Wir hoffen doch alle sehr, dass es noch ein bisschen so weiter geht, oder? Daf\u00fcr sprechen w\u00fcrde dann auch, das passende Wetter zu mein Artikel hier. Heute geht es n\u00e4mlich um Eis. Um gutes Eis. Davon gibt es ja vieles, aber manche Sorten bzw. Anbieter, die sucht man eben doch am liebsten auf. Eis ist f\u00fcr mich etwas, das ich nicht jeden Tag esse, aber wenn, dann eben nur gutes. Eine Anlaufstelle &#8211; wie f\u00fcr so vieles Gutes &#8211; ist Rischart. Backhaus, inzwischen auch Gastronom (<a href=\"https:\/\/www.rischart.de\/index.php?entryid=622\" target=\"_blank\" rel=\"noopener noreferrer\">Max Eatery am Stachus<\/a>) und eben auch Produzent von Eis. Nach dem ich inzwischen schon beim <a href=\"http:\/\/biancas-blog.de\/alle\/rischart-cafe-kaiserschmarrn\/\" target=\"_blank\" rel=\"noopener noreferrer\">Hochzeitstorten-Anschnitt<\/a>\u00a0auf der Wiesn dabei war und sowohl die <a href=\"http:\/\/biancas-blog.de\/alle\/elisenlebkuchen-von-rischart\/\" target=\"_blank\" rel=\"noopener noreferrer\">Elisenlebkuchen<\/a>, als auch das <a href=\"http:\/\/biancas-blog.de\/alle\/rischart-osterfladen-ostersortiment\/\" target=\"_blank\" rel=\"noopener noreferrer\">Osterbackwerk<\/a> verkostet bzw. in seiner Produktion begleitet habe, war diesmal das Eis dran. Rischart hat Eis!?&#8220; &#8211; Aber Hallo! Insgesamt bietet Rischart 15 verschiedene Sorten Eis an. Davon sind vier vegan und &#8211; aktuell &#8211; vier Sorten ganz neu im Sortiment. Die Klassiker Schokolade, Vanille und Erdbeere sind nat\u00fcrlich standardm\u00e4\u00dfig im Sortiment. Gefolgt von Nuss, Zitrone und Pistazie. Auch Kombinationen wie Joghurt-Kirsch, Quattro Frutti &#8211; bestehend aus Erdbeere, Himbeere, Johannisbeere und Blaubeere &#8211; oder Mango-Passionsfrucht k\u00f6nnen bestellt werden. Gebrannte Mandel, Orange Cheesecake, Marille-Hollunder, Cookie-Caramel (mit crunchy Keks im Eis), Cocos-Crunch (mit Kokossplittern) und Saure Apfelringe runden kreativ ab. Ganz klar: Wenn\u00b4s nicht schmeckt, ist das drumherum egal. Wenn man aber einmal an den gro\u00dfen Eis-Pasteurisatoren bei Rischart gestanden hat und die Eismaschinen in Betrieb, kombiniert mit Handarbeit und ordentlich Schmalz, erlebt hat, wei\u00df man, dass wesentlich mehr dazu geh\u00f6rt, als &#8222;nur&#8220; gute Zutaten. So sind diese bei Rischart ganz besonders hochwertig. Das Vanilleeis zum Beispiel beinhaltet echten Extrakt aus der Vanille und hat dadurch ein besonders intensives sowie zugleich nat\u00fcrliches Aroma. Das Schokoladen-Eis, eigentlich nicht unbedingt einer meiner Favoriten in Sachen Eis, hat selbst mir geschmeckt. Kein Wunder, ist es ja auch mitunter aus \u00a0belgischer Kuvert\u00fcre hergestellt. Das bezeichnenste Merkmal des Rischart Eis ist in meinen Augen der intensive und niemals k\u00fcnstliche Geschmack einer jeden Sorte. Klar&#8230; &#8222;Saue Apfelringe&#8220; und &#8222;Cocos-Crunch&#8220; schmecken nat\u00fcrlich s\u00fc\u00dfer und intensiver als Zitrone oder Vanille &#8211; hergestellt aus rein