Nun durfte ich nach Aying \u2013 25 Minuten von M\u00fcnchen entfernt \u2013 kommen und einen Blick hinter die Kulissen werfen. F\u00fcr mich ging es in die Erlebnisproduktion der Fritz M\u00fchlenb\u00e4ckerei. Aber wie wird Bio-Brot eigentlich hergestellt? Wie l\u00e4uft das mit dem glutenfreien Sortiment und welche Abteilungen werden durchlaufen? Ja und warum \u00fcberhaupt Erlebnisb\u00e4ckerei? \u2013 Das und vieles mehr, habe ich bei meinem Besuch herausgefunden. Vom leeren Grundst\u00fcck\u00a0bis zur gut durchdachten Produktion wurde hier alles von der Pike auf von und f\u00fcr die Fritz M\u00fchlenb\u00e4ckerei entworfen und umgesetzt. Schon beim Parken roch ich den unverkennbaren Geruch, welchen B\u00e4ckereien verbreiten. K\u00f6stlich! Und dennoch war schon hier erkennbar, dass es sich um eine ganz besondere B\u00e4ckerei, eben eine deren gesamtes Sortiment bio ist, handelt, da es nicht typisch s\u00fc\u00dflich nach Brezen und Teig, sondern eher ein wenig &#8222;erdiger und nat\u00fcrlicher&#8220; roch. Also nichts wie rein. In dieser werden die Teige hergestellt, die Zutaten vermengt, das Backferment hinzugegeben und der Sauerteig angesetzt. Danach geht es in die\u00a0<strong>Portionierung<\/strong>. Dort stehen ein Abwieger und ein &#8222;Former&#8220;. Das sind Ger\u00e4te, welche die exakt ben\u00f6tigte Teigmenge portionieren. Der Former hingegen ist eher f\u00fcr Geb\u00e4ckteilchen oder auch Brezen\u00a0gedacht und formt beispielsweise vorab l\u00e4ngere Teigr\u00f6llchen, aus welchen dann h\u00e4ndisch Brezen geschwungen werden. Sind die Brote und Backwaren h\u00e4ndisch in Form gebracht, geht es in die\u00a0<strong>Gare bzw. den G\u00e4r<\/strong><strong>raum<\/strong>. Ein Brot der Fritz M\u00fchlenb\u00e4ckerei liegt hier in der Regel durchschnittlich f\u00fcr 40 Minuten, bis es dann in den\u00a0<strong>Ofen<\/strong> kommt. Es gibt verschiedene \u00d6fen in der Ayinger Produktion. Sowohl jene, in die ganze mit Broten best\u00fcckte Rollw\u00e4gen geschoben werden k\u00f6nnen, als auch Platten\u00f6fen, welche mit Br\u00f6tchen oder Broten belegt werden. Beispielsweise die Brote, welche im K\u00f6rbchen vorgaren und dann gest\u00fcrzt werden, werden in den Platten\u00f6fen gebacken. Nach dem Backen geht es dann zur\u00a0<strong>Ausk\u00fchlungsstation<\/strong>. Hier werden die Brote gest\u00fcrzt\u00a0und aus der Form genommen. Sie bekommen gen\u00fcgend Zeit um langsam abzuk\u00fchlen, das sorgt f\u00fcr einen besseren Geschmack von Krume und Kruste. Es gibt auch Brote bei der Fritz M\u00fchlenb\u00e4ckerei, welche sogar zweimal gebacken werden und eine Art &#8222;doppelte Kruste&#8220; (im Sortiment unser &#8222;Fritz\u00b487 &#8222;) haben.<\/p>\n<p>Nach dem Abk\u00fchlen dann, werden die Brote und Backwaren in\u00a0<strong>Boxen verpackt<\/strong> und f\u00fcr unsere inzwischen rund 50\u00a0Partner zum Transport vorbereitet.