00e4nkew\u00fcnschen gefragt. Gang des Surprise-Men\u00fc<\/p><\/div>\n<h2 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Speiseangebot, -auswahl und -bewertung<\/b><\/h2>\n<p>Neben der regul\u00e4ren Speisekarte, welche es kontinuierlich und ohne regelm\u00e4\u00dfigen Wechsel gibt, wird eine alle 14 Tage wechselnde Karte (jeweils Dienstags) mit diversen Specials angeboten. Auch im 14-t\u00e4gigen Wechsel gibt es ein Abendmen\u00fc, welches entweder mit drei oder vier G\u00e4ngen angeboten wird und preislich bei 39\u20ac bzw. 49\u20ac liegt. Ihr entscheidet also, wie viel es sein darf, sprich ob optional Fisch oder Fleisch entfallen. Auch Veganer, Vegetarier und Allergiker werden individuell versorgt. Flexibilit\u00e4t wird gro\u00df geschrieben und individuelle W\u00fcnsche werden stets versucht zu erf\u00fcllen. Von den Datteln im Speckmantel oder den Jakobsmuscheln mit Estragon-Schaum als Starter sowie der Zwiebelsuppe oder dem getr\u00fcffelten Kartoffelschaum, \u00fcber die Bouillabaisse mit Edelfischen, dem Entrec\u00f4te vom Weiderind oder auch der R\u00e4ucherlachsroulade, bis hin zum Surf\u00b4n Turf vom 300 Grad hei\u00dfen Stein mit Bio-Rinderfilet und Garnele, wird ein vielseitiges Angebot aufgetischt. Sch\u00f6n auch, dass 13 verschiedene Salatvariationen auf der Karte stehen und auch &#8222;einfachere Gerichte&#8220; wie ein Champignonrisotto oder Tagliatelle mit Tr\u00fcffel w\u00e4hlbar sind. Grunds\u00e4tzlich sagt ihr an, was euch nicht schmeckt, das bleibt dann nat\u00fcrlich au\u00dferhalb des Kochtopfs, und dann hei\u00dft es nur noch \u00fcberraschen lassen. Zuerst kommt ein Gru\u00df aus der K\u00fcche. In unserem Fall&#8220;Ziegenk\u00e4se auf Edelpflaume und Wildkr\u00e4utersalat&#8220;. K\u00f6stlich und in unserem Fall mit einem Aperitif (Lillet Spritz f\u00fcr 7,90\u20ac) samt zuvor gereichten Oliven und frischem Brot serviert. Danach und mit Gang eins lachte uns foliertes Ei auf Apfelspinat mit Lachs, schwarzem Tr\u00fcffel und Tomatenschaum an\u00a0&#8211; \u00fcbrigens neben dem dritten Gang mein Favorit und mit dem Gl\u00e4schen &#8222;Pigoudet, Vin de Provence&#8220; eine gelungene Kombination. Gang zwei setzte sich zusammen aus einer kleinen Portion\u00a0Maispoularde auf Pak Choi und Shiitake Pilze sowie einem gro\u00dfen hausgemachtem Rote Beete Ravioli auf Rote Beete-Wasabischaum. Dazu gab\u00b4s ein Schl\u00fcckchen milden Wei\u00dfburgunder vom Weingut Walter an der Mosel. Bevor es zum n\u00e4chsten Gang kam und \u00fcberhaupt vor jeder Runde, werdet ihr gefragt, ob\u00b4s zwischen den G\u00e4ngen jeweils ein kleines P\u00e4uschen sein darf. Uns war nicht danach und es ging mit meinem Favoriten Nummer zwei und Gang Nummer drei direkt weiter: Rinderfilet mit Cashew Spargel und Schnittlauchp\u00fcree sowie einem Wein aus S\u00fcdfrankreich. Gang vier, das Dessert, bzw. besser gesagt die Dessertplatte, war himmlisch. Ganz klar niemals langweilig, immer gut