Das wei\u00df ich, seit ich vor einigen Tagen erneut bei Rischart aus der Backstube gekommen bin. In den H\u00e4nden frisch\u00a0gebackener Datschi, im Kopf einiges an neuem Wissen, rund um einen der wohl besten Datschis der Stadt. Zu Beginn der Datschizeit, also Mitte Juni, werden t\u00e4glich 60 Bleche \u2013 je 80 auf 40 Zentimeter \u2013 hergestellt. Davon 40 mit klassischem Datschi aus Hefeteig, 20\u00a0aus M\u00fcrbeteig und mit Streuseln auf den Zwetschgen. Zur Hochzeit des Datschis dann, also im August, werden mehr als doppelt so viele Bleche pro Tag mit frischem Datschi best\u00fcckt. Da gehen dann 130 St\u00fcck von beiden Sorten in die Filialen. Wer sich darunter nichts vorstellen kann: Durchschnittlich werden w\u00e4hrend der gesamten Datschizeit ca. 90 bis 100 Bleche pro Tag hergestellt, sprich in etwa 2.400 St\u00fcck pro Tag. Daf\u00fcr wird nat\u00fcrlich jede Menge Mehl, Teig, Zwetschgen und Co. ben\u00f6tigt. In Zahlen: Zwischen 600\u00a0und 800 Kilogramm (!) F\u00fcr die perfekte Verarbeitung dieser sorgt bei Rischart seit \u00fcber 40 Jahren Herr R\u00fchle, Konditoreileiter bei Rischart und Experte in Sachen Zwetschgendatschi. F\u00fcr den perfekten Datschi gen\u00fcgt es nicht, einfach nur ein paar Fr\u00fcchte auf Kuchenteig zu legen, nein da geh\u00f6rt schon mehr dazu. So unterscheidet die Produktion von Rischart zwischen dem klassischen Datschi und dem Streusel-Datschi &#8211; also einmal Hefe-, einmal M\u00fcrbteig. Ist dieser auf den gro\u00dfen Edelstahlblechen ausgebreitet und hat ein wenig Zeit zum Ruhen gehabt, gehts ans Belegen. Die Zwetschgen kommen aber nicht einfach nur auf den Teig, sondern zuvor werden auf diesen noch Semmelbr\u00f6sel gestreut (klassisch), bzw. Johannisbeermarmelade\u00a0gestrichen\u00a0und dann Semmelbr\u00f6sel gestreut (M\u00fcrbteig), was f\u00fcr eine Art \u201eIsolierung\u201c sorgt. Die Zwetschgen, so erkl\u00e4rte mir Herr R\u00fchle, sind n\u00e4mlich so saftig und damit feucht, dass der circa\u00a0f\u00fcnf bis sieben Millimeter dicke Teig durchn\u00e4ssen w\u00fcrde und der Datschi ohne diesen Arbeitsschritt matschig w\u00e4re. Dabei wird aber nicht gegeizt und so kommen pro sp\u00e4ter dann geschnittenem Datschist\u00fcck ca. vier bis f\u00fcnf Reihen saftige Zwetschgen zu Stande. Andere Anbieter gehen in der Regel sparsamer mit dem &#8222;kostenintensivsten&#8220;\u00a0Part des Datschis\u00a0&#8211; der Zwetschge &#8211; um und legen diese ziemlich flach auf den Teig. Bei Rischart stehen sie fast schon senkrecht auf dem Teigbett. Ergebnis: richtig viel Zwetschge. Lecker! Bevor wir weiter gehen ein kleiner Exkurs in Sachen Zwetschge. Je nach Bodendicke bei ca. 240\/245 Grad f\u00fcr 35 bis 40 Minuten. Dabei rotiert der Datschi in den \u00d6fen, so dass er gleichm\u00e4\u00dfig gebacken wird und auch jedes St\u00fcck gleich gut schmeckt. Anders beim Streuseldatschi, da kommen vorab noch die aus buttrigem M\u00fcrbteig hergestellten Streusel oben auf den Zwetschgenbelag &#8211; auch hier wird mengentechnisch nicht gegeizt. Ist der Datschi dann gebacken und abgek\u00fchlt, kommt oben noch eine Art Gelee drauf, damit der Datschi samt Fr\u00fcchten sch\u00f6n gl\u00e4nzt. Zimt und Zucker on Top und fertig ist er, der wohl mitunter beste Datschi der Stadt. Rischart verwendet nat\u00fcrlich eine eigene, streng geheime Rezeptur, die den Boden sch\u00f6n saftig und fest, nicht aber trocken, macht. Die ideale Grundlage f\u00fcr Zwetschgendatschi. Die Zwetschgen m\u00fcssen von bester Qualit\u00e4t sein und immer da her stammen, wo sie gerade Saison haben und sch\u00f6n saftig und geschmacksintensiv sind. Aktuell wie erw\u00e4hnt ist das Italien, gefolgt von Deutschland. Dazu kommt, dass bei Rischart \u00fcberdurchschnittlich viel an Fr\u00fcchten verwendet wird und nur A-Ware auf den Datschis landet. Damit ihr auch wirklich immer frischen Datschi habt, auch wenn ihr den erst am Nachmittag kaufen solltet, wird bei Rischart in verschiedenen Zeitabschnitten Datschi hergestellt und ausgeliefert. Sprich ihr kauft am Nachmittag keinen Datschi der stundenlang rum lag, sondern habt immer frisch-saftigen Kuchen in der T\u00fcte. Und auch interessant: Geschnitten werden die Kuchen bei Rischart mit einem hochmodernen Ultraschallschneider. Es kann also nicht vorkommen, dass die St\u00fccke nicht gleich gro\u00df oder ausgefranst oder zermatscht sind. Fand ich super spannend und sehr &#8222;datschifreundlich&#8220;. \ud83d\ude42 Auch die Qualit\u00e4tskontrolle pro Charge wird konsequent durchgezogen, dass sofort auff\u00e4llt, sollte mal etwas nicht passen. Alles in allem ist der Preis (2,90 Euro &#8211; klassisches St\u00fcck; 3,15 Euro &#8211; Streuselst\u00fcck) mehr als gerechtfertigt, weil der klare Unterschied einfach schmeckbar ist.
