SUSHIYA SANSARO – best sushi in Schwabing – The sake tasting event at [location] was a completely new chapter for me in terms of tasting. „Sansaro Sushi Restaurant„, which I had the pleasure of experiencing last week. I already knew Sansaro personally as one of the best sushi restaurants in Munich: in this atmospheric restaurant, high-quality Japanese cuisine and sushi & sashimi are prepared at the highest level. What I personally loved most was the large terrace, where you can enjoy a car-free environment in the summer and where the Japanese maples are now displaying their wonderful autumn colors. In winter, Sushiya Sansaro focuses on a variety of select events, all centered around Japanese culture and, of course, good food. During a nearly three-hour sake tasting, I had the opportunity to immerse myself in the diverse world of sake and experience Sushiya Sansaro's cuisine with its carefully paired dishes.
Sushiya Sansaro – get to know the restaurant
Sushiya Sansaro has been a fixture in the restaurant scene since 2007. I've dined there several times, enjoying delicious sushi both on the tranquil courtyard terrace in summer and at one of the sturdy wooden tables in winter. Sushiya Sansaro understands that Japanese cuisine thrives on high-quality ingredients (many organic!) and skilled Japanese chefs. This popular sushi restaurant in the Maxvorstadt district offers exclusively premium interpretations of Japanese dishes, always infused with Japanese culture. The focus is on the diverse sushi selection, served in a relaxed atmosphere. The chefs' work is always visible, providing an additional element of entertainment. The sake tasting
Sake is considered the "drink of the gods" in Japan, and its equivalent to wine in the Western world. Many mistakenly know sake only as a simple accompaniment to Asian food; some even think it's just an aromatic rice-brewed beverage that is very popular and highly regarded in Japan. However, sake is so much more than that. While wine, for example, boasts around 200-300 different aromas, sake can have up to 800. This fact alone should be an indication of the diversity of this Japanese rice wine.
The tasting I was fortunate enough to attend featured exclusively high-quality premium sake from Japan. Course after course, the 35 or so event participants enjoyed top-class sake samples from "Premium Sake," served with individual food pairings.
Background information about sake, its production, and the origins of the various varieties was shared by Yoshiko Ueno-Müller in an interesting and entertaining way. We were not only in the presence of a multi-award-winning sake expert, but also the first non-Japanese sake connoisseur to hold the "Master of Sake Tasting" certification, as well as a certified sommelier. With charm, wit, and expertise, she guided us through the culinary evening. An accompanying presentation on a screen made everything a bit easier to understand for those new to the subject, but many guests were attending her third such tasting that evening, as there's always something new to discover.
For example, it was new to me that good sake is actually drunk slightly chilled. Thanks to its broad range of flavors, there's almost no dish for which a suitable sake can't be found. This top-class rice wine is produced with a great deal of manual labor, using select rice and pure spring water from the Japanese mountains. Premium sake—free of sulfur and low in acidity—is characterized above all by its absolute purity and its natural umami flavor. I also found it fascinating that there are currently around 1,300 family-run breweries in Japan, all of which are carrying on the 2,000-year-old brewing tradition into the modern age. At the tasting, we were able to sample a total of five different sakes—plus an aperitif made from fresh persimmon, yuzu, and sake. To whet your appetite a little – after all, you can still book the sake tasting for yourself (and your loved ones) – I will now briefly outline the menu I enjoyed, including the sakes I tasted (each between 3-4 cl):
1.) On the plate: „Shiromi“ marinated with sake and kombu seaweed, with salted plum, miso sauce and grilled porcini mushroom (Aburi); in the glass: Imayo Tsukasa BLACK
2.) On the plate: Pumpkin and oyster chawanmushi; in the glass: Ikekame Turtle Red
3.) On the plate: „"Spicy Toro Tataki" with Douchi and mountain pepper on onion salad with sake-olive-lime sauce; in the glass: Dassai 39
4.) On the plate: „Tender Iberico pork“ marinated in sake miso, slowly cooked overnight with persimmon and fig; in the glass: Amabuki Rhododendron
5.) On the plate: „Goma-Kintoki-Yokan“ – sweet potato with sesame paste (steamed with sesame seeds); in the glass: Katsuyama Gen
If all of this sounds like gibberish to you, and you don't speak Japanese or aren't yet familiar with sake: rest assured, it tastes great! There's a wide variety of aromas to discover, somewhat comparable to wine, yet also quite unique. Sansaro offers a selection of sakes, available by the glass, in small bottles, or in large bottles, so you can easily explore the world of sake during a regular visit to the sushi restaurant.

Recently, the SUSHIYA team has also started organizing special celebrations or events on a smaller scale, be it a company Christmas party, a small whisky tasting for private groups, or even catering. For me, in addition to the sake tasting, a sushi course would be a must (more about this), followed by the whisky tasting, which takes place on December 9th, 2018 and can be booked for 89 euros per person. Hard facts
A tasting normally lasts 2.5 hours. In my case, however, it went on for almost three hours, and any guest who wants to stay and order more afterward has that option at Sushiya Sansaro. For a reasonable 79 euros, you get five glasses of sake, five small, perfectly balanced courses, and a wealth of expert knowledge. The restaurant also offers sushi catering on a smaller scale.
