Dort tut sich gastronomische ja einiges und obwohl die meisten wohl von &#8222;Schwabing&#8220; sprechen, liegt die T\u00fcrkenstra\u00dfe doch mit all ihren Schmankerln und Neuer\u00f6ffnungen in der M\u00fcnchner Maxvorstadt. Eine davon ist L&#8217;Arancineria. &#8222;L&#8217;Aran-was?&#8220;, mag sich jetzt vielleicht der ein oder andere nicht ganz so\u00a0eingefleischte Nicht-Italiener denken. Aufgeschl\u00fcsselt gibts in dem kleinen Anfang Mai 2017 er\u00f6ffneten Laden auf der T\u00fcrkenstra\u00dfe Arancini. Jeder\u00a0Arancino &#8211; das ist die Einzahl &#8211; wird liebevoll von Hand gerollt, unterschiedlich bef\u00fcllt und nach Deutschland, direkt aus Sizilien, geliefert. In sechs verschiedenen Varianten sowie einer zus\u00e4tzlichen Spezial-Variante, k\u00f6nnen die gebackenen Reiskugeln dann hei\u00df und k\u00f6stlich bestellt werden. Mir waren Arancini schon vorab bekannt. Genauso ihre Vielfalt und dass es sich hier \u00e4hnlich verh\u00e4lt wie zum Beispiel mit dem perfekten Bolognese-, Bruschetta- oder Gnocchi-Rezept. Jeder schw\u00f6rt auf seine Rezeptur und doch gibt es klare Regeln f\u00fcr die sizilianische Spezialit\u00e4t. Das war mir schon bewusst und jetzt nach meinem Besuch bei L&#8217;Arancineria, wei\u00df ich auch warum. Die Rezeptur an sich ist nicht in Stein gemeiselt. Genau genommen noch nicht einmal die Gr\u00f6\u00dfe eines einzelnen Arancino bzw. der Ansatz in der Herstellung. Inzwischen wei\u00df ich n\u00e4mlich, dass die per se sizilianischen Arancini, wie ihr sie eben hier auf der T\u00fcrkenstra\u00dfe bekommt, kleiner, als sie klassischerweise in Catania auf Sizilien sind. Aufgrund der geringeren Gr\u00f6\u00dfe ist gew\u00e4hrleistet, dass sie f\u00fcr uns &#8211; eben keine ge\u00fcbten Sizilianer in Sachen Arancini-Verzehr &#8211; von der Menge her leichter &#8222;bezwingbar&#8220; sind und so auch besser mehreren Sorten durchprobiert werden k\u00f6nnen, ohne direkt nach einem Arancino satt zu sein. Es gibt au\u00dferdem Regionen, wie zum Beispiel Palermo und Umgebung an der Nordk\u00fcste, in welchen haupts\u00e4chlich Safran in den Arancini verarbeitet wird. In den s\u00fcdlichen Teilen Siziliens und an der Ostk\u00fcste ist dies weniger der Fall. Auch spricht man im Norden von &#8222;Arancine&#8220;, im S\u00fcden und Osten von &#8222;Arancini&#8220;. Dort wiegt ein Arancino gut und gerne auch mal um die 250 Gramm und macht, \u00e4hnlich wie eine Hauptspeise, satt. Die wesentlich &#8222;handlicheren&#8220; Arancini von L&#8217;Arancineria hingegen wiegen alle &#8211; unabh\u00e4ngig von der F\u00fcllung &#8211; zwischen 120 und 130 Gramm. Jede Sorte und jede Art von Arancino hat eben seine ganz pers\u00f6nliche Note richtig oder falsch, gibt es so gesehen nicht wirklich. Eines, das wei\u00df ich aber ganz gewiss: Ob &#8222;a&#8220;, ob &#8222;i&#8220;, ob &#8222;o&#8220; am Schluss &#8211; k\u00f6stlich sind sie alle mal die verschiedenen Sorten bei L&#8217;Arancineria.