nat\u00fcrlichen Zutaten, aber das soll ja auch so sein. Vieles passiert hinter &#8222;verschlossenen T\u00fcren&#8220;. Dies aber nicht, weil geheim, sondern weil Pasteurisator und Eismaschine eben keine Sichtkammern f\u00fcr mich bereit halten. \ud83d\ude09 Besser siehts da schon mit der Verarbeitung des Eises aus, sobald es aus der Eismaschine, sprich nach vorheriger Pasteurisierung, kommt. Dann n\u00e4mlich ist ordentlich Handarbeit angesagt und eine der Geschmackssorten, m\u00fcssen zus\u00e4tzlich angereichert werden. Bei der neuen Sorte Cocos-Crunch zum Beispiel wird die &#8222;Kokosmasse&#8220; per Hand mit &#8222;vui Schmoiz&#8220; in die einzelnen f\u00fcnf Liter-Boxen unterger\u00fchrt. Genauer gesagt wird eine Schicht Eis eingef\u00fcllt, dann kommt die Masse (z.B. Cocos-Crunch oder auch Cookie-Caramel-Masse) auf das Eis, es wird vermengt und nochmals mit Eis und anschlie\u00dfend Masse vermengt. Sind die Boxen gef\u00fcllt, ordentlich vermengt und glatt gestrichen, landen sie im K\u00fchlhaus von Rischart bei -20 Grad. Pro Beh\u00e4ltnis entstehen 4 bis 4,1 Liter Eis. Das Eis wird jeden Tag bei Rischart produziert und pro Tag werden 100 bis 150 Boxen in M\u00fcnchens Rischart Niederlassungen ausgeliefert. Doch von vorne&#8230; Die Basis des &#8222;neutralen&#8220; Eises ist Milch, Sahne, Eigelb, Eisbindemittel und das jeweilige Aroma, je nach Sorte. Die Mischung wird dann &#8222;abgekocht&#8220; und auf 80 Grad erhitzt. Anschlie\u00dfend reift das Eis, sprich k\u00fchlt ca. 3 bis 10 Stunden langsam herunter. Speziell bei Rischart, wird das Eis (je nach Sorte) ganz fein in einem separaten Ger\u00e4t p\u00fcriert, so \u00a0dass das Endergebnis eine noch feinere Eismischung ist. Gearbeitet wird nur mit besten Zutaten, wie zum Beispiel Berchtesgadener Milch, echtem Vanilleextrakt und hochwertiger Schokolade aus Belgien. Auch wird stets auf ein &#8222;Mindesttrockengehalt&#8220; bei der Rezeptur der jeweiligen Eissorte geachtet, damit das Eis einen sch\u00f6nen Schmelz und einen angenehme Konsistenz beim Verzehr vorweisen kann. Kennt ihr das, wenn Eis nach dem Schlucken immer noch am Gaumen und im Rachen h\u00e4ngt und man dieses &#8222;schmierige&#8220; Gef\u00fchl nicht weg bekommt? Kein gutes Zeichen f\u00fcr Eis-Qualit\u00e4t und bei Rischart Eis ganz und gar nicht der Fall. Angeboten wird Eis im \u00dcbrigen bei Rischart von Ende April bis zum Start der Wiesn. Woher Eis aber kommt, das wissen die Wenigsten. Nicht schlimm, daf\u00fcr habe ich mal ein wenig nachgeforscht. Die Geschichte reicht weit zur\u00fcck. Richtig weit. Um genauer zu sein bis ins Jahr 3.000 v. Chr.. Da tauchen sowohl bei den Chinesen, als auch bei den R\u00f6mern schon Geschichten \u00fcber\u00b4s Eis auf. Der r\u00f6mische Kaiser Nero zum Beispiel war gro\u00dfer Fan von Eis, Marco Polo berichtet nach gro\u00dfen Reisen von entdeckten Eisdielen und brachte Eisrezepturen mit nach Hause. Auch andere ber\u00fchmte Pers\u00f6nlichkeiten der Geschichte liebten Eis. 1651 wurde dann vom Sizilianer Procopio Castelli die