Kurz bin<span class=\"Apple-converted-space\">\u00a0 <\/span>ich in diesem ersten Artikel auch auf das gastronomische Konzept und Speiseangebot des Luxushotels eingegangen (&#8230; nochmals nachlesen\u2026). Nun will ich euch im Detail erz\u00e4hlen, wie und was ich vor Ort gegessen habe, welche Kreationen auf der Speisekarte stehen beziehungsweise, worin sich die beiden integrierten Hotelrestaurants \u201eResidenz\u201c und \u201eDas Lambergs\u201c unterscheiden. Ein Tag ohne ein gelungenes Fr\u00fchst\u00fcck, kann schon gar nicht mehr so ein guter Tag werden, wie einer, der mit einem umfangreichen Fr\u00fchst\u00fccksbuffet startet, oder? Vor dem Betreten des Fr\u00fchst\u00fccksbereiches\u00a0(das Restaurant &#8222;Residenz&#8220; ist auch der Fr\u00fchst\u00fccksraum) werdet ihr\u00a0von einem freundlichen Herren empfangen und begr\u00fc\u00dft.\u00a0Als Gast werdet ihr nach der Zimmernummer gefragt und informiert dass beim Fr\u00fchst\u00fcck freie Platzwahl besteht. Im Anschluss k\u00f6nnt ihr euch einen sch\u00f6nen Tisch \u2013 ich empfehle einen am Fenster mit Blick auf die Berge und das Dorf \u2013 ausw\u00e4hlen.<\/p>\n<p class=\"p1\">Gut gef\u00e4llt mir, dass der Buffetbereich abgetrennt vom Speisebereich in einem hinteren Raum platziert ist. Kein Geschirrgeklapper oder hungrige Menschen, die sich gerade ihr Fr\u00fchst\u00fcck zusammenstellen direkt neben dem Tisch also. Ist ein Platz gefunden, geht es auch schon los. Vor meiner Auswahl\u00a0werfe ich zuerst einen Blick auf das reichhaltige Buffet. Daf\u00fcr umrunde ich es in der Regel mehrfach um mir einen guten Eindruck machen zu k\u00f6nnen. Aufgebaut sind auf dem Fr\u00fchst\u00fccksbuffet des Hotel Schloss Lebenberg so ziemlich alle K\u00f6stlichkeiten, die man sich f\u00fcr ein reichhaltiges Fr\u00fchst\u00fcck w\u00fcnschen kann.<span class=\"Apple-converted-space\">\u00a0 E<\/span>ines steht bei mir in Sachen B\u00fcfetts\u00a0jedoch an erster Stelle: Die Frische und Qualit\u00e4t der Speisen. Nichts w\u00e4re schlimmer als bereits zu lange liegen gelassene Kost, die keiner mehr essen mag.\u00a0Hier ist das nat\u00fcrlich nicht der Fall. Egal um wie viel Uhr ich w\u00e4hrend der Fr\u00fchst\u00fcckszeit an das Buffet ging, es wurde alles immer wieder frisch und reichlich nach- und aufgef\u00fcllt. Daumen hoch, so sollte der Tag starten!<\/p>\n<h2 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Die beiden Hotelrestaurants: &#8222;Residenz&#8220; und &#8222;Das Lambergs&#8220;<\/b><\/h2>\n<p>Mein Dinner fand nicht im Residenz-Restaurant statt, sondern oberhalb diesem, im f\u00fcr 24 G\u00e4ste ausgelegten Restaurant &#8222;Das Lambergs&#8220;. Bevor ich auf dieses eingehe, kurz ein Abstecher in Sachen Gastronomie-Konzept. Das &#8222;Residenz&#8220; ist das &#8222;normale&#8220; Hotelrestaurant. Hier esst ihr, wenn ihr Halbpension bucht. Automatisch bekommt ihr dann jeden Abend ein wechselndes Sechs-G\u00e4nge-Men\u00fc serviert, von welchem vier\u00a0G\u00e4nge an den Tisch gebracht werden und zwei G\u00e4nge via Buffet-Auswahl\u00a0bereit stehen.