<\/p>\n<p>Speziell hier, werden die Arancini in Sizilien vorbereitet, sprich mit der Hand gerollt, gef\u00fcllt, schockgefrostet &#8211; ohne Qualit\u00e4tsverluste &#8211; und landen innerhalb von\u00a0wenigen Tagen\u00a0in Deutschland. Hier werden sie dann &#8211; ganz nach Bedarf &#8211; f\u00fcr ca. 12 &#8211; 15 Minuten aufgebacken &#8211; nicht frittiert! &#8211; und sind fertig. Durch das Aufbacken haben die fertigen Arancini wesentlich weniger Fett intus, als man das gegebenenfalls von der Optik her vermuten m\u00f6chte. Ein wenig erinnerte es mich zwar schon an eine Art italienisches Streetfood, das machte mir aber nur noch mehr Lust reinzubeissen Die einzelnen B\u00e4llchen bei L&#8217;Arancineria sind in etwa\u00a0so gro\u00df wie ein g\u00e4ngiger Zwetschgenkn\u00f6del, machen satt und sind ideal auch f\u00fcr unterwegs geeignet. Zwei davon sind vegetarisch gef\u00fcllt (einmal mit Spinat, einmal mit Aubergine), die vier Anderen\u00a0mit Fleisch. Oben drauf bzw. zus\u00e4tzlich gibt es noch ein &#8222;Special&#8220;, in Form eines besonderen &#8222;Aracino&#8220; mit &#8222;Spaghetto&#8220;-F\u00fcllung, welcher auch etwas gr\u00f6\u00dfer ist, als die g\u00e4ngigen Sorten (200 Gramm anstatt ca. 130 Gramm) und preislich bei 3,60\u20ac\/St\u00fcck liegt. Die anderen Sorten kosten, wie ich auf grund des S\u00e4ttigungsfaktor finde recht angemessene, 2,90\u20ac\/St\u00fcck. Die Special-Sorte habe ich bei meinem Test vor Ort auslassen und habe mich bez\u00fcglich meiner Auswahl beraten lassen. &#8222;Burro&#8220; mit Schinken und Mozzarella, &#8222;Spinaci e Mozzarella&#8220; mit Spinat und Mozzarella, &#8222;Piccantino&#8220; mit scharfer Salami, &#8222;Rag\u00fa&#8220; mit Rinderhack und Tomate (der Klassiker unter den waschechten Sizilianern!) und &#8222;Norma&#8220; mit Aubergine und Tomate stehen zur Auswahl. Klingt doch schon mal gut, oder?<\/p>\n<p>Mein Favorit waren in der Tat die Klassiker. Sowohl die scharfe Variante fand ich fein, als auch die Auberginen-Sorte. K\u00f6stlich und durch die Bank eher &#8222;ein leichter Snack&#8220;. Ja wirklich&#8230;ich habe zwar geteilt vor Ort, trotzdem hatte ich am Schluss 3 halbe Arancini und ein Cipollina (siehe unten) im Bauch und war nicht ma\u00dflos \u00fcberfuttert. Richtig gut gef\u00e4llt mir auch, dass t\u00e4glich ab 17:00 Uhr &#8222;Aperitivo&#8220;-Zeit im L&#8217;Arancineria ist &#8211; und zwar so, wie in Italien \u00fcblich. Das hei\u00dft zu jedem Aperitif bzw. zu jeder Runde, gibt es &#8211; eben wie in Italien selbst &#8211; kostenlos kleine H\u00e4ppchen dazu. Karotten mit Senf, selbst in Orangen-Oliven\u00f6l eingelegte sizilianische Butter-Oliven, aufgeschnittene Tramezzini, Chips, etc. &#8211; Cool, oder? Mehr Italienfeeling geht kaum.<\/p>\n<h4 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Cipollina, Calzone, Cannoli und Drinks<\/b><\/h4>\n<p>Neben dem Mittelpunkt, den Arancini, gibt es au\u00dferdem einen weiteren sizilianischen Klassiker in der Theke, welchen ihr nicht au\u00dfer acht lassen solltet: Cipollina. Das ist eine Art &#8222;Bl\u00e4tterteigtasche&#8220; aus s\u00fc\u00dfem Teig, mit herzhafter Zwiebel-Schinken-K\u00e4se-F\u00fcllung. Wobei auch bei diesen gilt, dass kein fettiger Geschmack im Mund zur\u00fcck bleibt und man sich danach nicht \u00fcbers\u00e4ttigt und zu voll f\u00fchlt &#8211; \u00e4hnlich wie bei den Arancini. Anders d\u00fcrfte es sein, wenn ihr zu viele von den Cannoli, den italienischen Desserts (in drei Sorten: Pistazie, Ricotta, Schokolade f\u00fcr je 1,90\u20ac) futtert. Das setzt nat\u00fcrlich an. \ud83d\ude09 In der Kaffee-Tasse landet hier im \u00dcbrigen emilo-Kaffee (Espresso f\u00fcr 1,40\u20ac).
