Kitzbühel meets Prague – the event
Food lovers will be thrilled. For the first time, the elegant Hotel Schloss Lebenberg (…more on that soon on my blog…) is offering an exquisite dinner event that skillfully combines fantastic culinary creations from Tyrol and Prague. Behind the stove are Michelin-starred chef Oldrich Sahajdak and Hotel Schloss Lebenberg's head chef Marcel Dornheim. Together, they will enchant you in the hotel restaurant "Das Lambergs" with six diverse and equally exceptional courses. Each chef will also offer their own wine recommendation – perfectly paired with each course, of course.

The evening began with a performance by guest chef and Michelin-starred chef Oldrich Sahajdak. "My love for good food, cuisine, and cooking began when I was very young," said Sahajdak. "My career as a chef has taken me to Germany, Italy, Portugal, and New Zealand. It has always been a great honor for me to learn from the best chefs in the world." After returning to his native Prague in 2006, the dedicated Michelin-starred chef began working for the Ambiente Group, soon becoming head chef and playing a key role in establishing 10 restaurants within eight years. Since 2012, Oldrich Sahajdak has held a Michelin star for his restaurant "La Degustation Boheme Bourgeoise" in Prague. "I focus heavily on local cuisine in my creations. I enjoy combining it with ingredients and influences that I encountered during my time abroad," said Sahajdak.
The menu – what to expect
To give you a little insight, I asked both culinary experts what would be in the pans and pots, and consequently, on your plates. Here's how Friday evening's menu would begin: two different amuse – one from the Prague Michelin-starred chef („Beef Tartare“) and one from our Tyrolean head chef („Alpine Prawn, Cucumber, Pumpernickel“). Throughout the entire menu, one Prague and one Tyrolean dish will always be served per course. Gear one: „Trout, basil, tomato and bacon“ (Prague) and „Veal sweetbreads, potato salad, radishes, mayonnaise, smoke“ (Tyrol); Second gear: „Pear, black truffle, parsley, caramel“ (Prague) and „Black pudding ravioli, creamed sauerkraut, bacon foam, parsley“ (Tyrol); third course: „"Beef tongue, pickled cucumber, blackcurrant (Prague) and "Oberio pork, pretzel dumplings, Brussels sprouts, beer jus" (Tyrol); Dessert: „"Brioche on a stick, nuts, rum" (Prague) and "Moor in a shirt, chocolate sauce and whipped cream" (Tyrol). – Doesn't that all sound wonderful? If you don't eat meat, you can let us know when you book for the evening and we'll serve you a vegetarian alternative. The same applies to any allergies or intolerances – simply mention them when you make your reservation and we will, of course, take your culinary preferences and wishes into account.
Our head chef Marcel Dornheim
Our head chef, Marcel Dornheim, is also very much looking forward to the event in mid-January. "My cuisine is unconventional and intentionally a bit daring. I cook with classic products and preparation methods, but I also enjoy using the latest techniques and trendy ingredients. I like to combine local products with international highlights and skillfully harmonize them. Of course, the season dictates which ingredients end up in my kitchen, because freshness and top quality are absolutely essential in my cooking," says Marcel Dornheim. "In my style of cooking—and our guests will certainly notice this on January 17th—the product always takes center stage. Flavor enhancers, convenience foods, etc.—all foreign concepts to me and our restaurant, Lambergs." When asked how he views the event and what the highlights will be for him personally, M. Dornheim replied: „The “Kitzbühel meets Prague„ event will certainly be both educational and interesting. I’m not only looking forward to seeing my wonderful chef colleague Oldrich, but I’m also hoping to pick up some tips and tricks from him in the kitchen. We’re planning to prepare the menu in the restaurant, so I’m really looking forward to the evening and our guests.“
