Zu diesen Events z\u00e4hlte ganz klar der k\u00fcrzlich erlebte Abend in der sch\u00f6nen M\u00fcnchner Villa Wagner, gemeinsam mit Franciacorta unter dem Motto \u201eEin Abend mit Franciacorta\u201c. Silvano Brescianini, der Pr\u00e4sident des Franciacorta Konsortiums, lud \u2013 begleitet von einer Auswahl exzellenter Franciacorta Schaumweinen, hochkar\u00e4tigen K\u00f6chen und Food-Spezialit\u00e4ten aus der Franciacorta \u2013 zu einem tollen Abend ein. Vorgestellt wurde die Franciacorta sowohl als Weinanbaugebiet, als Produktionsmethode, als nat\u00fcrlich auch in Form von tollen Schaumweinen. Teil des Abends war nat\u00fcrlich auch die Verkostung der drei Typologien \u201eFranciacorta Brut\u201c, \u201eFranciacorta Sat\u00e8n\u201c und \u201eFranciacorta Ros\u00e9\u201c. Gek\u00fchlter Franciacorta Ros\u00e9 f\u00fcr entspannte Sommerabende (Photo by Gisela Schober\/Getty Images)<\/p><\/div>\n<h1 style=\"font-size: 15px; margin-bottom: -7px;\"><b>Wissenswertes \u00fcber Franciacorta<\/b><\/h1>\n<p class=\"p2\"><span class=\"s1\">Viel war geboten und so wurde der unterhaltsame Abend nicht nur von Gabriele Heins \u2013 stellvertretende Chefredakteurin von \u201eDer Feinschmecker\u201c \u2013 und dem Autor sowie Weinkenner Jens Priewe moderiert, sondern in Form eines musikalischen Live-Programms\u00a0von dem Jazz-Musiker Jerker Kluge samt Band begleitet. Gute Stimmung, sage ich euch. Vollgepackt mit spannenden Informationen rund um Franciacorta, war der Abend eine gekonnte Mischung aus Verkostung, Information und Austausch f\u00fcr mich. So erfuhr ich beispielsweise, dass Weine aus Franciacorta ausschlie\u00dflich\u00a0in Form von Flascheng\u00e4rung hergestellt werden und sich Weine sowie Rebst\u00f6cke und Hersteller mit dieser Namensbezeichnung zu 100% innerhalb der Grenzen des geografischen Gebiets \u201eFranciacorta\u201c \u2013 gelegen in der italienischen Lombardei \u2013 befinden m\u00fcssen. Andererseits\u00a0<\/span><span class=\"s1\">darf der Name nicht auf der Flasche angegeben sein. Wenn man von Franciacorta spricht, spricht man also immer von dem Ort, der Methodik und dem Wein im Glas. Auch interessant: Der Franciacorta war italienischer Vorreiter in Sachen DOCG-Marke. Diese erhielt der Wein n\u00e4mlich im Jahre 1995 als Erster, innerhalb Italiens durch Flascheng\u00e4rung hergestellter Wein. Wem das nichts sagt: Diese Markierung auf einem Wein, garantiert die kontrollierte Herkunftsbezeichnung in Form der h\u00f6chsten Auszeichnung f\u00fcr die sortentypische Qualit\u00e4t, was bedeutet, dass alle Auflagen f\u00fcr den jeweiligen Wein in der Flasche erf\u00fcllt wurden. Einfach gesagt, landet ihr beim Kauf eines mit DOCG-Marke ausgezeichneten Wein selten daneben. Auch der Einsatz von Pino Bianco ist bis zu einem Maximum von 50% der verwendeten Trauben zul\u00e4ssig. Der von Erbamat \u2013 eine wei\u00dfe, italienische Rebsorte \u2013 bis zu 10%. Auch reguliert ist, dass maximal 120 Doppelzentner pro Hektar (also 12.000 Kilo) produziert werden d\u00fcrfen. Nat\u00fcrlich ist auch die Herstellung streng kontrolliert und auf beste Qualit\u00e4t sowie ein schonendes Verfahren f\u00fcr die