\u00a0Die B\u00e4ckerei\u00a0liefert einmal t\u00e4glich aus und versorgt so jeden Laden und jeden Biomarkt\u00a0Tag f\u00fcr Tag\u00a0mit frischem Brot. Auch das sich nat\u00fcrlich nonstop im Wandel befindliche\u00a0<strong>Rohstofflager\u00a0<\/strong>konnte ich mir anschauen. Hier lagern Rohstoffe wie Schokolade, Haferflocken, Birnen, Pflaumen und vieles mehr. Hier stehen \u2013 getreu dem Namen der Fritz M\u00fchlenb\u00e4ckerei \u2013 Osttiroler Steinm\u00fchlen, welche das Getreide schroten. Das ist zugleich auch das klare Alleinstellungsmerkmal der Bio-B\u00e4ckerei. So bestimmt diese selbst die St\u00e4rke des jeweiligen Granulats und somit die finale Rezeptur des beigesetzten Mehls bzw. der jeweiligen Brot-Rezeptur. Damit l\u00e4sst sich auch deutlich an der Qualit\u00e4t der einzelnen, geschrotenen Getreidearten arbeiten und es landen nat\u00fcrlich \u2013 anders als bei anderen B\u00e4ckern \u2013 nur beste Bio-Qualit\u00e4ten in der Getreidem\u00fchle, welche die einzelnen\u00a0K\u00f6rner quetschen.<\/p>\n<p>Eine\u00a0besondere Behandlung bekommen nat\u00fcrlich auch die beliebten <strong>glutenfreien Brote und Semmeln<\/strong>. Diese werden gleich am Morgen, wenn die Backstube und die \u00d6fen noch komplett frei\u00a0glutenhaltigen Rohstoffen und Mehl ist, gebacken. Verpackt und in die jeweiligen Kisten gesteckt, werden sie unter Schutzatmosph\u00e4re direkt in der Produktion. Die Bestellung der L\u00e4den geht immer zwei Tage im voraus ein, sodass nahezu st\u00fcckgenau produziert werden kann.<\/p>\n<h3 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Der Backstubenverkauf in der Ayinger Produktion<\/b><\/h3>\n<p>Das besondere an der Produktion in Aying ist, dass sie als <strong>Erlebnisb\u00e4ckerei<\/strong> konzipiert und errichtet wurde. So l\u00e4uft oberhalb der Produktionsfl\u00e4che eine Galerie entlang, auf welcher die Kunden der innerhalb der Produktion integrierten Backstube willkommen sind, um\u00a0den B\u00e4ckern beim Backen\u00a0zuzusehen. Das bedeutet, dass die Empore f\u00fcr\u00a0euch ge\u00f6ffnet ist und\u00a0ihr zu den Verkaufszeiten am Dienstag und Donnerstag dort oben einen Blick auf die Produktionsfl\u00e4che werfen k\u00f6nnen. Richtig klasse. Ach ja, hier und da wird auch mal eine Breze direkt aus dem Ofen an die Kunden auf der Galerie verteilt \u2013 so als kleiner &#8222;B\u00e4ckers-Gru\u00df&#8220;. Cool, oder? So habe ich erfahren, dass parallel ca. 20 Mitarbeiter in der Konditorei und B\u00e4ckerei arbeiten. Die erste Schicht startet um 0:00 Uhr bis ca. 9:00 Uhr, dann folgt die zweite Schicht um 9:30 Uhr bis 21 Uhr. Danach wird die Produktion gereinigt und um 0:00 Uhr geht es dann wieder los. Wenn\u00a0die Nachteulen unter uns\u00a0also gerade ins Bett gehen, wird bei Fritz schon gebacken. So bekommen alle Bio-Produkte der B\u00e4ckerei viel Zeit und Ruhe w\u00e4hrend den einzelnen Arbeitsschritten. Ganz gleich ob die Teige vorab entsprechend ruhen k\u00f6nnen, ob im G\u00e4rraum oder beim Abk\u00fchlen. Durch die Komponente Zeit bestimmt die Fritz M\u00fchlenb\u00e4ckerei ganz bewusst Geschmacks- und Geruchsnuancen der jeweiligen Brote und Backwaren und zeigt so, dass sich ein Produkt bis zum Optimum verbessern l\u00e4sst. Hierbei spielen nat\u00fcrlich auch die regionalen Zutaten (Karotten, Kartoffeln, Mehle, etc.) sowie das bewusste Weglassen von Geschmacksverst\u00e4rkern eine entscheidende Rolle.