aufeinander abgestimmt und so, wie ich es anfangs beschrieb: Jede einzelne Zutat schmeckt heraus und hat zugleich eine Daseinsberechtigung auf dem Teller. Mein Rindfleisch (Garstufe wurde erfragt), war tats\u00e4chlich medium, butterweich und von guter Qualit\u00e4t. Kein Wunder, denn auf hochwertige Ware, wenn m\u00f6glich aus der Region, gerne auch mal bio und nat\u00fcrlich der saisonalen Verf\u00fcgbarkeit angepasst, wird stets geachtet. Und zwar bei jedem Gang, jedem Teller und jedem Gericht. Das zu Beginn get\u00e4tigten Statement von Stefan Beyerle\u00a0<em>(&#8230;&#8220;Es gibt nur \u00b4schlecht gemacht`, jedes Produkt kann gut zubereitet werden&#8230;&#8220;)<\/em>\u00a0verstand ich mehr und mehr beim Essen. Gut gef\u00e4llt mir au\u00dferhalb des Tellers auch, dass die Tische weit auseinander stehen, sprich f\u00fcr ein wenig Privatsph\u00e4re gesorgt ist. Bei den Weinen, hilft gerne der regelm\u00e4\u00dfig vom Sommelier geschulte Service weiter und auch bei den Speisen und Fragen zu diesen wei\u00df der Service und\/oder Restaurantleiter immer wo\u00b4s lang geht und steht gerne mit Rat und Tat zur Seite. Wer sich gutes g\u00f6nnen und gerne wirklich genie\u00dfen will, der ist hier richtig. \u00c1 la carte oder Men\u00fc &#8211; das entscheidet ihr selbst. Empfehlen kann ich euch das Surprise-Men\u00fc, weil es am besten die Vielf\u00e4ltigkeit zeigt und mit vier G\u00e4ngen (f\u00fcr 59\u20ac | wahlweise als Degustationsmen\u00fc f\u00fcr zus\u00e4tzliche 22\u20ac (jeweils 0,1l)) auch ordentlich s\u00e4ttigt. Das Parken macht hier direkt Spa\u00df, weil man nicht lange suchen muss. Reservieren lohnt immer, da ab 19:00 Uhr Rushhour ist und auch gerne mal etwas mehr los. Die kulinarischen &#8222;Dauerrenner&#8220; sind laut K\u00fcchenchef neben den Men\u00fcs vor allem das Rinderfilet, die Rinderlende sowie die oben erw\u00e4hnte R\u00e4ucherlachsroulade und die Surf\u00b4n Turf-Kombi. In K\u00fcrze wird\u00b4s auch ganz gezielt drei neue vegetarische und drei neue vegane Gerichte auf der Karte geben um die Nachfrage in dieser Hinsicht zu decken. Falls ihr auf der Suche nach einer Location f\u00fcr private Anl\u00e4sse (ab ca. 25-30 Personen) seid, dann k\u00f6nnt ihr die La Brasserie auch anmieten bzw. alles dazu individuell besprechen.<\/p>\n<p>Mein Fazit? Ich kann euch einen Besuch auf jeden Fall empfehlen. Nat\u00fcrlich ist die La Brasserie kein Restaurant, in welchem man tagt\u00e4glich zum Essen kommt, weil die Preisklasse etwas h\u00f6her angesetzt ist, aber ihr seid sicherlich in einem Restaurant gelandet, in welchem es sich lohnt, sich eben auch mal &#8222;ein bisschen mehr&#8220; zu g\u00f6nnen. Ich pers\u00f6nlich finde zum Beispiel die angesetzten 59\u20ac f\u00fcr das gebotene Essen definitiv angebracht. Am meisten \u00fcberzeugte mich aber &#8211; wie so oft &#8211; die Kombination aus Herzlichkeit im Service, Kompetenz am Herd und Stimmigkeit bei Ambiente und Atmosph\u00e4re.
