Es gibt ihn in unterschiedlichen Sorten und ohne ihn w\u00e4re Weihnachten wie Ostern ohne Eier! Na? &#8211; Wovon spreche ich? Genau, vom Christstollen, genauer gesagt konkret von dem aus dem Rischart Backhaus. In jenem war ich neulich n\u00e4mlich wieder und hatte die gro\u00dfe Ehre selbst Christstollen zu machen (&#8230;nicht f\u00fcr den Verkauf geeignet ;-)&#8230;), zu sehen, wie Stollenkonfekt gemacht wird und welche Stationen der Stollen durchl\u00e4uft, bis wir ihn kaufen k\u00f6nnen. F\u00fcr mich pers\u00f6nlich unglaublich spannend und \u2013 wie bei allem von Rischart zutreffend \u2013 soooo k\u00f6stlich. Ganz egal ob ihr es eher klassisch m\u00f6gt oder auch zur Weihnachtszeit etwas Extravaganz auf den Tisch bringen wollt: Rischart hat die ideale Stollen-L\u00f6sung. \ud83d\ude09 So gibt es neben den klassischen &#8222;Rischart Stollen&#8220; (500 Gram f\u00fcr 10,90\u20ac),\u00a0auch den &#8222;M\u00fcnchner Kindl Stollen&#8220;(mit Macadamia und brauner Mandel | 500 Gram f\u00fcr 11,80\u20ac), den &#8222;Marc de Champagner Stollen&#8220;(500 Gram f\u00fcr 10,80\u20ac) und auch den &#8222;Marzipan-&#8222;, &#8222;Marillen-&#8220; (500 Gram f\u00fcr 11,40\u20ac) und &#8222;Mandel-Stollen&#8220;(500 Gram f\u00fcr 10,90\u20ac) sowie den &#8222;Nuss-&#8220; und &#8222;Mohn-Stollen&#8220;. Jeder Stollen ist schick und luftdicht in enger Folie verpackt und deutlich mit einem anderen farbigen Etikett samt abgestimmter Schleife verziert. Direkt vom Tresen auf den Weihnachtstisch oder als Geschenk in die H\u00e4nde der Freunde also. Mein Favorit ist der Klassiker, Marzipan und Marille. (&#8230;ihr erinnert euch sicher an den <a href=\"http:\/\/biancas-blog.de\/alle\/rischart-osterfladen-ostersortiment\/\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Osterfladen<\/a> mit Marillengeschmack&#8230;.) Marc de Champagner ist eine ganz besonders &#8222;edle&#8220; Sorte und d\u00fcrfte f\u00fcr jeden Gourmet unter euch eine neue Geschmackserfahrung sein. Falls euch ein P\u00e4ckchen mit 500 Gramm zu viel ist, k\u00f6nnt ihr euch zum Beispiel auch das 280 Gramm-Scheiben Paket mit dem klassischen Rischart Stollen (f\u00fcr 6,40\u20ac) holen. Am meisten in den H\u00e4nden, weil der fertige Teig, versehen mit Sultaninen\u00a0aus Australien, bestem Orangeat und Zitronat sowie ausschlie\u00dflich hochwertigen Zutaten (deutsche Markenbutter,\u00a0L\u00fcbecker Marzipan aus der kalifornischen Mandel, beste Berchtesgadener-Milch, niederbayerisches Mehl, gehackten Mandeln) und Co. vor dem Ablegen in der Form, ordentlich geknetet werden muss. Besser gesagt, muss er in die entsprechende Form gebracht werden, zu einer l\u00e4nglichen Wurst geformt und gepresst werden und dann mit der &#8222;offenen Stelle&#8220; (man klappt die den Teig sozusagen an den Au\u00dfenseiten zweimal aufeinander liegend nach innen), nach unten in die Form gelegt werden. Ich habe sowohl das im Rischart Stollen bewusst eher grob verarbeitete Orangeat als auch das Zitronat einzeln probiert und anders als bei &#8222;Billig-Backwaren&#8220;, schmeckt es nicht\u00a0ansatzwei\u00dfe so s\u00fc\u00df und k\u00fcnstlich bzw. klebrig wie eben herk\u00f6mmliches Orangeat und Zitronat. Auch die extra aus dem fernen Australien importierten und lange gesuchten Sultaninen\u00a0\u2013 lange in Rum eingelegt \u2013 sind pur verkostet schon ein klares Indiz f\u00fcr die &#8222;eingebackene Qualit\u00e4t&#8220; im fertigen Stollen (&#8222;5 Kronen&#8220;-Sultaninen &#8211; die beste Qualit\u00e4t bei Sultaninen\u00a0| in jeder Sorte bis auf Mohn-, Nuss-, Mandel- und Mandelstollen enthalten). Das A und O d\u00fcrfte aber mitunter ganz klar die geheime Gew\u00fcrzmischung sein, welche seit 1883 mindestens so geh\u00fctet wird, wie das Rezept der Coca-Cola und nur die Familie