Our Bavarian farmers – use diverse, regional dairy products! | I recently participated in an exciting and informative dairy workshop in Munich and, together with other foodies and the association "Our Bavarian Farmers e. V.", I had the opportunity to cook with Bavarian dairy products, indulge in delicious meals, and exchange ideas. 

As a group, we learned why it's so important to support local farmers and use Bavarian ingredients in our own kitchens. We were able to ask any questions we had about the different dairy products and how they're made, and exchange ideas with representatives from agriculture, dairies, and cheese factories. It's an incredibly fascinating topic, and I want to share that enthusiasm with you. My goal is to raise awareness among you about the great diversity and quality of regional products – right on your doorstep.

The Association „Our Bavarian Farmers e. V.“ 

I confess, until I was able to participate in the workshop, I didn't know that there was an association that deals exclusively with supporting our Bavarian farmers day in and day out. That's why it's so important to me that I can now tell you more about it. So, what does the association "Unsere Bayerischen Bauern e.V." (Our Bavarian Farmers) do? – Founded in 2016, the association stands for exchange, discussion, information, and dialogue on all things agricultural. Hardly any topic is viewed with as much suspicion as agriculture and its related issues. People's uncertainty stems primarily from the complexity of the topic of "agriculture," and so, of course, all open questions can be directed to the association. publicly accessible platform of "Our Bavarian Farmers eV"„ It shows in a transparent, entertaining and informative way what Bavarian agriculture stands for and what it really is all about.

Exciting! A dairy workshop featuring Bavarian dairy products

On the website of the association „Our Bavarian Farmers Association.“Here you'll find information on almost all agricultural areas that might interest you regarding your handling of food, your diet, and your choices when it comes to Bavarian (dairy) products. The site features various Bavarian farmers, their products, as well as opportunities to buy directly from the farm, leisure activities in the countryside, and countless recipe ideas. The best thing to do is simply visit the website and see for yourself – that's the association's motto. „Home of Diversity“ Hits the nail on the head.

The milk workshop and the menu

The dairy workshop was fantastic, and I thoroughly enjoyed cooking, eating, and exchanging ideas. Firstly, because I'm a big fan of dairy products, and secondly, because I prefer to buy food from Bavaria. The foodies, farmers, and representatives from various trades were introduced, and we cooked together with the Zinners inn – awarded the title "Excellent Bavarian Cuisine" – and its kitchen team. There were five delicious courses – all designed to demonstrate, even while cooking, just how versatile Bavarian milk and dairy products can be.

You want to know what was on offer? – Of course!
Here is the menu (including the prepared recipes):

Aperitif: 43 with milk and liqueur43

Amuse: Fresh cheese (herb, truffle and goat's milk), as well as potato cheese with bread

Starter: Pink veal rump on pumpkin and apple ragout with yogurt and plum sugo

Soup: Cold Buttermilk soup with lime and baked ravioli/wonton made with corn-fed chicken and pear

Fish: Cod under a Mountain cheese crust on chorizo and saffron risotto
(My favorite!)

Meat: Black Angus fillet on Port wine cream jus, shaved truffle, parsnip and carrot vegetables and Potato curd fritters
(The law school was amazing!)

Dessert: Leche Frita Milk almond foam and Sour cream ice cream

Each course was prepared by the group. In between, there was plenty of time for lively conversation, and I met fascinating people and learned interesting facts about milk. For example, I discovered that milk, produced naturally without any additives, is an important source of protein, calcium, and minerals (zinc, magnesium, etc.), and also contains vitamins A and D, as well as various B vitamins. Milk isn't just a great source of energy; it's incredibly versatile. In Bavaria alone, over 400 different types of cheese are made from it. This is thanks in part to some 80 different dairies operating in Bavaria. In total, countless dairy products—besides cheese and milk—are produced and developed. Fascinating, isn't it?

I also learned on-site that there are approximately 1.1 million cows in Bavaria, which collectively produce all the milk needed for the aforementioned dairy products. Fun fact: Almost a third of all cows used for milk production in Germany are located in Bavaria. Cool! This ties in nicely with the fact that roughly one in four of the 100,000 farmers in Bavaria owns a dairy farm with an average of 42 cows. Incidentally, Bavaria has about 2,900 organic dairy farms – compared to the rest of Germany, this means that over 60 million of all organic dairy farms are located in Bavaria. I think these figures are incredibly helpful in understanding just how important Bavaria and our local farmers are to us (and, of course, to other German states as well). Supporting our own region is becoming increasingly important.

What I took away from the milk workshop

Once again, I've realized how important and yet so easy it is for me and you as consumers to support regional, specifically Bavarian, producers and manufacturers. We all have the opportunity to choose regional products with every purchase, every meal, and every planned cooking or baking session.

Take your time to explore this topic and discover for yourself the incredible variety and high quality associated with Bavarian products. Furthermore, by purchasing Bavarian dairy products, you automatically support sustainable and environmentally friendly production as well as resource-efficient manufacturing – short transport routes, respected animal welfare, transparent logistics models, and much more are all part of your support.

„There are no "disadvantages" to buying local. A quick glance at the label to see where a product comes from only takes a few seconds, and even if you want to delve deeper into Bavaria and its range of regional products, it's neither difficult nor time-consuming these days. The argument that buying local is more expensive is often just an empty excuse. See for yourself next time you go shopping.

It's best to also browse the website of the „"Our Bavarian Farmers Association"“ and discover how incredibly much there is to learn about the various products. Regionality even extends far beyond the exciting area of "dairy products" (milk, eggs, etc.), and you can also find out about Bavarian grain, vegetables, fruit, wood, meat, biogas, but also about Bavarian fish, hops, oilseeds, honey and even "Bavarian exotics".

Personally, I will definitely pay even closer attention to which dairy products I choose on the supermarket shelf and consciously look for opportunities to switch to Bavarian products in my own kitchen. Remember: these days, there's hardly a product you can't buy made in Bavaria. Have you ever tried Bavarian saffron, hazelnuts, Wagyu beef, or even Bavarian shrimp?
