Platz nehmen und genie\u00dfen<\/p><\/div>\n<p><strong>LaxBar &#8211; M\u00fcnchens erstes skandinavisches Restaurant &#8211; <\/strong>M\u00fcnchen ist ein weiteres mal um eine gastronomische Perle reicher. In diesem Fall noch dazu um eine ganz besondere. Die gut vor einem Monat er\u00f6ffnete LaxBar am Oberanger, bietet \u2013 als einzige Restaurants M\u00fcnchens \u2013 skandinavischen Lachs in verschiedenster Form auf absoluten Spitzen-Niveau an. So stehen innerhalb\u00a0der Karte die unterschiedlichsten norwegischen bzw. skandinavischen Gerichte, rund um den Lachs, welcher zugleich als Namensgeber der Bar fungiert. Auf meinen k\u00fcrzlich erfolgten Test freute ich mich in diesem Fall also ganz besonders und erlebte einen Abend der Extraklasse.<\/p>\n<h1 style=\"font-size: 15px; margin-bottom: -7px;\"><b>Die LaxBar M\u00fcnchen am Oberanger kennenlernen<\/b><\/h1>\n<p>Nochmal von vorne: Die LaxBar in M\u00fcnchen hat seit Mitte Oktober 2018 ge\u00f6ffnet und bietet im Rahmen einer gekonnten Restaurant-Bar-Mischung, modern interpretierte und geradlinige K\u00fcche aus Norwegen an \u2013 Fokus Lachs. In diesem Rahmen landen auf den Tellern\u00a0nur\u00a0absolut hochwertige Produkte. Das f\u00e4ngt beim eigens f\u00fcr die Bar gebackenen skandinavischen Brot zum Lachs an, zieht sich durch innerhalb der gut strukturierten Speisekarte und endet beim harmonischen und gem\u00fctlichen Interieur. Mit\u00a0mit skandinavischen Charme, warmen Farben, viel hellem Holz und abgestimmten Details \u00fcberzeugt die Atmosph\u00e4re der LaxBar sofort. Bei\u00a0ersten genaueren Blick in die Karte, wird deutlich: Die K\u00fcche ist nicht nur skandinavisch gepr\u00e4gt, sondern auch sehr auf gesunde K\u00fcche aus kompromisslos qualitativ hochwertigen Zutaten, fokussiert. Ganz gleich, f\u00fcr welche(s) Gericht(e) ihr euch entscheidet, serviert wird nur exklusivster und feinster Lachs aus Norwegen, mit ausschlie\u00dflichem Bezug aus seit Jahrzehnten im Familienbesitz befindlichen norwegischen R\u00e4ucherh\u00e4user. Bestellen k\u00f6nnt ihr euch den Lachs \u2013 also ausschlie\u00dflich Fr\u00f8ya Lachs back loin (&#8222;R\u00fccken Lende&#8220;) in Sushi Qualit\u00e4t \u2013\u00a0 in den verschiedensten Formen bzw. Mit ihrem stylischen Interieur \u2013 so z.B. h\u00f6lzerne Barhocker mit leicht geschwungener Sitzfl\u00e4che \u2013 l\u00e4dt die Bar sowohl f\u00fcr den Feierabenddrink, den schnellen Snack (&#8230;wie w\u00e4re es mit Nordic Tapas?