Anyone who enjoys bread and is interested in organic food will know Fritz Mill Bakery. The Munich-based company has been around since 1987, with its production facility in Aying and shops on Rablstraße in Haidhausen and – brand new since June 2020 – on Müllerstraße in the city center. The bakery will celebrate its 35th anniversary the year after next, and in addition to visiting the grand opening, I'd like to find out who's behind it, what makes Fritz Mill Bakery special, and – of course – how their organic range tastes. I'll take you on my Fritz tour in three parts.

Fritz Mühlenbäckerei: The History

Let's begin with a look at the bakery's origins. Fritz Mühlenbäckerei was founded in 1987 by its namesake, Fritz Schlund. At that time, the bakery's first shop, which still exists today, opened on Rablstraße. It didn't remain solely about selling bread over the counter for long, and just three years later, the bakery began supplying organic markets in Munich. From the very beginning, in addition to baked goods, breads, pretzels, and rolls, they also offered cakes and tarts. The absolute priority has always been the highest quality of raw materials and products – that was true then and remains true today. Since 1995, Fritz Mühlenbäckerei has been supplied with grain by the Ulm-based organic producers' association "Kornkreis." This ensures, among other things, the highest quality raw materials, fair supplier conditions, and thus consistent product quality. Following the milestone of receiving the "City of Munich Environmental Award" (1998), Fritz Mühlenbäckerei was already supplying over 50 organic food stores in and around Munich just five years later. In 2008, it finally became a certified organic bakery (Bioland). And as is often the case with growth and widespread popularity, space eventually became limited. Thus, in 2009/2010, a new building was constructed, and the bakery moved to its current production facility in Aying.

Fresh baked goods are baked as needed. That way, there are always fresh baked goods available.

Further milestones followed, such as the "Solar Bread Certification", the listing of individual organic breads from the Fritz Mühlenbäckerei bakery in retail stores (2012), and the further "Bioland GOLD" award for three breads ("Spelt Seed", "Spelt Pumpkin" and "Früetzi") in 2012 and 2014. By 2013, 70 organic food stores were already being supplied with the best organic bread by the Fritz Mühlenbäckerei bakery; today there are over 80 locations.

In 2016, the Munich-based company received further support at the management level, with Dirk Hauschild joining Fritz Mühlenbäckerei as managing director. The following year, the bakery was once again awarded the "Bioland GOLD" certification for its "Ayinger-Landbrot," the "Sportler-Brot" – incidentally, one of its bestsellers – and the "Familienbrot." This provided double cause for celebration, as the company's 30th anniversary was commemorated in 2017.

About two years ago, Fritz Mühlenbäckerei took another important step and began converting its fleet to electric vehicles. The latest highlight is undoubtedly the grand opening this June. Fritz Mühlenbäckerei opened its second shop on Müllerstraße. For the past month, you can not only buy their delicious baked goods there, but also watch the "show baking" live – daily from 6:00 a.m. to 3:00 p.m. – through the viewing window integrated into the bakery from the street.

Numerous reasons speak in favor of visiting Fritz Mühlenbäckerei. Even on my first visit to the Müllerstraße location, one thing immediately stands out: the working atmosphere, and consequently the customer experience, is excellent. While we all expect a certain level of friendliness in service, here the cheerful and warm atmosphere is clearly above average. You'll be greeted with a smile and a friendly welcome. And if you have any questions, you'll receive expert advice on all aspects of their bread selection.

Since good cheer doesn't fill you up or provide sustenance, I inquired further. Another unique selling point is their extensive organic product range, as well as the regional sourcing of their raw materials. These are processed into breads and baked goods with exceptional care and a particularly long fermentation process. This results in exceptionally digestible and delicious baked goods and breads. The Fritz Mühlenbäckerei bakery also stands out for its unique product range.

A first overview: The product range

In this first part, I'll just briefly touch on the product range and present it in more detail in the third part. However, I can reveal this much: the range comprises around 200 products. Besides numerous breads and baked goods, it also includes cakes and pastries, as well as seasonal delicacies (Easter cakes, gingerbread, etc.). Everything you buy at Fritz Mühlenbäckerei is organic. Always and without fail. A particularly noteworthy feature: the bakery has a wide selection of gluten-free breads. Under their own brand, "Wellpane," they offer eight different gluten-free breads. In addition, there are two different types of gluten-free rolls and three vegan breads. The complete range – depending on the season – is available at Rablstraße 38 in Haidhausen.

What you can expect…

In the next article, I'll take you behind the scenes at the bakery. Yes, really, I get to go to Aying and see the production facilities and headquarters of the Fritz Mühlenbäckerei bakery from the inside. I'll be asking: How is production done? When does a Fritz baker's workday begin? What are the processes like, and which departments are involved in the process from dough to finished baked goods? I'll also get to know some of the approximately 60 employees and see how some of the products are made.