erste Pariser Eisdiele erstellt und 1673 die erste Eissteuer auf Speiseeis erhoben. \u00a0Eis war damals aber noch nicht wirklich Eis, wie wir es heute kennen. Viel mehr war es damals Schnee oder gefrorenes Wasser mit verschiedenen Aromen, wie Ingwer, Honig oder zersto\u00dfene Fr\u00fcchte. Eine der ersten Eis-Versuche wurden tats\u00e4chlich in M\u00fcnchen aus Isarwasser gemacht. &#8211; Cool, oder? So wie wir Eis m\u00f6gen, gibt es dieses erst seit 1530, zeitgleich zum erfundenen K\u00fchlverfahren. 1873 gelang dann die Verfl\u00fcssigung von Ammoniak und 1876 kam die K\u00e4ltemaschine dazu &#8211; der Weg zum heutigen Speiseeis war geebnet, der Durchbruch war geschafft. Erst 1851 kam ein Milchh\u00e4ndler darauf, \u00fcbersch\u00fcssige Milchprodukte zu Speiseeis zu verarbeiten und die erste industrielle Eisproduktion wurde errichtet, was so durch die Decke ging, dass bald auch New York, Boston und die ganze Welt von Speiseaus aus Milch sprach. Mmmmh&#8230;.<\/p><\/div>\n<h5 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Hardfacts und\u00a0Fazit<\/b><\/h5>\n<p>Gl\u00fccklicherweise bekam ich nach der Produktionsbesichtigung noch die Chance, mich durch das Sortiment von Rischart, direkt am Marienplatz zu schlemmen. Nat\u00fcrlich nochmal ein ganz anderes Gef\u00fchl, wenn man erst wenige Minuten vorab gesehen hat, wie die einzelnen Sorten hergestellt werden. So fand ich auch relativ schnell meine Favoriten heraus. Joghurt-Kirsche, Cocos-Crunch, Zitrone und Marille-Hollunder (vegan!) sind meine Favoriten. Zu unterscheiden ist nat\u00fcrlich zwischen Milch- und Fruchteis &#8211; auch bei der Herstellung, sprich cremigen Sorten und eher erfrischend fruchtigen Sorten. Die vegane und zugleich neue Sorte &#8222;Marille-Hollunder&#8220; m\u00fcsst ihr unbedingt probieren. Nehmt dazu auch noch ganz klassisch, eine Kugel Vanilleeis um einen guten Ma\u00dfstab zum Vergleich zu haben. Schon bei dem ersten L\u00f6ffelchen d\u00fcrfte klar sein, dass ihr ein hochwertiges und sehr leckeres Eis im Mund habt. Das zieht sich durch das komplette Sortiment. &#8222;Saure Apfelringe&#8220; ist in meinen Augen definitiv das verr\u00fcckteste Eis, auch wegen seiner knallgr\u00fcnen Farbe und dem unumstritten recht k\u00fcnstlichem Geschmack. Zu kaufen gibt es das Eis in 5 Niederlassungen, n\u00e4mlich am Marienplatz, im Caf\u00e9\u00a0zur Mauth, am Viktualienmarkt, im Olympia Einkaufszentrum, bei Max Eatery (dem Restaurant von Rischart) und auf der Leopoldstra\u00dfe bei Rialto. Je nach Niederlassung, kostet das Eis pro Kugel bzw. Portion zwischen 1,50\u20ac und 1,80\u20ac. Nutzt die n\u00e4chste Gelegenheit und holt euch eine Portion. Wenn ihr am Marienplatz vorbei &#8211; dort gibt es alle 15 Sorten &#8211; schaut, wundert euch nicht, dass es dort keine Waffeln mehr gibt. Dort wird das Eis nur noch im Becherchen angeboten und nicht mit einem klassischen Eisl\u00f6ffel &#8222;gerollt&#8220;, sondern mit einer Spachtel in den Becher &#8222;geschabt&#8220; &#8211; eine wie ich finde modernere Variante.