&#8230;) oder eben auch zum ausgiebigen Dinner ein. So zeigt der Blick auf die Barkarte eine breitgef\u00e4chertes Repertoire an traditionell-nordischen Aquavits, Spirituosen, Lik\u00f6ren, Weinen und Champagner (Piper-Heidsieck &#8211; bald mehr dazu&#8230;.), als auch skandinavische Bier vom Fass. Mit trockenem Rachen oder gar leerem Bauch, muss die LaxBar niemand verlassen und dennoch f\u00fchlt man sich nach einem ausgiebigen Essen, weder beschwert\u00a0noch zu satt. Die Karten sind \u00fcbersichtlich strukturiert und gut gegliedert. Wenn ich grunds\u00e4tzlich auch kein Freund von zu vielen einzelnen Karten (Speise-, Wein-, Barkarte, etc.) bin, ist das in der leidige Karten-Thema in der LaxBar gut gel\u00f6st. Erstmal gibt&#8217;s einfach nur die in festem hellrosa Karton gestaltete Falt-Speisekarte, untergliedert in die Kategorien <strong>&#8222;Raw&#8220;<\/strong> (roh), <strong>&#8222;Gravlax&#8220;<\/strong> (Graved Lachs, also gebeizter Lachs), <strong>&#8222;Cold Smoked&#8220;<\/strong>, <strong>&#8222;Hot Smoked&#8220;<\/strong>, <strong>&#8222;Today&#8217;s Fr\u00f8ya Lax&#8220;<\/strong>, <strong>&#8222;Salads&#8220;<\/strong> und<strong> &#8222;Desserts&#8220;<\/strong>.<\/p>\n<p>Jede Kategorie\u00a0unterteilt sich nochmals in\u00a0drei bis vier verschiedene Gerichte und so k\u00f6nnt ihr beispielsweise beim rohen Fisch zwischen<strong> Tatar, Tatar klassisch<\/strong> (sprich zum selbst anmachen) oder auch <strong>Sashimi<\/strong> <strong>in drei verschiedenen Variationen<\/strong> w\u00e4hlen. Wer es gerne klassisch mag, der w\u00e4hlt beispielsweise beim Sashimi &#8222;No.1 &#8211; Six Bites (also sechs St\u00fcck) mit Ponzu Sauce und Sesam Samen), ein wenig individueller wird&#8217;s mit &#8222;No.2&#8220; und &#8222;Six bites mit Soja-Tr\u00fcffel-Sauce und Fr\u00fchlingszwiebeln&#8220;. Ein Muss in der LaxBar!<\/p><\/div>\n<p>Dem gebeizten Lax, sprich der <strong>&#8222;Graved Lachs&#8220;<\/strong>-Kategorie solltet ihr auch Aufmerksamkeit schenken, denn dabei handelt es sich urspr\u00fcnglich um ein skandinavisches Verfahren, leicht verderblichen Lachs l\u00e4nger haltbar zu machen, sprich die Lachsseiten mit Salz einzureiben. Das wirkt sich auf den Fisch hygroskopisch aus und entzieht im viel Fl\u00fcssigkeit. Dadurch bekommt der &#8222;Gravlax&#8220; eine angenehme Bissfestigkeit, schmeckt intensiv und dennoch saftig und zart. Serviert in drei verschiedenen Varianten (<strong>&#8222;Classic&#8220;, &#8222;Rolf&#8217;s&#8220; <\/strong>mit Kr\u00e4utern, Vinaigrette und Kartoffeln oder<strong> &#8222;Stockholm&#8220; <\/strong>mit cremigen Dill Kartoffeln und Senfsauce), k\u00f6nnt ihr auch hier selbst entscheiden, wonach euch geschmacklich am meisten ist. Bei mir pers\u00f6nlich ist weniger mehr und ich suche mir meistens die &#8222;nat\u00fcrlichste&#8220; Variante auf Speisekarten aus, welche dem eigentlichen Produkt \u2013 also in diesem Fall dem Lachs \u2013 geschmacklich am wenigsten die Show stiehlt.<\/p>\n<p>In der Mitte der Karte, prominent platziert, der <strong>&#8222;cold smoked&#8220; Lachs<\/strong>, also kalt ger\u00e4ucherter, norwegischer Lachs, welcher durch das R\u00e4uchern mit Erlenholz und Wacholderbeeren einen besonders erstaunlichen und besonderen Geschmack bekommt.