Pasta Factory in Gmund: „PASTIFICIO PALESE“ on Lake Tegernsee || You know: No distance is too far for me when it comes to good food, great products, and new delicacies that I want you to discover and experience. So, I recently traveled to Gmund on the beautiful Lake Tegernsee to visit the „Pastificio Palese“ pasta factory, which opened in October 2021. The factory is located right in Gmund, and you can reach it from Munich in just 40 minutes. Anna-Christina and Fabian Palese offer pasta made entirely by hand from the finest regional ingredients. The fresh pasta is available both filled and as plain dried pasta. The factory also includes a small shop offering pre-packaged pasta to take away, excellent wines, high-quality olive oil, children's pasta in various varieties, and custom-made gift baskets.
Get to know Pastificio Palese
The pasta factory is a must-visit for anyone who appreciates good, high-quality food and places great value on top-notch quality. Anyone who also loves truly delicious and authentically flavorful pasta will discover a new favorite spot at the Tegernsee factory.
Upon entering, you will be warmly greeted by Fabian, Anna-Christina, and Patrick, the "minds behind the idea." Fabian, originally from Italy, and his colleague Patrick work in the small, glass-walled show kitchen, producing fresh pasta daily, new pasta varieties and fillings, and keeping the counter stocked, while Anna-Christina takes care of you as visitors and the pasta-making process itself.
After the friendly greeting, your eye is immediately drawn to the small counter stocked with fresh pasta. You'll usually find four to five varieties of filled pasta and various dried pasta options. You decide how many varieties and how much you want to pack up and take away. The fillings change regularly, and since everything is made fresh daily, each variety is only available until the fresh ingredients run out and that particular type is sold out. The fillings vary depending on ingredient availability and the season. All ingredients for the pasta and fillings are of the highest quality and, wherever possible, sourced from the Tegernsee region; the semolina used is premium Mininni semolina.
The fresh and handmade pasta
Top-quality raw materials, sourced locally, and the daily freshness of the diverse pasta varieties play a crucial role in the pasta manufactory. When asked, the Palese couple described their pasta manufactory as follows: "We love good pasta! The best regional ingredients are paramount in our small manufactory. We want to enrich the lives of the locals in Tegernsee with our pasta, as well as delight everyone who loves the finest handmade pasta and values quality. Personal interaction with our customers is also very important to us. We enjoy connecting with them and welcome every visitor to our manufactory and every lover of our homemade, high-quality pasta."„
To whet your appetite even more, I'll introduce you to some of the varieties I had the pleasure of trying during my visit. You can also do this if you're unsure about which varieties to choose or the flavors of individual components. They'll gladly prepare a fresh ravioli for you so you can taste it and decide how much you'd like to take home. Anna-Christina Palese also emphasizes: "It's worth visiting us regularly, as we frequently change our selection and are constantly developing new creations and fillings that then find their way onto our counter. We also make gluten-free pasta to order. Vegan and vegetarian options are also available."„

I even got to taste all four fresh and filled pasta varieties. There were ravioli filled with oxtail (organic), beetroot and goat cheese, baby spinach and ricotta, and mezzelune with prawns and basil, as well as with chestnuts and thyme – my clear favorite. Of course, how you prepare your chosen pasta at home and what you combine it with is entirely up to you. They're happy to give you tips on-site and you can ask any questions you may have about preparation, combinations, storage (up to three days in the refrigerator), and so on. My tip: definitely take several varieties home and try your way through the entire fresh selection available during your visit. I recommend starting with the pasta relatively "plain" to fully appreciate the excellent flavor of both the plain pasta and the fillings. By the way, they also have homemade sauces and pestos, as well as the finest homemade truffle butter in the counter – perfect for tossing the fresh dried pasta from the counter, for example.
Browse the pasta factory's shop
Before you head home with your beautifully packaged, fridge-ready parcel of pasta, be sure to browse the shelves for a while and learn about the fantastic products. The majority is "Pastificio Palese" dried pasta, produced in-house and packaged in attractive parcels, available in a wide variety of types and sizes. Grab a handful to take home; it will keep for several months. They also offer children's pasta in four different varieties. The wonderful olive oil ("Siridia"/various vintages) and the high-quality Italian wines also deserve special mention. Ideally, create your own custom package of pasta, fresh pasta, oil, and wine and experience the exceptional quality for yourself. Want to treat your loved ones to some of the pasta factory's fine products? – Great idea! They offer pre-made gift baskets, beautifully packaged, which you can purchase directly. Alternatively, you can assemble these yourself in the factory.
Pasta courses, olive oil tastings and events at the pasta factory
If you're wondering, after enjoying this pasta – I naturally took some home with me – whether you can recreate such (sorry!) amazing Italian pasta at home, let me put your mind at ease: You can book pasta-making classes at the Pastificio Palese pasta factory in Gmund am Tegernsee. Together with the "pasta pro" Fabian, you'll learn how different varieties are made, how to recreate them at home, and what's important. Of course, you can also make your own pasta and take it home with you. You can find more information about the pasta factory's course offerings on their website. At the factory, you also have the opportunity to taste their olive oil. Do it! It's worth it! The team bakes a light and airy focaccia on weekends, which you can use to sample the oil right there. Amazing, isn't it?
The only thing missing is mentioning that you can also book the small workshop for your private or business events. This applies both to bookings in conjunction with the aforementioned courses and to independent celebrations, events, and parties.
My personal conclusion
Short and sweet: I'm already looking forward to when my pasta is gone! 😉 Then I can come back and try new (filled) varieties and bring some back for my pasta-loving friends to sample. Definitely stop by, it's worth it. For the delicious, high-quality pasta, but also because the Palese family has their hearts in the right place. Thumbs up in every respect!
