Wer meine Beitr\u00e4ge regelm\u00e4\u00dfig liest, der wei\u00df, dass das stets\u00a0ein gutes Zeichen ist. Einmal, weil sofortige einsetzende &#8222;Kopfarbeit&#8220; bei mir immer bedeutet, dass ich mich in einem Restaurant sehr wohlgef\u00fchlt habe und zum anderen, weil\u00a0es f\u00fcr euch\u00a0dann\u00a0stets eine gastronomische Empfehlung gibt. In diesem Fall geht es um das Ludwig 8 im Ludwigpalais, n\u00e4he Odeonsplatz. Das ein wenig versteckt gelegene Gourmet-Restaurant Ludwig 8 gibt es bereits seit September 2018, abzuziehen gilt es nat\u00fcrlich die pandemiebedingte Zwangspause. Nun konnten meinen Begleitung und ich einen Abend vor Ort verbringen, herzlichen Service, gute Weine und exzellente K\u00fcche genie\u00dfen. Ich m\u00f6chte\u00a0mein Erlebnis nun mit euch teilen, da sicherlich noch viel zu wenige von euch\u00a0im einfach fantastischen Ludwig 8 beim Essen waren. Das von dem bekannten Gastronom Florian Spitta gef\u00fchrte Ludwig 8 \u00f6ffnet t\u00e4glich um 12 Uhr seine T\u00fcren f\u00fcr euch und bietet mittags eine kleine handgeschriebene Karte an. Der ehemalige Sternekoch Jakob St\u00fcttgen (einst Sternekoch im ehemaligen Sternerestaurant &#8222;Terrine&#8220;) selbst beschreibt seinen Mittagstisch\u00a0auch gerne\u00a0als &#8222;Kantinenk\u00fcche&#8220;. Dabei w\u00e4hlt ihr euch als Gast ganz unkompliziert etwas Feines von der kleinen &#8222;L8 Kantine&#8220;-Tafel aus und genie\u00dft es in ungezwungener Atmosph\u00e4re. Gekocht wird leicht, regional, saisonal und bunt. So zum Beispiel &#8222;Lemon-Chicken, ger\u00f6steter Blumenkohl und Riesengarnele&#8220;, &#8222;Karotten-Fenchel-Salat mit Mozzarella und Feige&#8220;, &#8222;Safran-Cous Cous mit Aubergine und Chicore\u00e9&#8220; Konkret hei\u00dft das, dass ihr nach dem Platznehmen keine Speisekarte gereicht bekommt, sondern viel mehr eine handgeschriebene Tafel mit circa f\u00fcnf verschiedenen Gerichten parat steht &#8211; erst einmal nichts allzu Ungew\u00f6hnliches. Jedoch sucht ihr euch davon nicht unbedingt ein Gericht aus, sondern wartet viel mehr auf den freundlichen Service an eurem Tisch, gerne auch mal Jakob St\u00fcttgen pers\u00f6nlich, welcher euch\u00a0das Konzept erkl\u00e4rt und nennt, welcher Gang als N\u00e4chstes im gesamten Restaurant serviert wird. Ja richtig, am Abend isst das gesamte Restaurant den gleichen Gang und es wird wie bei einem Karussell immer fortlaufend serviert. Dabei hat jedes Gericht eine bestimmte Farbe \u2013 sowohl namentlich auf der Karte, als auch auf dem Teller, entsprechend der prim\u00e4r verwendeten Komponenten. Wer im Ludwig 8 isst, muss sich also um nichts k\u00fcmmern, sondern kann entspannt Platznehmen und einfach in das laufende Men\u00fc und den Abend einsteigen. Klasse, oder? Es spielt keine Rolle an welchem Punkt und bei welchem Gericht ihr startet, denn\u00a0das Men\u00fc geht immer wieder von vorne los.<\/p>\n<p>Keine Sorge, ihr seid nicht gezwungen eine bestimmte Anzahl an Tellern und Gerichten zu probieren, oder gar das gesamte Men\u00fc des Abends zu verzehren. Euch steht optional die Auswahl des jeweiligen Tellers frei und ihr entscheidet selbst, ob es das ganze Men\u00fc im Durchlauf f\u00fcr euch sein soll, oder ob nach ein, zwei, drei Tellern Schluss ist \u2013 ganz spontan, so wie ihr eben Appetit und Lust habt. Es gibt wie erw\u00e4hnt keinen Anfang und kein Ende auf der Karte. Alle Teller passen zum vorherigen und zum n\u00e4chsten Gericht. Jakob St\u00fcttgen legt gro\u00dfen Wert darauf, dass alle Gerichte stimmig in sich und in Kombination als Men\u00fc sind. Ihr werdet also sowohl bei nur einem Teller, als auch bei der kompletten Karte von oben bis unten ein absolut einzigartiges Geschmackserlebnis haben.