GRAND OPENING: Käfer Restaurant „Green Beetle“ – Sustainability is a hot topic and is becoming increasingly important for us personally as well as for our lives together in society. Each of us can contribute and make our own lives more sustainable, resource-efficient, and thus environmentally friendly. The family-owned company Käfer is leading by example and launched a major sustainability initiative ("Käfer Goes Green") in 2020. In addition to countless sustainability-promoting measures and strategies (waste prevention, food waste reduction, use of environmentally friendly materials, optimization of energy consumption and CO2 emissions, etc.), the opening of the first purely vegetarian and vegan restaurant, "Green Beetle," is also part of Käfer's sustainability concept.

The Green Beetle – Concept and Framework

The concept of the newly opened Green Beetle restaurant is designed around sustainability from start to finish. Wherever you look, everything has been selected and integrated with sustainability in mind: the tiles, the decoration, the interior design by the architectural duo MangMauritz, the wall coverings, the furniture and kitchen equipment, as well as the food and drink menu. Alongside its focus on sustainability and health – more on the menu in a moment – the Green Beetle is also a wonderful place to relax and enjoy yourself, and to meet friends and family. During your visit, simply take a look at the many small details, including the swarm of beetles on the wall. It consists of 63 different beetles, no two of which are alike. These porcelain beetles are modeled after ten European beetle species and were created by RaR, driven by their fascination with natural history collections, for the Dutch design distributor Thomas Eyck. Now they adorn the Green Beetle, and you can admire them as you take in the surroundings.

The products used in the kitchen are sourced exclusively from ecologically responsible sources – naturally without compromising the variety for which Käfer is known. When products that are not locally sourced or seasonally available end up on the plate, special attention is paid to Fair Trade and organic farming. For example, the team hand-picks herbs from the English Garden, and fruits, vegetables, and other wild herbs are sourced from the regional grower Kinara. Mushrooms come from the Regensburg delicatessen Zollner, quinoa from the Knab fruit farm, and Jerusalem artichokes from the Topinambur Manufaktur Bayern. The olive oil used at Green Beetle is from Helmut Kranz, who, as is well known, has been cultivating and processing olives without the use of machinery or pesticides for 20 years.

Food and beverage concept

The days when vegan and vegetarian cuisine was associated with "sacrificing enjoyment" are long gone. The variety of plant-based ingredients and meatless dishes is virtually limitless. The selection of completely animal-free, i.e., vegan, creations is also constantly growing. Green Beetle's head chef, Felix Adebahr, focuses not only on using a wide variety of vegetables, tubers, mushrooms, herbs, and fruits, but also on employing diverse cooking techniques, aromas, and vibrant colors to create a truly exceptional culinary experience for his guests. He doesn't simply cook; he also ferments, preserves, pickles, and gently cooks ingredients to retain their freshness and color.

As with the food, the principle of sustainability is also upheld when it comes to the drinks. Therefore, care was taken to ensure that the suppliers (Aqua Monaco, The Duke Distillery, etc.) are locally produced and also have a focus on sustainability. The wines are also certified organic and cork-free. The coffee is also regionally sourced, and the tea is served loose, without packaging or tea bags. It doesn't get much more sustainable than that.

The menu at the newly opened "Green Beetle" is available exclusively in digital form. To view it, scan a QR code embossed in a wooden beetle, which takes you to the menu divided into "Starters, Appetizers, Intermediate Courses, Main Courses, and Desserts." Signature drinks and wines available by the glass can also be viewed via the code.

The menu

Let me tell you, the menu features some truly amazing creations. For example, you can expect dishes like "Colorful Tomato Variety – Burrata di Bufala, colorful tomatoes, strawberry vinegar, orange oil"; "Quinoa Power – Munich quinoa, marinated cauliflower, Bavarian chanterelles, Black Forest miso"; or "Wild Lettuce – beetroot, French radishes, macadamia nuts." As an intermediate course, you can choose from "Green Beetle Caesar Salad – chickpea emulsion, nori, eggplant, and Parmesan," "Corn Foam – plantain, kinara habanero, coriander," or "Modern Italian – homemade potato gnocchi, chicory, chili pineapple.".

The handful of different main courses also continue in the same creative and varied fashion, including "Green Beetle Stew", "Rich Chard", "Late Summer Carrot" and "Potato Terrine" – my absolute favorite from the menu with radicchio, parsley spinach, Uncinato truffles and hazelnuts from Piedmont.

Finally, a "Happy Ending" is offered in the form of a dark chocolate slice with semolina dumplings, pickled berries, and organic sour cream ice cream; "Fruity Nut – Plums, Sicilian Almonds, Coconut Sorbet"; or a selection of homemade and handcrafted vegan slices, sorbets, and ice creams. Hard facts and personal opinion

Green Beetle is currently open exclusively for evening business from 5:30 pm. Starting October 9th, 2021, they will also be offering a vegan and vegetarian brunch – be sure to mark your calendars! The best way to get there by public transport is to take the train to the "Prinzregentenplatz" station and then walk towards Käfer delicatessen – the new restaurant is just 200 meters away. Even if you're not vegan or vegetarian, the sophisticated menu alone makes it worth a visit.