Trauben ausgelegt. Daf\u00fcr werden die Trauben ausschlie\u00dflich per Hand gelesen und nach der Ernte, getrennt nach Weinberg, leicht gepresst und separat vinifiziert. Die daraus entstandenen Weine werden dann f\u00fcr die Cuv\u00e9e-Produktion verwendet. Dabei werden nach einer sorgf\u00e4ltigen Verkostung Franciacorta-Basisweine verschiedener Jahrg\u00e4nge miteinander vermischt und es entsteht der Sektgrundwein. <\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Diesem Grundwein werden in der Flasche bei der Tirage Zucker und aktive Hefen hinzugef\u00fcgt, welche f\u00fcr eine langsame und nat\u00fcrliche Zweitg\u00e4rung sorgen. Im Detail bedeutet das: Es bildet sich Kohlens\u00e4ure in der Flasche und ein Druck von f\u00fcnf bis sechs bar (max. f\u00fcnf bar bei der Typologie \u201eSat\u00e8n\u201c). Je nach Franciacorta-Typ werden die Flaschen eine entsprechende Zeit lang gelagert und im Anschluss degorgiert \u2013 das bedeutet das Entfernen des abgesetzten Hefedepots aus dem Flaschenhals. Dieses Depot entsteht sowohl durch das R\u00fctteln, als auch die geneigte Lagerung im R\u00fcttelpult. Der erw\u00e4hnte Dosagelik\u00f6r bestimmt dabei durch seinen Zuckeranteil den Geschmackstyp und Charakter des Franciacorta. Verschlossen mit ihrem typischen, pilzf\u00f6rmigen Sektkorken samt ummantelnden Drahtk\u00e4fig, kommt der Wein dann in den Handel \u2013 vorab nat\u00fcrlich mit der vom Landwirtschaftsministerium ausgegebenen DOCG-Marke versehen. Also 100% Qualit\u00e4t in jeder Franciacorta-Flasche. Noch als interessante Erg\u00e4nzung: Bei den nicht mit bestimmten Jahrg\u00e4ngen hergestellten Weinen, die Franciacorta \u201enon millesimato\u201c-Weine, wird die Tirage im Fr\u00fchjahr, ca. sieben Monate nach der Lese zugesetzt, woraufhin mindestens 18 Monate Flascheng\u00e4rung auf den Hefen folgt, bevor degogiert wird. Bei Sat\u00e8n- und Ros\u00e9-Weinen, welche den\u201enon millesimato\u201c-Weinen zugeordnet sind, betr\u00e4gt die\u00a0Ruhezeit\u00a0sogar mindestens 24 Monate. Nat\u00fcrlich kam ich nicht umher, mir auch einige Flaschen mit nach Hause zu nehmen, um den Genuss nochmals im privaten Rahmen zu erleben. Doch noch einmal kurz zur\u00fcck zum Abend in der Villa Wagner. Wie\u00a0eingangs erw\u00e4hnt, wurde an dem Abend begleitend ein k\u00f6stliches Men\u00fc samt Franciacorta Weine serviert. Als Einstieg gab es \u201eViolette Kartoffel, Rotgarnele, Sauce Franciacorta\u201c mit \u201eFranciacorta Sat\u00e8n Brut\u201c im Glas. Gefolgt von \u201eFeiner Lasagne, Kalbsrag\u00f9 und fl\u00fcssigem Grana Padano-K\u00e4se\u201c. Ausgeschenkt wurde zum italienischen Traditionsgericht der \u201eFranciacorta Brut\u201c. Der \u201eFranciacorta Ros\u00e9\u201c teilte sich hingegen seinen kulinarischen Auftritt mit Gang Nummer drei und \u201eFilet vom Rovato-Rind mit Reduktion von der Sardine aus dem Iseo See und Milch sowie Brotkusterln\u201c. Dieser eignet sich durch seinen geschmacklich verschiedenen Typologien n\u00e4mlich\u00a0ausgezeichnet f\u00fcr die unterschiedlichsten\u00a0Gerichte und Produkte. Serviert den Wein am besten bei einer angenehmen Trinktemperatur von acht bis zehn Grad.
