Ein Teil davon war der Besuch in dem innerhalb der Burg gelegenen Gourmet-Restaurant &#8222;Kastell&#8220;. Unumstritten das pers\u00f6nliche Highlight meines Wochenendes. Nicht nur die Lage hinter dicken Burgmauern begeistert, nein auch der erste Eindruck beim Betreten der R\u00e4umlichkeiten \u00fcberrascht. Ganz anders als der Rest der Burg, ist das Kastell \u00fcberwiegend in wei\u00df gehalten. Ein Hauch Purismus gepaart mit einer angenehmen Moderne und Schlichtheit, zeichnet das schicke Restaurant aus. L\u00e4sst man den Blick schweifen, entdeckt man au\u00dfer einem gro\u00dfen wuchtigen Bild an der Wand, einigen Blumengestecken und dezenten Windlichtern weniges, das nicht wei\u00df oder cremefarben ist. Dazu die spannende Architektur der Gem\u00e4uer, hier und da dezente Lichtquellen, wuchtige Gaubendecken und ein ingesamt starker Kontrast zur restlichen Burg.\u00a0Am eigenen Platz niedergelassen, wird freundlich vom kompetenten Service begr\u00fc\u00dft und durch den Abend geleitet. Sofort strahlt eine angenehme Atmosph\u00e4re durch die R\u00e4ume und der Genuss beginnt auch f\u00fcr den Gaumen.<\/span><\/p>\n<p class=\"m_928386095430504964gmail-p1\">Angeboten werden verschiedene Men\u00fcs. Einmal das &#8222;Men\u00fc Kellermann&#8220; sowie auch ein &#8222;Degustationsmen\u00fc&#8220;, welche ca. alle drei Monate wechseln. Bevor es f\u00fcr euch los geht, werdet ihr gefragt, welches Men\u00fc ihr w\u00fcnscht und ob ihr euch in Sachen Wein auf die Empfehlung des Sommeliers Frank Hildebrand verlassen wollt oder aber selbst die Weine ausw\u00e4hlen m\u00f6chtet. Weinwissen hin oder her, ich empfehle euch bei Restaurants mit einem gewissen Niveau stets auf den Sommelier zur\u00fcckzugreifen. Eine\u00a0jede\u00a0Zutat\u00a0wird genau &#8222;durchleuchtet&#8220; und deren verschiedenen Aromen heraus gearbeitet, erschmeckt und so mit stimmigen Komponenten zu einem schmackhaften Gang kombiniert. Besser erkl\u00e4rt Kellermann das selbst.\u00a0Mir wurde n\u00e4mlich die gro\u00dfe Ehre zuteil, den Sternekoch im Vieraugengespr\u00e4ch interviewen zu d\u00fcrfen. Vorweg m\u00f6chte ich nur eines nehmen: Die Kreation\u00a0des Sternekochs genie\u00dfen zu d\u00fcrfen ist wahrhaftig ein Fest f\u00fcr Auge, Gaumen und die Seele. Im Interview wurde es von Thomas Kellermann bereits angesprochen: Die Saiblingszucht von Andreas R\u00f6sch, welche mitunter f\u00fcr den exzellenten Fisch des Kastells verantwortlich ist. Ich bekam die M\u00f6glichkeit mir die Fischzucht noch vor dem Besuch im Kastell anzuschauen. Rein in die Gummistiefel und los! Mit bei der\u00a0Erkundungstour waren auch Thomas Kellermann sowie Hoteldirektor Johannes Lehberger h\u00f6chstpers\u00f6nlich. Die Fischzucht\u00a0liegt ca. 40 Autominuten von Wernberg entfernt und schon vor der Besichtigung war klar: Es wird windig und kalt, aber mindestens genauso spannend. Die Fische n\u00e4mlich, welche Andreas R\u00f6sch in der in 4. Generation gef\u00fchrten Fischzucht aufzieht, k\u00fcmmert Wetter reichlich wenig. Viel mehr spielen die verschiedensten Komponenten eine Rolle, um Fisch auf diesem Niveau und in dieser &#8222;Geschmacksklasse&#8220; zu z\u00fcchten. Was einen Fisch zu einem