Witzig, oder?<\/p><\/div>\n<p><strong>BACKSTUBE W\u00dcNSCHE &#8211; ran an den Teig! &#8211; <\/strong>Was kauft man einem kleinem Kind im Kinderwagen beim B\u00e4cker?, was liegt am Wochenende so gut wie immer im Fr\u00fchst\u00fccksbrotkorb? Und welche Backware schmeckt so gut wie jedem? &#8211; Richtig! Die gute alte (&#8230;hoffentlich frische&#8230;;-)) Breze. Und um genau die geht es heute prim\u00e4r in meinem Artikel f\u00fcr euch. Bis dato habe ich schon \u00fcber die\u00a0<strong><a href=\"http:\/\/biancas-blog.de\/alle\/backstube-wuensche\/\" target=\"_blank\" rel=\"noopener noreferrer\">Geschichte, Hintergr\u00fcnde sowie Philosophie<\/a> der in Gaimersheim beheimateten Backstube W\u00fcnsche<\/strong> berichtet und euch virtuell auf meine Tour durch deren Produktion\u00a0mitgenommen (hier nachlesen: <strong><a href=\"http:\/\/biancas-blog.de\/alle\/backstube-wuensche-produktion\/\" target=\"_blank\" rel=\"noopener noreferrer\">Produktionsbesichtigung in der Backstube W\u00fcnsche<\/a>)<\/strong>. Das war richtig interessant, oder? Nun habe ich die n\u00e4chste Gelegenheit genutzt mich ein wenig genauer umzusehen und habe sogar selbst die \u00c4rmel hochgekrempelt. &#8222;Ran an die Breze!&#8220;, hie\u00df es f\u00fcr mich. Also, was macht eine richtig gute Breze aus und worauf kommt es dabei an?<\/p>\n<h1 style=\"font-size: 15px; margin-bottom: -7px;\"><b>Backstube W\u00fcnsche\u00a0&#8211;\u00a0die bayerische Breze und wie sie gemacht wird.<\/b><\/h1>\n<p>W\u00e4hrend meinem Besuch in der Produktion bekam ich also die M\u00f6glichkeit mich einmal selbst ans Brezenschlingen\u00a0heranzuwagen \u2013 eine eigene Abteilung innerhalb der Produktion. Mit nat\u00fcrlich frisch desinfizierten H\u00e4nden und in voller Montur stellte ich mich zu den netten Damen\u00a0in die Brezenproduktion und lernte, wie man die Breze schlingt. Ganz so gut hat&#8217;s bei mir nicht geklappt und was so einfach aussieht vermag jeder Menge \u00dcbung. Zu Beginn sind die &#8222;Teigschlangen&#8220;, aus welchen schwungvoll Brezen geformt werden, kleine Kugeln, diese werden maschinell zu langen, ca. zwei Zentimeter dicken Teigstr\u00e4ngen geformt und dann h\u00e4ndisch von den Damen\u00a0zu Brezen geformt. Schon gemacht?<\/p><\/div>\n<p>Die Brezen der Backstube W\u00fcnsche werden aus bayerischen Rohstoffen produziert. Kauft ihr also eine Breze in einer der Backstuben, bei\u00dft ihr in 100% &#8222;Bayern&#8220; \u2013 best\u00e4tigt durch bzw. erkennbar am\u00a0&#8222;Gepr\u00fcfte Qualit\u00e4t Bayern&#8220;-Siegel. Logistisch gesehen, l\u00e4uft das so, dass die Brezen von der Produktion in Gaimersheim tiefgefroren und verpackt an die einzelnen Backstuben ausgeliefert\u00a0werden und diese vor Ort dann mehrmals t\u00e4glich frisch gebacken werden. Ihr k\u00f6nnt also in die Backstube von W\u00fcnsche eurer Wahl gehen und immer ganz frisch gebackene Brezen genie\u00dfen. Daf\u00fcr bereiten die Mitarbeiter innerhalb der Produktion zuerst einmal den Teig vor. Nochmals: Aus rein regionalen Zutaten, gemischt aus bayerischem Getreide, vermengt mit dem zugegebenen Weizenvorteig. Sobald der fertige Teig ausreichend Zeit zum Ruhen hatte, geht es weiter in der Produktion und der Teig wird nun so portioniert, dass er gut weiterverarbeitet werden, sprich geformt werden kann. Liegen die Brezen dann geformt auf den Dielen, geht&#8217;s nicht direkt in den Ofen, sondern erst einmal in den G\u00e4rraum unter im Anschluss unter die &#8222;Laugendusche&#8220;. Das ist ein Flie\u00dfband, welches die Brezen gleichm\u00e4\u00dfig mit einem Gemisch aus Natronlauge und Wasser \u00fcberzieht. bespr\u00fcht. Dadurch bekommen die Brezen den typischen Laugengeschmack, den sch\u00f6nen Glanz und ihre kastanienbraune Farbe \u2013 das Markenzeichen einer &#8222;gscheidn Brezen&#8220;. Einfach nur, weil&#8217;s mich interessiert hat, fragte ich nach, was denn w\u00e4re, wenn die &#8222;Laugendusche&#8220;\u00a0entfallen w\u00fcrde, sprich gar kein &#8222;Laugenteig&#8220; entst\u00fcnde. Tja, dann w\u00e4re die Breze \u00b4k\u00e4sweis` und w\u00fcrde nicht wirklich nach Breze, sondern wesentlich milder, schmecken. Die Brezen der Backstube W\u00fcnsche<\/p><\/div>\n<h2 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Was die Qualit\u00e4t (und den Preis) einer Breze bestimmt<\/b><\/h2>\n<p>Kurz gesagt entsteht eine \u2013 im \u00dcbrigen ca. 70 Gramm schwere \u2013 Breze also durch sehr viel Ruhe f\u00fcr den aus hochwertigen und regionalen Zutaten hergestellten Teig, durch handwerkliches Geschick vom gelernten Personal und perfekt abgestimmte Prozesse.
