CHAMPAGNE DE WATÈRE – I recently had the opportunity to get to know the Champagne from Champagne De Watère better. This Champagne is produced and bottled in the French Vallée de la Marne – the region within the Champagne area with the largest vineyard area – using traditional methods. At a wonderful event in Munich, I was able to taste this high-quality Champagne and meet the owner of Champagne De Watère.
Origin and history of Champagne De Watère
Champagne De Watère sparkling wines are highly exclusive and possess a unique and authentic taste. They are produced by the eponymous, relatively young company based in Munich, always using traditional craftsmanship and modern product design. What's the story behind it, and how did the champagne of today come about? – It all began in 2011 when Champagne De Watère was founded and owner Martin A. Konorza launched the success story of a very special champagne. President Martin A. Konorza deliberately created a product that stands in stark contrast to modern mass-produced champagne. Champagne De Watère is thus a tribute to the French ancestors of the company's founder, Martin A. Konorza, who were first documented in 1086, meaning the family's roots extend further back than the history of champagne itself.
If one were to describe or characterize Champagne De Watère, its traditional production methods, based on original craftsmanship, as well as its cultivation and production according to traditional techniques, would stand out. De Watère sparkling wines are produced using techniques that were already employed in Champagne production 200 years ago. Furthermore, Champagne De Watère strives to carry out as many steps as possible without mechanical assistance. For example, the grapes are harvested exclusively by hand, and the vineyards are plowed with the help of horses, which protects the delicate soil, reduces emissions, and also benefits the quality and purity of the grapes. Konorza himself explains it this way: "Environmentally friendly production is simply sensible when creating great Champagnes. Every artificial intervention is noticeable on the palate." Crucially, Champagne De Watère's guiding principle is always the highest quality, which means that the exclusive Champagne is given an above-average amount of time to mature, allowing it to develop its full range of flavors. The Brut Blanc matures for up to 45 months in ancient chalk caves, some of which date back to Roman times. The Rosé matures for up to 85 months, longer than most Champagnes.
What makes Champagne De Watère champagne so special
Champagne isn't something you drink every day, and when you do, it should – in my opinion – be savored sip by sip, not simply gulped down. It's not primarily about flaunting exclusivity or even luxury, but about enjoying something special and consciously experiencing the moment. I was really looking forward to the tasting, especially since the Champagne De Watère is a very young product – in the context of Champagne history.
De Watère Champagnes have a distinctive character and represent the true and original taste of Champagne. The cuvées from Champagne De Watère are a fine blend of grapes from two consecutive vintages. Only the highest quality grapes are used for harvesting, which explains why the cuvées are available only in very small quantities. Furthermore, the unique location of the vines in the French Vallée de la Marne ensures that the grapes for De Watère Champagne slowly reach optimal ripeness, resulting in the ideal freshness and finesse for the Champagne. The rosé is produced using the rare and highly complex saignée method, a process that requires considerable experience and time. A closer look at the rosé reveals a beautiful play of colors in the glass. This color is achieved without the addition of red wine. This is possible because the pigments are extracted from the grape skins during the maceration of must, skins, and seeds until the perfect hue is reached. Before the bottles go on sale, company founder Konorza insists on personally checking each bottle beforehand to permanently guarantee the quality promise of this very original, authentic and characterful champagne.
The sparkling wines in detail
First, let's take a look at the Cuvée Premier Cru Brut Blanc from Champagne De Watère. This champagne is composed of 80 percent Pinot Noir and 20 percent Chardonnay grapes. With its bright, transparent gold hue, it impresses with its freshness and ripeness on the palate. Notes of cinnamon and exotic fruits also emerge. Champagne De Watère's distinctive Premier Cru Brut Rosé de Saignée, bottled in a vibrant red hue, is completely tannin-free. It boasts a beautifully fruity flavor and is made exclusively from Pinot Noir grapes. On the palate, this champagne reveals elegant notes of raspberry and blackberry with delicate floral aromas. The aging period of up to 85 months, as mentioned, imparts its rich flavor and exceptionally fine bubbles. For those unfamiliar with the name of this fruity rosé: its distinctive character is a result of the elaborate saignée process, meaning its production without the addition of red wine. This cuvée is available online starting at €145 per bottle.