Rischart und einige Vertraute kennen. Mit ordentlich Puderzucker! Zwischen jedem einzelnen Schritt bekommt der Stollen ein wenig Zeit um die jeweilige Zutat gut aufnehmen sprich &#8222;einziehen&#8220; lassen zu k\u00f6nnen. Kommt der Stollen dann aus der Verpackstation (&#8230;ein separater Raum bei Rischart, der nach neusten technischen Standards verpackt, wiegt und etikettiert&#8230;), fehlt nur noch der &#8222;Stollen-Aufkleber&#8220; in weihnachtlichen Farben, die Schleife und der Versand in die einzelnen Filialen. Wichtig zu wissen: Die 1 Kilo-Stollen werden in der Produktion zu zweimal 500 Gramm-Portionen getrennt. Das hat nichts damit zu tun, dass euch Rischart keinen Kilo-Stollen g\u00f6nnen w\u00fcrde, nein viel mehr verliert der Stollen an Saftigkeit, Geschmack und &#8222;Freude&#8220;, wenn er zulange &#8222;einmal ge\u00f6ffnet&#8220; in der K\u00fcche liegt. Am schwersten ist der anf\u00e4nglich richtige Umgang mit dem Teig, so dass er die richtige Form bekommt. Mir wurde mitunter auch die &#8222;alte&#8220; Methode der Stollen-Produktion gezeigt und eben auch erkl\u00e4rt, warum es so wichtig ist, dass der Teig die richtige Form, L\u00e4nge und &#8222;Teigfalte&#8220; erh\u00e4lt. Sonst bricht er bzw. kommt nicht die klassische Christstollenform. Zwar habe ich mich beim Stollen machen nicht ganz so doof wie beim Brezen formen (<a href=\"https:\/\/www.facebook.com\/BiancasBlog\/posts\/701480453383066\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">hier<\/a>) oder beim\u00a0Eis machen (<a href=\"http:\/\/biancas-blog.de\/alle\/rischart-eis-produktion\/\">hier<\/a>) angestellt, aber leicht war es auch nicht. \ud83d\ude42 Darum m\u00f6chte ich euch sagen: Qualit\u00e4t hat ihren Preis und Handwerk seinen Sinn. Man fragt sich vielleicht schnell mal, warum bestimmte Produkte eben einen bestimmten Preis haben oder &#8222;was denn daran so schwer sein mag&#8220;, aber bis dato hat mir jeder Rischart-Besuch gezeigt, dass das mehr als gerechtfertigt ist. Es sind Geb\u00e4cke, die bestimmte symbolische Formen oder Figuren darstellen. Der Stollen gilt seit vielen Jahrhunderten als das in wei\u00dfe T\u00fccher gewickelte Christkind. Wo der erste Stollen gebacken wurde und wer der Sch\u00f6pfer von Rezept und Form war, ist nicht verb\u00fcrgt. Kulturforscher und andere Wissenschaftler sind sich dennoch einig, da\u00df der Ur-Stollen in Sachsen aus dem Ofen gezogen wurde, und zwar um das Jahr 1300. Und so wie vor 700 Jahren wird auch heute noch gebacken.\u00a0<\/em><em>Urkundlich taucht der Stollen zum ersten Mal 1329 in Naumburg an der Saale auf. Aus einem alten Schriftst\u00fcck ist zu entnehmen, da\u00df die Naumburger B\u00e4cker sich bereit erkl\u00e4rten, zu Weihnachten &#8222;zween lange Weizenstollen, wozu ein halber Scheffel Weizenmehl verwandt werde,&#8220; ihrem Bischof Heinrich und seinem Hofe zu entrichten.\u00a0<\/em><em>&#8222;Was dem Klerus recht ist,&#8220; wird sich der s\u00e4chsische Landesf\u00fcrst als weltlicher Herrscher gedacht haben, &#8222;ist mir nur billig!&#8220; So entstand eine dem Bischofs-Tribut \u00e4hnliche Zinspflicht f\u00fcr Wei\u00df- und Platzb\u00e4cker der Residenzstadt Dresden (bis 1913). An jedem zweiten Weihnachtsfeiertag lieferte die B\u00e4ckerinnung zwei Christstollen von jeweils eineinhalb Meter l\u00e4nge und je 36 Pfund Gewicht, getragen von acht Meistern und acht Gesellen, auf dem Schlo\u00df ab. Seit 1329 ist der Begriff &#8222;Weizenstollen&#8220; also dokumentiert. 1474 taucht in Sachsen dann das &#8222;Christbrot&#8220; auf. In einer Urkunde hei\u00dft es: &#8222;Item 7 gr vor zewey Christbrot den armen luten uff wynachten&#8220;, was soviel hei\u00dft wie: &#8222;Ebenso sieben Groschen f\u00fcr zwei Christbrote f\u00fcr die armen Leute zu Weihnachten&#8220;.