\u00a0Ab 17 Euro kann ausgew\u00e4hlt werden zwischen <strong>&#8222;Oslo&#8220;<\/strong> mit Apfel-Rote-Bete-Salat und Meerrettichcreme, <strong>&#8222;Copenhagen&#8220;<\/strong> mit zwei St\u00fccken ger\u00e4uchertem Lachs, drei unterschiedlichen Saucen und getoastetem Roggenbrot, oder auch <strong>&#8222;Moss&#8220;<\/strong> &#8211; klassischer kalt ger\u00e4ucherter Lachs mit R\u00fchrei und Toast. Die K\u00f6nigsdisziplin in meinen Augen und zugleich der <strong>Signature Dish innerhalb der LaxBar: &#8222;hot smoked&#8220;<\/strong>, also hei\u00df ger\u00e4ucherter Lachs. Serviert wird hier n\u00e4mlich entweder <strong>&#8222;Fr\u00f8ya 43\u00b0&#8220;<\/strong> &#8211;\u00a0ca. 100 Gramm feinster Fr\u00f8ya-Lachs von der R\u00fcckenlende, sanft\u00a0gegart bis zu einer Temperatur von 43 Grad \u2013 daher der Name; oder <strong>&#8222;Fr\u00f8ya 360&#8220;<\/strong> &#8211; zwei 75 Gramm-Lachsst\u00fccke von der R\u00fcckenlende, 360 Sekunden lang &#8222;medium raw&#8220; gegart. Die Kategorie <strong>&#8222;Salads&#8220;<\/strong> beweist\u00a0in Form vier unterschiedlicher Zusammenstellungen (<strong>&#8222;Raw&#8220;, &#8222;Green&#8220;, &#8222;Beets&#8220; oder &#8222;Cold Smoked&#8220;<\/strong> | ab 12 Euro), dass Salat weder \u00f6de noch &#8222;nicht s\u00e4ttigend&#8220; sein muss und so wird mit Ingredienzien wie Ziegenk\u00e4se, Beeren, kalt ger\u00e4uchertem Lachs, Rote Beete und Co. gearbeitet. Beim Dessert gibt es ebenfalls vier verschiedene Specials zwischen 3 und 9 Euro. Probiert unbedingt den <strong>65%-igen Schokoladen Tr\u00fcffel<\/strong>. Gestartet wurde mit dem oben erw\u00e4hnten <strong>Sashimi No. 1<\/strong>. Zuerst probierte ich die pure Ponzu Sauce\u00a0und\u00a0sp\u00e4testens nach dem ersten St\u00fcckchen mit Sashimi samt knackigen Sesam-K\u00f6rnchen, war mir klar: &#8222;Das wird ein guter Abend.&#8220; Wer sich mit Fisch, Sushi und den unterschiedlich verf\u00fcgbaren Qualit\u00e4ten von rohem Fisch ein wenig auskennt, der merkt schon beim ersten Happs in der LaxBar, dass es in Sachen Fisch nur schwer besser geht. Danach ging es mit dem<strong> &#8222;Gravlax&#8220;<\/strong> in der klassischen Variante weiter.<\/p>\n<p>Angerichtet wird schlicht, ohne Schi Schi oder zu viele verspielte Details. Das war beim Sashimi so, ging bei Gang 2 weiter und lief bis zum letzten Teller so weiter. Der Gravlax begeisterte mich auf Grund der oben beschriebenen Konsistenz \u2013 besonders in Verbindung mit der im kleinen T\u00f6pfchen angerichteten Senfsauce aus Halmstad. Zwei Teller waren leer und ich schon sehr gespannt, was folgend serviert wird. Mein Herz \u2013 ganz klar \u2013 schlug h\u00f6her, als dann der <strong>&#8222;hot smoked Lachs&#8220;<\/strong> \u2013 umgeben von Spargel, Roter Beete, Kartoffeln und Vinaigrette \u2013 vor mir stand.