Skyr is a dairy product originally from Iceland, similar in consistency to quark, and it's practically a staple on Scandinavian breakfast tables. It's been an important part of Icelandic cuisine since Viking times. The trend for Scandinavian products has long since reached Germany. Whether it's lifestyle, home decor, or beauty products – Nordic products are very popular with us Germans, as they represent a nature-oriented lifestyle and symbolize a conscious reduction to the essentials. So it was only a matter of time before Scandinavian cuisine arrived in Germany – specifically, the trendy ethnic food Skyr from Iceland.

Following current trends, the traditional Freising dairy Weihenstephan has now produced a Skyr made from skimmed cow's milk that is in no way inferior to the "original" in terms of creaminess and taste. Skyr is considered a true superfood in Germany, is traditionally made from cow's or sheep's milk, and—like Weihenstephan's Skyr—requires only a few natural ingredients. Weihenstephan Skyr is rich in protein with 9.2 grams per 100 grams and has a low fat content of less than 0.2 percent. 100 grams of Skyr contain just 60 energy-boosting kilocalories. Why is Skyr so good for us? – Due to its high protein content, Skyr contributes to the maintenance and growth of muscle mass. It also supports bone health, making Skyr an ideal post-workout snack.

I tried the Skyr – available in a 450-gram tub – from Weihenstephan, and since Skyr was new to me, I wasn't quite sure what to expect in terms of taste. What makes it special is both its exceptionally creamy consistency and its full-bodied flavor. Weihenstephan Skyr is so creamy because it consists of 30 percent quark and 70 percent mild yogurt made from skimmed milk. I personally don't like yogurt that's too sour, but Skyr has only a very mild and pleasant acidity. Since we all have to stay home right now, I'll definitely use the holidays to explore Skyr not only for pure enjoyment but also as an ingredient in various recipes. It's not for nothing that it's considered an all-rounder in the kitchen, and its perfect interplay of mild acidity and creamy consistency refines and enriches both sweet and savory dishes. Recipes like…„Chicken tandoori with skyr marinade“, „Lentil pancakes with apple and chive skyr“, „Fruit bowl with skyr“ or also „Braised vegetable bowl with blueberry skyr“These are just a few examples of the dishes you can create with it, developed by food expert Hans Gerlach in collaboration with Weihenstephan to showcase the versatility of Skyr. Personally, I find Skyr ideal with fresh fruit, a crisp salad, or even as a dip.”.