\u00a0Die Men\u00fcs stellen sich im Residenz aus internationalen Gerichten sowie \u00fcberwiegend \u00f6sterreichischen Speisen und Zutaten zusammen. Auch wenn ihr Halbpensions-Gast seid, k\u00f6nnt ihr selbstverst\u00e4ndlich jederzeit frei entscheiden, ob ihr im &#8222;Residenz&#8220; mit Platz f\u00fcr ca. 130 G\u00e4ste oder im &#8222;Das Lambergs&#8220; speisen wollte.<\/p>\n<p>Das \u00e0 la carte-Restaurant &#8222;Das Lambergs&#8220; gibt es unter diesem Namen und Konzept seit Mitte Dezember 2018 im Hotel Schloss Lebenberg. W\u00e4hrend meines Aufenthalts entschied ich mich die Speisekarte bei Seite zu legen und mich von Marcel Dornheim\u00a0in Sachen Speiseauswahl beraten zu lassen. Gewollt bieten das Restaurant &#8222;Residenz&#8220; und &#8222;Das Lambergs&#8220; einen Kontrast um den G\u00e4sten gen\u00fcgend Auswahl zu bieten \u2013 das zeigt sich im \u00dcbrigen auch auf der Barkarte, diese bietet n\u00e4mlich ausschlie\u00dflich Gerichte an, die in keinem der beiden Restaurants angeboten werden. Nach dem Platznehmen wurde vorneweg\u00a0eine Trilogie an t\u00e4glich wechselnden und hausgemachten Brotaufstrichen (in unserem Fall &#8222;Verhackertes&#8220;, Karottenfrischk\u00e4se und Tomatenhumus \u2013 f\u00fcr 3,50 Euro) serviert. Sehr k\u00f6stlich und ein guter Einstieg in einen tollen Abend. Es folgten zwei unterschiedliche Vor- sowie Hauptgerichte und ein Dessert, ganz allein f\u00fcr mich. Jeder der meine Beitr\u00e4ge liest wei\u00df: Desserts landen bei mir so gut wie nie auf dem Tisch und \u00fcberzeugen mich nur selten. In diesem Fall wurde der Mut des K\u00fcchenmeisters Dornheim, mir dennoch eine S\u00fc\u00dfigkeit zum Abschluss zu servieren, jedoch belohnt, denn ich genoss meinen &#8222;Mojito 2.0&#8220; tats\u00e4chlich sehr. Zubereitet mit Panna Cotta, Diplomatico Rum, Minz Granite, Rohrzucker und Limette ein sehr au\u00dfergew\u00f6hnlicher Abschluss. Das Dessert zeigt auf,\u00a0dass Marcel Dornheim gerne das Klassische mit dem Extravaganten verbindet und &#8222;Althergebrachtes&#8220; mit Raffinesse neu interpretiert.<\/p>\n<p>Vor den servierten Hauptspeisen gab es f\u00fcr mich gebeizten Lachs mit Wasabi-Honig-Senf Dip und k\u00f6stlich-intensivgr\u00fcnen Balsamico-Perlen sowie f\u00fcr meine Tischbegleitung ein Beef Tartare mit gepickeltem Gem\u00fcse, Kapernbeeren, Wachtelei, Butter und Tramezzini im K\u00f6rbchen (f\u00fcr 18,90 Euro). Im Anschluss\u00a0bekam ich des K\u00fcchenmeisters aktuelles Lieblingsgericht von der Karte kredenzt: &#8222;Geschmorte Kalbsbrust mit einer Maisvariation, Speck, Pfefferoni und BBQ-Lack (f\u00fcr 21,60 Euro) &#8211; sehr gut und nicht nur ein Fest f\u00fcr den Gaumen, sondern auch ein tolles Farbenspiel auf dem Teller. Hauptgericht Nummer zwei f\u00fcr den Mitesser: &#8222;Rosa Entenbrust mit Orangenrisotto, Selleriechips, gebranntem Lauch und Lebkuchenjus&#8220; (f\u00fcr 23,70 Euro).