BAKERY WISHES – Bavarian baking craftsmanship – „"Too many choices can be a burden!" is a common saying in life – whether it's about far-reaching decisions that can affect your entire life, or even just the little things in everyday life that sweeten your day. Starting with a good breakfast in the morning, the day begins so much better, right? At least that's how it is for me, and fate was kind to me, placing my new home just a mere 150 meters from a Wünsche bakery. Since then, I've been there quite often to pick up something delicious and have grown to really enjoy Wünsche's baked goods. And as is often the case, at some point it wasn't enough for me to simply go in, buy bread, rolls, or pastries, and enjoy them – no, I wanted to know more about the "behind-the-scenes" story and the philosophy and strategy behind the Wünsche bakery. So, I decided to do some research.
Wünsche Bakery – from then until now
The name "Backstube Wünsche" is probably familiar to most of you, and there are likely few Munich residents, or even people in southern Bavaria, who haven't visited one of their more than 270 bakeries spread throughout southern Bavaria. I've visited about 20 of them myself and appreciate both the unique charm of each location and the consistently high quality of their baked goods.
Let's take a look... Founded in 1968 as a one-man operation, the bakery has its roots in Eitensheim near Ingolstadt. In 1972, the first bakery opened in Ingolstadt under the leadership of founder Karl Wünsche. Seventeen years later, by 1989, much had been accomplished, and a 1,500 m² bakery was built in Gaimersheim, also near Ingolstadt. For over 20 years now, and to this day, the Wünsche bakery's headquarters, encompassing an additional 7,000 square meters, have been located in Gaimersheim, just outside Ingolstadt. Many milestones have been achieved, awards won, and accolades bestowed upon the bakery. Since 2007, for example, the Wünsche bakery – as the first bakery in Bavaria at the time – has proudly held the "Certified Quality Bavaria" seal, which stands for quality assurance and traceability of regional food products. However, it is not only the high quality of the raw materials and their processing that is of great importance to the Bavarian baker; no, above all the preservation of tradition and the conscious implementation and daily application of the baker's craft play a major role.
All products – and the Wünsche bakery boasts over 300 different items in its range – are made according to traditional recipes, using only the finest and best ingredients, sourced from the Bavarian region whenever possible. Combined with decades of accumulated expertise and a deep appreciation for the craft, the Wünsche bakery, with its nearly 2,000 employees, has become one of the top 20 bakeries in Bavaria. This success naturally includes rigorous quality controls and continuous product improvements. In 2017, the company, founded in Eitensheim near Ingolstadt, received, among other accolades, the "State Honorary Prize of the Free State of Bavaria" for the baking trade, and in 2018, the "Federal Honorary Prize," the highest award for outstanding product quality. A commitment that pays off. Perhaps you heard about it in the bakeries: Last year, the Wünsche bakery celebrated its 50th anniversary, honored long-serving employees, and has been relying on craftsmanship and tradition for 50 years and continues to do so today – and you can taste it.
Get to know the bakery's wishes yourself
Anyone who makes such a name for themselves when it comes to bread and baked goods must really know their stuff – at least that's my thinking. As I've mentioned before, I've been a customer at various Wünsche bakeries quite often, so I've had the chance to see for myself. My personal favorites are the sweet pastries, the crispy pretzels (for example, with white sausage or simply straight from the bag), and the so-called "Laugerl" (a type of sweet roll) in various varieties. So delicious! I also rarely stop to decide what to put in my bakery bag when it comes to the soft nut rolls, the different cakes and tarts, and the filled pastries. I also really enjoy sitting down in one of the cozy bakeries, lingering there, drinking a hot chocolate or a coffee (some of it roasted on-site!), biting into my pretzel, and giving myself a little break from the day. Isn't that nice?
Well, as I was sitting there recently, sipping my cocoa, the idea came to me that it would certainly be quite interesting to visit the production area of the Wünsche bakery and learn about the background in the form of a behind-the-scenes look at pretzel and bread production, the procedures and processes of such a large bakery.
No sooner said than done… Over the next few weeks, I'll be introducing you to the Wünsche bakery in four more articles, showing you how they operate, what products they offer, how their processes and logistics work, and everything that needs to be considered to ensure that you (and we) can get fresh bread, rolls, pretzels, cakes, and seasonal items of the same high quality every day from 6 a.m. I'm really looking forward to it.
