EILLES COFFEE I recently had the opportunity to get to know EILLES KAFFEE better at a press event that included a coffee tasting. What makes a good coffee?
Coffee isn't just coffee. You realize this as soon as you've tasted different beans, varieties, and blends. It's not important to choose THE coffee variety or THE brand, but rather to discover what tastes best to you. There's also plenty of variety when it comes to preparation. Some drink espresso or cappuccino, others prefer cold brew, and still others love filter coffee. But what makes a truly great cup of coffee isn't just the preparation method, but also the raw material – the bean itself, its processing, and roasting. The use of the roasted coffee bean can then range from the simple push of a button on a fully automatic coffee machine to a traditional, handcrafted coffee ceremony.
Good coffee is influenced by many factors. Its origin is just as crucial to its taste as various other variables. For example, the altitude of the coffee plantation affects the ripening time and ultimately the flavor. A balanced aroma, meaning its digestibility, also plays a major role. Such an aroma is primarily achieved through the roasting process, which requires enormous skill and expertise. "Cheap coffees," or coffee that can be bought at low prices in the supermarket, are usually produced or roasted quickly at very high temperatures. This is reflected in the taste and digestibility. Due to the high degree of roasting, the coffee beans become very dark in a very short time and develop a higher level of bitter substances. The coffee quickly tastes acidic, upsets the stomach, and is unpalatable for many. Furthermore, a milder and slower roasting process allows the coffee time to break down the fruit and chlorogenic acids it contains – a process that is also absent in "poorly processed coffee" and can irritate the stomach lining. With this knowledge, a first sip of EILLES COFFEE clearly demonstrates its mildness and gentle processing, highlighting the distinct difference.

Max von Thun prepared a cappuccino for me to try. It was quite simple: press the button, wait briefly while the machine grinds the beans, and that's it. Never add sugar to the coffee; it distorts the flavor. For a great cappuccino, the Caffè Crema or Espresso beans are excellent. In fact, the EILLES KAFFEE Espresso is quite impressive. Friedrich von Thun's method is also interesting – he prefers to take his time, and the preparation itself is part of the perfect coffee experience. Using a filter, freshly ground beans, and boiling water is certainly more involved, but also somehow "closer" to the product itself. When enjoyed pure and without milk or sugar, the correct brewing method and a high-quality roast are even more crucial.

If you like a strong brew and want to take your time, you should either use a grinder or, even better, grind by hand and treat yourself to your perfect #CoffeeToStay moment. Ideally, grind about 22 grams of coffee with a hand grinder using a burr grinder at a fine to medium grind setting. This will best extract the coffee's aroma. Make sure to rinse and preheat both the porcelain and paper filter with hot water beforehand, as this will make the coffee less bitter. Pour 300 milliliters of 93-degree water (let it stand for three minutes after boiling) in a circular motion over the freshly ground coffee and wait 30 seconds.
