Festive Enjoyment with Boneberger Butcher Shop || You know I'm a big fan of Boneberger Butcher Shop and always pay attention to the best quality when it comes to meat and sausage. I've already introduced you to their products in five previous articles I've reported on the Boneberger butcher shop, its history and philosophy, its branches and product range, as well as its production facility in Schongau. With the cold winter season approaching and the holidays and Advent weekends drawing near, I headed back to the butcher shop and asked Boneberger what delicious highlights awaited us in their Advent and Christmas displays. Loaded down with half a sous-vide cooked duck, fresh roulades, various side dishes, and more, I headed home. Let's take a look at their winter selection and cook together.

It feels like we're always busier and busier, leaving us with less time to unwind and, for example, consciously set aside time for relaxed cooking with friends and loved ones. At least for me, I don't want to spend all my precious free time in the kitchen, but I still don't want to miss out on enjoying delicious winter and holiday dishes. Especially since the Christmas season is meant to encourage slowing down and mindful enjoyment, Boneberger's winter dishes offer the opportunity to savor high-quality meat without having to spend the entire weekend and/or Christmas Eve at the stove. Quality on the plate AND quality time with loved ones, all in one.

(For those unfamiliar with sous vide, "sous vide cooking" refers to cooking food (including meat) at relatively low temperatures below 100 degrees Celsius in a water bath. Beforehand, for example, the duck or pot roast is vacuum-sealed in a bag to prevent oxygen from reacting with the meat during cooking. Sous vide is also very gentle on the product, resulting in the meat remaining very juicy. The method is ideal for preparing food and dishes in advance, significantly reducing the time and expertise required for the final cooking process to serve a perfect meal.)
I bought a sous vide cooked duck, as well as two roulades and appropriate side dishes, to test in advance whether the products live up to their promises in terms of both quality and preparation.
Here's how to do it! Cooking with Boneberger (handling and advantages)
First, my companion and I approached the Preparation of the duck It's done. Simply take the duck out of the pouch, transfer the sauce already in the packet into a small saucepan, skim off any fat from the surface, and place the duck in the oven at 130 degrees Celsius (top and bottom heat) for 35 minutes. Then, increase the temperature to 240 degrees Celsius for another 10 to 15 minutes – done! You'll get a beautifully crispy, golden-brown duck. (Tip: Optionally, baste the duck once or twice during cooking with a small teaspoon of sauce. This will make it even crispier.) Meanwhile, we've already taken care of the side dishes and the sauce – this just needs to be heated. Place the bread dumplings in simmering (not boiling!) water, optionally along with the rolled potato dumplings, and simmer them for about 10 to 15 minutes. (The dough packet – original Franconian dumpling dough in a 1-kilo package – which you can get from the Boneberger butcher shop, is enough for about six medium to large dumplings. Tip: Moisten your hands before rolling the dumplings; this makes them easier to shape and prevents the dough from sticking to your fingers.) The red cabbage is also ready to eat, but can be seasoned to your liking, though it doesn't have to be. It can then be served with the dumplings, the crispy duck, and the delicious duck sauce (…I could have eaten the whole thing…). All in all, you'll have a complete meal on the table in about 45–50 minutes.
For those who prefer beef (…or both ;-)…), I can recommend the delicious roulades I recommend these from the butcher shop. Filled with gherkins, bacon, and mustard, you simply need to sear them in a pan and serve them with your choice of side dishes and sauce. I used the dark stock from Boneberger butcher shop as a base and reduced it with soup vegetables, an onion, a little sugar, salt, pepper, and red wine to create a delicious sauce. Of course, you can decide for yourself what side dish you enjoy with the roulades. I love Spätzle, so I cooked a packet of their homemade egg Spätzle, which the butcher shop also offers. They only need to be cooked in boiling water for about a minute – and they're done. (Alternatively, you can simply warm them briefly in a pan.)
My personal favorite of the whole package was the duck. It's absolutely foolproof, even if you've never cooked duck before, and it tastes simply perfect. Combined with the delicious bread dumplings and because it's so easy to prepare, it's a 10/10. My companion, or rather, my dining partner, liked the roulades even better, partly because they tasted (almost) as good as their mother's. 😉 I can also recommend the Goulash soup. It only needs to be heated in a small pot and tastes excellent both on its own and in combination with fresh farmhouse bread – slightly spicy and beautifully intense in flavor.
Conclusion: The advantages of choosing products from the Boneberger butcher shop are obvious! Top quality on the plate, reduced Preparation time in the kitchen and therefore more time at the dining table with loved ones and of course one Guaranteed success and enjoyment. I've been regularly buying meat and sausage products, sandwiches, and delicious lunches from the butcher shop for quite some time now.