<\/p>\n<p>Unser Abend hielt die folgenden G\u00e4nge bzw. Teller f\u00fcr meine Begleitung und mich parat: &#8222;wei\u00df&#8220; \u2013 Selleriecreme, Lauch, wei\u00dfer Tr\u00fcffelschaum, Waller mit Nu\u00dfkruste; &#8222;gr\u00fcn&#8220; \u2013 Fenchel-Minz-Wan-Tan, Wakame Alge, geschmorter Kopfsalat, Wasabi Erbsenschaum; &#8222;gelb&#8220; \u2013 K\u00fcrbis-Risotto, karamellisierter Chicore\u00e9, Estragon, Duroc-Schwein; &#8222;rot&#8220; \u2013 Purple-Curry-Cous Cous, Ingwer Pflaume, Pilze, Rotkraut, Maronicreme, Enten-Schinken und &#8222;lila&#8220; \u2013 Rote Bete-Apfel-Salat, Blutorangenreduktioin, gratinierter Ziegenk\u00e4se.<\/p>\n<p>Jeder der G\u00e4nge ist so konzipiert, dass er sowohl vegetarisch, als auch mit Fleisch oder Fisch ausgew\u00e4hlt und zubereitet werden kann. Die von Jakob St\u00fcttgen auch nochmals pers\u00f6nlich erkl\u00e4rte Raffinesse liegt dabei mitunter darin, dass\u00a0keinem Gericht das &#8222;gewisse etwas&#8220; fehlt, sobald es fleisch-\/fischlos von euch bestellt wird. Viel mehr sind die Speisen in ihrer Basis immer vegetarisch gedacht und mit Fleisch und\/oder Fisch erweiterbar. Die Grundlage sind immer frisches und saisonales Gem\u00fcse, Obst und Rohstoffe, m\u00f6glichst aus der Region. Hier, im Ludwig 8 genie\u00dft ihr definitiv das &#8222;Rundum-sorglos-Paket&#8220; und f\u00fchlt euch direkt wie zu Hause oder bei guten Freunden. \ud83d\ude42<\/p>\n<p>Direkt nach dem Platznehmen gab es wahlweise Wasser und Wein und wir bekamen\u00a0nochmals alles erkl\u00e4rt, auch Jakob St\u00fcttgen gr\u00fc\u00dft pers\u00f6nlich am Tisch. Da es bei unserem Besuch etwas frisch war, nahmen wir nicht auf der gem\u00fctlichen Sonnenterrasse im Innenhof des Ludwigpalais Platz, sondern w\u00e4hlten einen der mit frischen Blumen dekorierten Tische. Wir kamen bei dem &#8222;wei\u00dfen&#8220; Teller dazu und landeten damit geschmacklich einen Volltreffer. Bis zum Schluss blieb die Kombination aus Selleriecreme, Lauch, wei\u00dfem Tr\u00fcffelschaum, Waller und Nusskruste bei meiner Begleitung der Favorit des Abends. Mir ging es \u00e4hnlich, allerdings schmeckte mir pers\u00f6nlich der oben beschriebene &#8222;rote Gang&#8220; mit der Ingwer Pflaume und dem Enten-Schinken noch besser. Jeder, der gerne gut und auch abwechslungsreich essen geht, erkennt sofort, dass hier absolute Extraklasse serviert wird. Preislich lag bei unserem Men\u00fc jedes Gericht bei absolut fair kalkulierten neun Euro. Die Portionen sind nicht bewusst nicht allzu gro\u00df, bei mittlerem Appetit gen\u00fcgen in der Regel zwei bis drei Teller, je nachdem, ob ihr auch Fleisch und Fisch dazu bestellt \u2013 das werdet ihr nat\u00fcrlich zu Beginn gefragt. Ab dem roten Teller gab es dann Rotwein und wir genossen einen 12 Monate in Holzf\u00e4ssern ausgebauten R\u00e9serve del Conte 2017 \u2013 eine Cuv\u00e9e aus\u00a0Merlot (40%), Lagrein (35%) und Cabernet (25%) von Lagen rund um das Weingut Manincor.\u00a0Die f\u00fcllige Textur mit saftigem Tannin und die wenige S\u00e4ure mit viel Extrakt lie\u00dfen auch diesen Wein ideal zu den Tellern &#8222;rot&#8220; und &#8222;lila&#8220; passen. G\u00f6nnt euch also auf jeden Fall auch das ein oder andere Gl\u00e4schen Wein zum Essen, beziehungsweise empfiehlt sich der Riesling von der Mosel auch einfach mal als ein spontanes Feierabend-Gl\u00e4schen vor Ort.<\/p>\n<h4 style=\"font-size: 15px; margin-bottom: -0px;\"><b>Was sonst noch wichtig ist<\/b><\/h4>\n<p>Das Ludwig 8 ist nicht nur f\u00fcr einen entspannten Lunch oder auch ein gem\u00fctliches sowie zugleich hochwertiges Gourmet-Dinner geeignet, nein, hier k\u00f6nnt ihr euch auch f\u00fcr gesch\u00e4ftliche und private Veranstaltungen, Events und Anl\u00e4sse aller Art einbuchen.