\u00a0Bei der Jus konnte ich nicht widerstehen und stibitzte ein L\u00f6ffelchen.\u00a0Eine tolle Idee und Abwandelung einer klassischen Jus f\u00fcr\u00a0die kalten Wintermonate, die noch einen Hauch Erinnerung an die erst k\u00fcrzlich vergangene Weihnachtszeit zul\u00e4sst.<\/p>\n<p>Jetzt zu einem entscheidenden Punkt in Sachen Men\u00fc und Speisen: Mit dem\u00a0vor gut vier Monaten ins Leben gerufenem Motto &#8222;Ein St\u00fcck \u00d6sterreich&#8220; wird verst\u00e4rkt und mit klarem Fokus auf die Verwendung \u00f6sterreichischer Produkte aus der Region wert gelegt \u2013 ganz gleich ob &#8222;Residenz&#8220;, &#8222;Das Lambergs&#8220;, Fr\u00fchst\u00fcck oder Bar-Snack. Das Motto zieht sich\u00a0durch das komplette Gastronomie-Angebot im Haus und selbst in der Minibar der Zimmer liegen nur \u00f6sterreichische Produkte.\u00a0Das Fleisch kommt, genauso wie das Obst und Gem\u00fcse, aus der Tiroler Region. Zus\u00e4tzlich wird auf hochwertige Produkte von Bauern aus der Region\u00a0geachtet.\u00a0Auch findet ihr auf dem Fr\u00fchst\u00fccksbuffet ausschlie\u00dflich \u00f6sterreichischen K\u00e4se sowie Tiroler Butter und frische Bergbauernmilch aus Tirol. Nichts wird &#8222;einfach nur so&#8220; angeboten, sondern wurde vorab stets\u00a0mit Bedacht f\u00fcr das Hotel Schloss Lebenberg ausgew\u00e4hlt. Der K\u00e4se ist ein gutes Beispiel. Ich nahm mir viel Zeit K\u00fcchenmeister Marcel Dornheim kennenzulernen. Mir gefiel, dass\u00a0es Marcel D. sehr wichtig ist, dass sein gesamtes Team gleichwertig behandelt wird, die Arbeit auch Spa\u00df machen soll und sich jeder des 24-k\u00f6pfigen Teams in seinem Verantwortungsbereich entfalten kann. Dornheim kocht keine allt\u00e4glichen Gerichte und geht mit seinem K\u00fcchenstil neue Wege. &#8222;Ich habe sehr klassisch und nach alter Schule gelernt zu kochen. Dieses erlernte Handwerk verwende ich sehr gerne daf\u00fcr, meine Speisen neu zu interpretieren \u2013 gerne mal mit einem leichten Hang zur \u00dcbertreibung.&#8220;, so Marcel Dornheim l\u00e4chelnd \u00fcber seinen K\u00fcchenstil. &#8222;Auch Verschwendung von Lebensmitteln beugen wir nat\u00fcrlich m\u00f6glichst vor. &#8218;From nose to tail&#8216; setzen wir hier in der K\u00fcche ebenfalls so gut wie m\u00f6glich um. Das bedeutet, wir entsorgen nur, was nicht weiterverarbeitet werden kann.