BURKHOF Coffee – the coffee manufacturer Sauerlach – I recently had the pleasure of visiting Burkhof's coffee roastery in Sauerlach. Over seven million euros were invested in the facility in 2016 and 2017. A new Profil roaster is now part of the roastery. With this new roaster, Burkhof's Bavarian master roasters can now roast gently, sustainably, and to the highest quality standards – at all roast levels. I was fortunate enough to be present for the commissioning, to participate in the roastery tour, and of course, to sample the exquisite Burkhof coffee.

Coffee has long been as complex a topic as wine or, these days, beer. Just as diverse as the various origins are, so too is the variety of coffee itself. Every bean and every blend has its own profile and flavor characteristics. Sometimes mild, sometimes spicy, or even with a lively acidity – every variety is different. Burkhof ideally reflects the broad spectrum and diversity of coffee in its product range. The selection and balanced combination of different origins are what make a good coffee, as is evident in the various "Burkhof Gourmet Roasts" – ground or as whole beans, "Espresso Whole Bean," "Burkhof Decaf," or the "Burkhof Luxury" line. The coffee factory in Sauerlach
BURKHOF coffee – in case you're not familiar with it – is a brand of JJ Darboven. The coffee is produced in Sauerlach, Germany, meaning it's roasted, processed, quality-checked, and prepared for shipping at the logistics center. A brand-new addition to the roastery is a 14-meter-high profile roaster, which roasts and prepares coffee using the latest technology. The Burkhardt and Imhof coffee roastery was founded in 1928 by Wilhelm Burkhardt and Wilhelm Imhof on Sandstrasse in Munich, where the company remained for 60 years. Due to growing demand, the company expanded in 1992, moving to its current premises in Sauerlach and building an environmentally friendly roastery. In 2007, logistics (warehousing and nationwide shipping) and a warehouse were added. The roastery and production facilities not only roast and distribute the Burkhof brand, but also several other coffee brands and varieties from the JJDarboven Group. The site also includes a training center where, for example, professionals train other professionals, sharing and imparting their coffee and tea knowledge. In this way, the JJ Darboven Group, with its coffee roastery located in Sauerlach and equipped with a new Profil roaster, has succeeded not only in consistently producing top-quality coffee but also in creating and securing numerous jobs.

Building a new roasting plant is a complex undertaking. It's clear that a wide variety of stakeholders need to be involved to implement such a project. From Lukas Werner (board member at JJDarboven; responsible for technology and production); the company Neuhaus-Neotec (for technology and implementation); to the construction company Gross; and even the mayor of Sauerlach, Bogner, and the Munich district office (for permits), everyone was heavily involved for months. As a result, almost the entire site was rebuilt, optimized, and expanded for the Profil roaster, at a cost of the aforementioned sum.
The project began in 2016 with a new packaging line for whole bean coffee. The main innovation is undoubtedly the new roasting system, whose specifications were complex from the outset. The system must not only deliver the highest quality but also be able to process all varieties – from filter coffee and café crème to espresso – and handle the various flavor profiles and up to 20 different brands individually. 120 kilograms of coffee (batch size) is the minimum quantity that can be produced. In addition to sustainability, the new profile roaster also boasts state-of-the-art control technology, offering an unlimited number of roasting profiles where the corresponding parameters (temperature – from 210 to 230 degrees Celsius, time – up to 15 minutes, and quantity – from 120 kilograms) can be individually adjusted. At the same time, the new roaster enables so-called "profile roasting." This means that by rapidly changing the hot air temperature and flow rate, both very light and very dark roasts can be produced – depending on requirements.
Up to 20 individually adjustable temperatures ensure optimal body, aroma, and acidity for each coffee roasted in the roaster. The result: nuanced coffee, sustainably produced – with significantly lower energy consumption (thanks to the separation of the roasting and cooling chambers) compared to conventional tray or drum roasters. This is possible because the heating and cooling cycle of the steel chambers is eliminated. The integrated "green coffee preheating" system (warm roasting air from the roasting chamber is used via a heat exchanger to preheat the green coffee) further enhances energy efficiency. This state-of-the-art roasting system has been in operation since September 2017 and is producing over 30 different blends. Fantastic!