\u00a0Serviert wurde nicht einfach nur &#8222;ein St\u00fcckchen Fisch mit Gem\u00fcse&#8220;, sondern der mitunter beste Lachs, den ich je vor mir hatte, sowohl in seiner Zartheit und Farbe, als auch im Geschmack.\u00a0Ich a\u00df auch diesen Teller leer und g\u00f6nnte mir ein kleines &#8222;kulinarisches Verschnaufp\u00e4uschen&#8220;. Im Anschluss wurde mein innerer Wunsch erh\u00f6rt und ich bekam <strong>&#8222;Fr\u00f8ya 43\u00b0&#8220;<\/strong> serviert &#8211; leicht glasig, mit kleinen Karotten und gr\u00fcnem Spargel &#8211; f\u00fcr mich das klare Highlight des Abends. Ein Traum!<\/p><\/div>\n<p>Bevor ich den Vorschlag, doch noch ein Dessert\u00a0von der Karte zu w\u00e4hlen\u00a0annahm, freute ich mich sehr \u00fcber die M\u00f6glichkeit mit dem Verantwortlichen in Sachen K\u00fcche, sprich dem <strong>Koch Marcel Willnecker<\/strong> zu sprechen. Der seit gut 1,5 Jahren ausgelernte Koch, ist\u00a0\u00a0verantwortlich f\u00fcr die Speisekarte und letztendlich gl\u00fccklichen Gesichter der G\u00e4ste. Nach dem ich verbal fertig applaudiert \u2013 sprich Gang f\u00fcr Gang gelobt hatte \u2013 und meine Fragen an den Jungkoch stellte (&#8230;mehr bald in einem Interview mit Marcel Willnecker&#8230;) ging es\u00a0an den letzten Gang, das Dessert. Auch hier gilt: Wer die Wahl hat, hat die Qual und so entschied ich mich auch hier auf den Gastgeber zu h\u00f6ren und sa\u00df keine f\u00fcnf Minuten sp\u00e4ter vor einem <strong>Gl\u00e4schen mit &#8222;Apple Trifle&#8220;<\/strong> \u2013 also geschichtete nordische \u00c4pfel mit Crumble und Sahne. Ich bin ganz ehrlich: Ich durfte so viele verschiedene Drinks verkosten, dass diese einen extra Absatz verdient haben. Habt ihr also vor, in die LaxBar zu kommen und nur ein stilles Wasser zu trinken, k\u00f6nnt ihr den Absatz auslassen, ich empfehle allerdings es mir gleich zu tun und durchzuprobieren was das Zeug h\u00e4lt. Auch wenn ihr Weinprofis seid, lasst die Oberhand dem LaxBar-Team, denn hier wird selbstbewusst, kompetent und \u2013 wen wundert&#8217;s \u2013 auch reichlich nordisch mit der Frage nach dem passenden\u00a0Tr\u00f6pfchen im Glas umgegangen.<\/p>\n<p>Zu Beginn gab es, nein keinen Wein, sondern den Drink <strong>&#8222;Elixier&#8220;<\/strong> &#8211; im Silberbecher serviert, mit Huckleberry Munich Gin, Gustav Cranberry, frischer Limette, Zucker und Piper-Heidsieck Brut Champagner, welcher am Tisch aufgegossen wird. Lecker und mein Fall, obwohl nicht s\u00fc\u00df. Champagner-Fans d\u00fcrften hiermit richtig liegen, denn dieser dominiert den Drink deutlich. Mein zweiter Drink war ein\u00a0<strong>&#8222;Danish Daiquiri&#8220;<\/strong> mit\u00a0Aalborg, frischer Limette, Zucker, Gurke und ged\u00f6rrtem Dill. In Verbindung mit der zum Gravlax servierten Senfsauce aus Halmstad, war der Drink\u00a0f\u00fcr mich in Sachen Harmonie zum Gericht, eine glatte 1.