nahezu perfekten Fisch macht, dass sowohl Futter, Wasserqualit\u00e4t, der Umgang mit dem Tier und vieles mehr eine Rolle spielen, lernten wir vor Ort. Alles sind Komponenten, die das Ergebnis, wie der Fisch auf dem Teller schmeckt, extrem beeinflussen. So richtig bewusst wurde mir das erst, als ich dann zwischen unz\u00e4hligen Tanks voll Wasser, gef\u00fcllt mit bis zu 30.000 Fischen\u00a0pro Einheit, stand, meine unz\u00e4hligen Fragen stellte und einen guten Gesamteindruck in Sachen Fischzucht bekam.\u00a0(Danke nochmals an dieser Stelle an die sympathische Familie R\u00f6sch f\u00fcr die F\u00fchrung, den Fisch, die Zeit und das Wissen!)<\/p>\n<p>Nat\u00fcrlich interessierte mich auch, wie das Kastell und\u00a0R\u00f6schs Fischzucht zueinander fanden. Das kam ganz einfach so, weil Kellermanns Suche nach dem besten Fisch aus der Region \u00fcber die Wernberger Grenzen hinausreichten und schlie\u00dflich in B\u00e4rnau ein Ende fand. Seither wird von dort der Saibling, welcher im Kastell zubereitet und serviert wird, bezogen. Dass ich in meinem Men\u00fc \u2013 gleich mehr dazu \u2013 keinen Saibling hatte, liegt daran, dass diesem ganz bewusst immer wieder eine &#8222;kleine Pause&#8220; auf der Karte geg\u00f6nnt wird, sprich nat\u00fcrlich auch die Verf\u00fcgbarkeit und Zuchtdauer eine\u00a0Rolle bei der Qualit\u00e4t spielen. Nachhaltigkeit und der schonende Umgang mit der Ressource spielen n\u00e4mlich eine mindestens genauso gro\u00dfe Rolle,\u00a0wie eben auch Qualit\u00e4t und Frische bei der Auswahl der Zutaten. Beim Fisch ist es nicht anders.<\/p>\n<h4 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Ein Blick auf den Teller: Mein Men\u00fc<\/b><\/h4>\n<p>Zur\u00fcck im Hotel und wieder aufgew\u00e4rmt, freute ich mich schon sehr auf das Kastell. Nat\u00fcrlich hatte ich zuvor sowohl die Karte, das Ambiente, als auch alles was zu erfahren war, \u00fcber Thomas Kellermann studiert. Und trotzdem: Landet der Teller &#8211; angefangen vom Amus\u00e9 &#8211; dann vor einem, versteht man nochmal auf eine ganz eigene und pers\u00f6nliche Art und Weise, was diesen Ort und dieses Restaurant so besonders macht.\u00a0Kellermann\u00b4s G\u00e4nge \u00fcberzeugen durch Raffinesse, Schlichtheit und \u00fcberwiegend vorab selten bis gar nicht geschmeckte Kombinationen. Lest euch das Men\u00fc, welches ich vor Ort genie\u00dfen durfte, am besten selbst durch. Sch\u00f6n fand ich auch, dass bei einzelnen G\u00e4ngen auch vor dem Gast &#8222;gearbeitet&#8220; wird, sprich beispielsweise die Suppe aus der Sauciere am Tisch \u00fcber das Gericht gegeben wird. Dazu kommt, dass die Stimmung angenehm und locker ist, man sich also ganz normal f\u00fchlt und verh\u00e4lt. F\u00fcr jeden Foodie, Genuss- und Gourmet- und Weinfan lohnt sich die Fahrt auf jeden Fall. Kommt mir bitte nicht auf die Idee, spontan vorbeizukommen. Auch, wenn nat\u00fcrlich ebenso externe wie Hotelg\u00e4ste erw\u00fcnscht sind, solltet ihr euch vorab stets mit einer Reservierung absichern. Ge\u00f6ffnet ist das Gourmet-Restaurant Kastell von Mittwoch bis Samstag ab 19:00 Uhr, am Sonntag ab 12:00 Uhr. Montag und Dienstag bleibt die K\u00fcche kalt, zumindest die, des Kastell.
