Diese ist bewusst \u00fcbersichtlich gehalten und mit jeweils drei bis f\u00fcnf Optionen in den Kategorien &#8222;Barsnacks&#8220;, &#8222;Vorspeise\/Zwischengang&#8220;, &#8222;Hauptgang&#8220; sowie &#8222;K\u00e4se\/Dessert&#8220; versehen. Dabei entscheidet ihr selbst, ob ihr \u00e0 la carte einzelne G\u00e4nge genie\u00dft, euch euer Men\u00fc aus diesen selbst zusammenstellt, oder euch mit einem tollen vom manu.-K\u00fcchenteam vorbereiteten \u00dcberraschungsmen\u00fc verw\u00f6hnen lasst. Ganz gleich wie ihr euch entscheidet, freut euch auf frische K\u00fcche und eine optional grandiose Weinbegleitung zu eurer getroffenen Auswahl.<\/p>\n<p>Gekocht wird im \u00dcbrigen von dem erst 28 Jahre jungen K\u00fcchenchef Stefan Retzer, welcher sich bereits in der Sternek\u00fcche einen Namen erkocht hat.\u00a0Der Eigengeschmack, der jeweils verwendeten und auch auf der Karte genannten Hauptzutaten steht dabei bei jedem Gericht im Fokus. Das manu. hat mir dies bei unserem Besuch einmal mehr best\u00e4tigt. Angefangen von der freundlichen Begr\u00fc\u00dfung, schon direkt auf der Terrasse, \u00fcber den herzlichen und kompetenten Service am Tisch, bis hin zu den vorz\u00fcglich mit tollen Weinen kombinierten Speisen &#8211; einfach rundum klasse. Wir nahmen aufgrund der vollbesetzten Terrasse und hohen Temperaturen an einem Fenstertisch im Inneren der gem\u00fctlichen Weinbar Platz und lie\u00dfen uns kulinarisch durch den Abend leiten. F\u00fcnf G\u00e4nge wurden es, wobei wir \u00fcberwiegend gangweise mit unterschiedlichen Speisen von der Karte \u00fcberrascht wurden.<\/p>\n<p>Los ging es mit\u00a0frischem Brot samt hausgemachter Topfenbutter, ein k\u00f6stlicher Start, welcher, kombiniert mit Oliven, auch auf der Karte beim Barfood zu finden ist. Bevor es mit dem ersten Gang losging, genossen wir ein Gl\u00e4schen Winzersekt aus der Pfalz: Blanc et Noir, Brut Nature vom Weingut Scheuermann, mit angenehmer Perlage, ideal f\u00fcr hei\u00dfe Tage.<\/p>\n<p>Im Anschluss startete unser Men\u00fc. Gang eins \u00fcberraschte uns mit einer irischen Auster, serviert samt Essiggurke und R\u00f6stzwiebel, wodurch die Auster neben ihrem typischen Geschmack\u00a0zus\u00e4tzlich durch Raffinesse und ein ganz eigenes Geschmacksprofil \u00fcberzeugte. Dazu gereicht wurde eine ebenso geschmacksintensive Gazpacho mit feiner Garnele als Einlage \u2013 in Kombination mit dem Deutschen Sekt ein vielversprechender Einstieg. Im Glas ging&#8217;s weiter mit dem bekannten und von mir sehr gern getrunkenen saftigen Riesling vom Weingut Dreissigacker. Nicht umsonst wird der mit gut eingebundener S\u00e4urestruktur versehene Riesing auch als Aush\u00e4ngeschild des Weinguts gesehen, da er die Spitzenqualit\u00e4t der Dreissigacker Weine gut widerspiegelt und die Frucht in den Vordergrund stellt. Kombiniert mit den Vorspeisen \u2013 Tatar samt Pflaume, Hirse und Pfifferling sowie Tuna mit Kimizu (japanische So\u00dfe) und Gurkenkimchi \u2013 ein Volltreffer. Im Glas dazu einen goldgelben 2022er-Orangewein vom Weingut Judith Beck: &#8222;Koreaa&#8220; \u2013 exotisch im Geschmack, leicht mineralisch, sch\u00f6n frisch und wunderbar harmonisch zu dem vegetarischen Gang.<\/p>\n<p>Danach gab&#8217;s Miso-Karamell als erfrischenden und neutralisierenden Zwischengang. Ich pers\u00f6nlich liebe die Kombination aus salzig und s\u00fc\u00df sowie das Resetten der Geschmacksnerven zwischen zwei G\u00e4ngen.<\/p>\n<p>F\u00fcr den fleischigen Hauptgang wurde es dann rot im Glas und wir bekamen eine 2019er\u00a0 &#8222;Cuvee Or&#8220; vom Chateau Ollieux Romanis.\u00a0 Ein formidabler Rotwein mit Vielschichtigkeit, sch\u00f6n w\u00fcrzig und erstaunlich komplex sowie absolut stimmig zu unserem servierten Rind mit S\u00fc\u00dfkartoffel, Blaubeere und Brokkoli. Zu den zwei unterschiedlichen Desserts gab&#8217;s dann abschlie\u00dfend zwei, wie wir uns beiderseits einig waren, besonders tolle Dessertweine: &#8222;Wahre Werte&#8220; vom Weingut Weixelbaum (Sauvignon Blanc Auslese) und einen &#8222;Quinta do Infantado, Porto Ruby Reserva&#8220; \u2013 ein\u00a0Spitzen-Bio-Porto aus exklusiver Kleinproduktion, sehr rund und einladend. Dazu serviert wurden uns beide Desserts von der Karte: &#8222;Himbeere, Dill, Joghurt und Granola&#8220; sowie &#8222;Kirsche, Financier und s\u00fc\u00dfes Pesto&#8220;, was wir ebenfalls beide teilten und tauschen &#8211; lecker!