\u00a0\u00a0Als das Daiquri-Glas fast alle war und der\u00a0dritte Gang kam, wurde parallel\u00a0zum\u00a0dritten Drink (der <strong>&#8222;\u00c4ppeltini&#8220;\u00a0<\/strong>mit\u00a0Lysholm 52\u00b0, Calvados, p\u00fcriertem Granny Smith-Apfel, frischer Zitrone, Zucker, Apfelchip), auch erstmals mein Weinglas gef\u00fcllt.\u00a0Es gab eine f\u00fcr mich sehr stimmige\u00a02015er Rheingauer <strong>&#8222;Cuv\u00e9e S&#8220;<\/strong> aus Wei\u00dfburgunder und Chardonnay (50%\/30%\/20% Riesling) vom Weingut Schumann-N\u00e4gler. Das Weingut ist eines der \u00e4ltesten Weing\u00fcter aus dem Rheingau mit nachgewiesenem Weinbau, zur\u00fcck bis ins Jahr 1438.\u00a0Die 18 Monate Ausbau im Holzfass sorgen bei der mit sehr flacher S\u00e4urestruktur versehenen Cuv\u00e9e f\u00fcr eine harmonische Reife und einen sehr &#8222;sanften und ruhigen&#8220; Genuss. Dann kam der erste Longdrink des Abends, der <strong>&#8222;Cloudberry Collins&#8220;<\/strong> mit\u00a0Vikingfjord Vodka, Cloudberry, frischer Zitrone, Zucker, ged\u00f6rrtem Dill und Limettenchips. Den fl\u00fcssigen Abschluss des Abends \u2013 ebenfalls im Longdrink-Glas\u00a0 servierte und zum Dessert gereicht \u2013 bildete der <strong>&#8222;Ramos Madeira Fizz&#8220;<\/strong> mit\u00a0Linie Madeira Cask, Angostura, Orangebitters, Sahne,\u00a0frischer Limette, Zucker, Aqua Monaco Soda, Muskatnuss, ged\u00f6rrtem Zitronengras und Limettenchip. Ich bin ganz ehrlich: Bei all diesen sehr kreativen Drinks, welche alle samt von <strong>Barprofi Florian G\u00fcttler<\/strong> kreiert wurden, fehlt mir das entsprechende know-how um in die Tiefe urteilen zu k\u00f6nnen. So kann ich euch &#8222;nur&#8220; sagen, dass alle wirklich sehr gut, sehr unterschiedlich und extrem gut auf die Gerichte vor mir abgestimmt waren. Hammer Laden, super Team, stimmiges Ambiente, ordentlich Know how hinter&#8217;m Tresen und am Tisch \u2013 einfach ein Rundum-Paket, das Spa\u00df bringt. Wieder kommen ist hier so gut wie vorprogrammiert, denn wer sich hier nicht wohl f\u00fchlt, mag in meinen Augen entweder keinen Lachs oder hat keine Ahnung. \ud83d\ude09 Nein wirklich, probiert die LaxBar aus, schnackt ein, zwei Takte mit den Gastgebern (&#8230;danke an dieser Stelle nochmals an Michi, Florian, Marcel, Diana und alle, die meinen Abend so grandios gemacht haben&#8230;) und lasst es euch einfach gutgehen.<\/p>\n<p>Die LaxBar vereint gekonnt das Neue mit dem Traditionellen und bringt neben Professionalit\u00e4t, auch einen lockeren und &#8222;famili\u00e4ren Touch&#8220; mit ein.\u00a0In mir hat das ausgel\u00f6st, dass ich gerne auch etwas l\u00e4nger bliebt. Meine Empfehlung f\u00fcr euch, w\u00e4re unbedingt ordentlich zuzuschlagen. Einmal, weil das bei den mehr als fairen Preisen drin sein d\u00fcrfte und zum anderen, weil es erst mit dem &#8222;Durchprobieren&#8220; so richtig deutlich wird, wie vielseitig man Lachs zubereiten kann \u2013 sowohl von der Methodik an sich, als auch durch die Beilagen.
