Wenn ich durch die &#8222;Heiligen Hallen&#8220; eines namhaften Unternehmens laufen und sehen darf, wie das, was wir bei unserem Einkauf aus dem\u00a0 Supermarktregal nehmen, produziert wird, schl\u00e4gt mir jedes Mal mein Herz ein bisschen h\u00f6her. Bei Bernbacher war\u00a0mein Besuch zugegebener Weise sogar mit noch\u00a0mehr Vorfreude verbunden, weil ich die bayerische Traditionsmarke sowie deren Nudeln einfach liebe.\u00a0So wollte ich schon lange wissen, wie Bernbacher seine Nudeln herstellt.<\/p>\n<p>Vorweg gegriffen: Ich verlie\u00df die Produktion mit einigem an neuem (Fach)wissen und noch gr\u00f6\u00dferer Begeisterung als zuvor. Wir nehmen die Nudeln nat\u00fcrlich f\u00fcr gew\u00f6hnlich einfach nur aus dem Regal und packen\u00a0sie in unseren Einkaufskorb, jedoch ist ein Einblick um das Wissen drumherum wahrlich Gold wert, denn bei Bernbacher ist nichts dem Zufall \u00fcberlassen &#8211; vom Verpackungsdesign, \u00fcber die Nudelform und F\u00fcllmenge, bis hin zur perfekten Trocknungszeit f\u00fcr jede einzelne Nudelsorte. Vereinfacht l\u00e4uft das ganze so: Bernbacher hat diverse Produktionsstra\u00dfen, welche innerhalb der noch gr\u00f6\u00dferen Produktionshallen stehen. Jede Stra\u00dfe stellt unterschiedliche Sorten (genannt &#8222;Langware&#8220; oder &#8222;Kurzware&#8220;) in Form von Bernbacher Nudeln her, sprich jede Reihe verf\u00fcgt \u00fcber unterschiedliche technische Maschinen und Ger\u00e4tschaften. Der erste Step auf einer jeden Produktionsstra\u00dfe ist das Vermengen des jeweiligen Nudelteiges. Je nachdem ob beispielsweise &#8222;Die Guten&#8220; mit Ei, oder die &#8222;Bella Pasta&#8220; ohne Ei hergestellt wird, kommt schon bei diesem Schritt alles an Rohstoffen zusammen, was final in der fertigen Nudel drin sein wird. Durch diese wird der Teig jeweils durch die unterschiedlich geformten L\u00f6cher der Matrize gepresst.\u00a0F\u00fcr die perfekte Nudelform\u00a0m\u00fcssen verschiedensten Komponenten, wie Teigbeschaffenheit, Teigtemperatur, Druckst\u00e4rke, Form der gew\u00fcnschten Nudel, und vieles mehr bedacht und beachtet werden. Mit ordentlich Power wird der rohe Bernbachernudelteig sortenweise durch die jeweilige Matrize gepresst und die\u00a0entsprechende Form und rohe Nudel entsteht.<\/p>\n<p>Im Anschluss geht es f\u00fcr jede Nudelsorte zum Trocknen. Ein f\u00fcr uns simpel klingender Schritt, jedoch neben der Qualit\u00e4t der Rohstoff einer der entscheidensten Schritte f\u00fcr eine hochwertige Nudel. Ja richtig: Die Qualit\u00e4t, den Geschmack, das Genusserlebnis und nat\u00fcrlich auch den Einkaufspreis einer Nudel bestimmen viele Komponenten, am meisten jedoch die Auswahl der Rohstoffe sowie die Dauer der Teigtrocknung. H\u00e4ttet ihr das gewusst? \u2013 Umso l\u00e4nger der Teig bzw. die geformte Nudel trocknen kann, umso\u00a0hochwertiger wird die Nudel. &#8222;Einfachere&#8220; Nudeln trocknen nur einige Stunden, die Bernbacher Nudeln \u2013 das ist je nach Sorte unterschiedlich \u2013 bis zu 13 Stunden. Dass ihr eine gute Nudel gekauft und gekocht habt, merkt ihr auch direkt beim Kochen. Grob l\u00e4sst sich sagen: Genauso, wie es unterschiedliche Kochzeiten gibt, gibt es auch entsprechende Trocknungszeiten.
