F\u00fcr 59 Euro pro Person genie\u00dft ihr ein kreatives Vier-G\u00e4nge-Men\u00fc, welches euch sowohl mit Fleisch, als auch Fisch oder optional auch komplett vegetarisch verw\u00f6hnt. <strong>(Jetzt nur Weiterlesen, wenn ihr euch bei eurem Restaurantbesuch nicht \u00fcberraschen lassen und das Men\u00fc bereits vorab kennen wollt.)\u00a0<\/strong><\/p>\n<p>Euren Genussabend startet ihr mit einer w\u00e4hlbaren Vorspeise, wobei\u00a0<strong>Forellentatar mit Roter Bete, Fenchel, Forellenkaviar und Kren\u00a0<\/strong>oder\u00a0<strong>Marktsalat mit Krendl, Cro\u00fbtons, Gartenkresse und sautierten Waldpilzen\u00a0<\/strong>zur Auswahl stehen. Wir entschieden uns f\u00fcr beide Varianten und fanden den knackigen Salat mit den reichlich darum drapierten Waldpilzen besonders fein. Beim Tatar gefiel uns sehr gut, wie fein die Forelle verarbeitet war; ich geno\u00df auch die Kombination von Fisch und Bete sehr.<\/p>\n<p>Folgend landet eine \u00e4u\u00dferst schmackhafte\u00a0<strong>Wiesenheusuppe mit Pumpernickel, lila Kartoffel-Chips und Schnittlauch-\u00d6l<\/strong> auf eurem Tisch. In meinen Augen ein gutes Aush\u00e4ngeschild f\u00fcr das Restaurant TALSTATION, da die au\u00dfergew\u00f6hnliche Suppe gut zeigt, wie raffiniert das K\u00fcchenteam die stets hochwertigen und m\u00f6glichst komplett regionalen Zutaten verarbeitet. Die Suppe schmeckt leicht s\u00fc\u00dflich und bekommt einen raffinierten Touch durch das verwendete \u00d6l sowie die lila Chips. Ersteres ist ein butterweicher\u00a0<strong>R\u00fccken vom Hirsch und Ragout vom Reh mit Pancetta-Birne, Selleriep\u00fcree und Pfefferschaum. <\/strong>Das Gericht geno\u00df prim\u00e4r meine Begleitung, wobei besonders die Zartheit des Fleisches auffiel.\u00a0Die fleischlose Variante \u00fcberrascht mit einem cremigen\u00a0<strong>Maronen-Rotwein Risotto mit Amarone, Granny Smith und Radicchio<\/strong>.