&#8220; Diese Philosophie in der K\u00fcche gef\u00e4llt mir sehr gut \u2013 sowohl im Wort, als auch abends in der Praxis auf dem Teller. Auch Convenience-Produkte haben nichts in der Schlosshotelk\u00fcche verloren. Selbstverst\u00e4ndlich richtet sich K\u00fcchenmeister Marcel Dornheim auch nach der Natur und der jeweiligen Saison. So gibt es je nach Zeitraum eurer Anreise, auch mal K\u00fcrbisgerichte auf der Karte, Wildgerichte, Steinpilze oder Pfifferlinge und vieles mehr. Dort lernte ich Marius kennen, seit zehn Jahren der Barchef der Hotelbar und &#8222;der Mann hinter dem Cocktail&#8220; im Hotel Schloss Lebenberg. Die Barkarte untergliedert sich in Drinks und Gerichte, welche an der Bar oder im Lobbybereich des Hotels t\u00e4glich bis 22 Uhr bestellt und verzehrt werden k\u00f6nnen. Da mein Aufenthalt leider keine Zeit f\u00fcr einen solches Gericht erm\u00f6glichte, habe ich mir das f\u00fcr meinen n\u00e4chsten Aufenthalt am 17. Januar vorgenommen. Einen Blick auf die angebotenen K\u00f6stlichkeiten habe ich nat\u00fcrlich dennoch geworfen. Vom goldgelb panierten Wiener Schnitzel, \u00fcber den saftigen Burger, bis hin zum knackigen und sehr beliebten Tiroler Hotdog geht es deftig und nat\u00fcrlich auch wieder &#8222;heimisch&#8220; in Sachen Zutaten zu. Dabei verlie\u00df ich mich ganz auf die Expertise von Barmann Marius. Neben Whisky Sour und Old Fashioned \u2013 ganz klassisch \u2013 f\u00fcr die Herren, gab es f\u00fcr mich einen &#8222;Bora Bora&#8220;-Cocktail mit wei\u00dfen Rum, Mango- und Orangensaft, Kokossirup und Grenadine (f\u00fcr 11, 90 Euro). Hat mir sehr gut geschmeckt und war ein guter Einstieg in den Abend. F\u00fcr mich auch entscheidend, dass das Bar-Team in einem Luxus-Team in Sachen Cocktails \u00fcberzeugt \u2013 hier ganz klar der Fall.<\/p>\n<p>Auch toll: W\u00e4hrend wir an der Bar sa\u00dfen startete die Live-Musik im Lobby-Bereich. W\u00e4hrend den Wintermonaten gibt&#8217;s diese fast t\u00e4glich und ihr k\u00f6nnt euch euren Absacker, euren Start-Drink f\u00fcr den Abend oder auch einfach nur die entspannte Zeit in der Lobby mit melodischen Kl\u00e4ngen und live gesungenen Songs zus\u00e4tzlich vers\u00fc\u00dfen.<\/p>\n<h5 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Mein Fazit<\/b><\/h5>\n<p>Nicht schwer zu erkennen, dass ich begeistert war und bin, oder? Es gab einfach nichts auszusetzen und so freue ich mich umso mehr, dass ich am 17. Januar 2020 wieder kommen Teil des bevorstehenden Gastro-Events mit Sternekoch Oldrich Sahajdack\u00a0und K\u00fcchenmeister Marcel Dornheim sein darf. Ich habe mich in meinem Zimmer samt Badewanne und Doppelbett sehr wohlgef\u00fchlt, war ganztags umgeben von freundlichen und zuvorkommenden Menschen und f\u00fchlte rundum pudelwohl. Das Hotel Schloss Lebenberg strahlt Charme, aber keinen \u00fcberzogenen &#8222;Tiroler Chic&#8220; aus, den man \u2013 zugegeben \u2013 bei Kitzb\u00fchel eventuell ein wenig f\u00fcrchtet. So ist das Luxushotel nat\u00fcrlich schick und besonders, nicht aber abgehoben uns steif. Auch wenn das Schlosshotel zu einem gr\u00f6\u00dferen Zusammenschluss von mehreren Hotels geh\u00f6rt, f\u00fchlt man sich hier sehr individuell und einzigartig betreut. &#8222;Alles \u00fcber einen Kamm&#8220; und &#8222;Schema F&#8220; gibt es hier nicht.
