PURE Wine & Food | Natural Wine from European and Mediterranean cuisine – Do you still remember my report about the Restaurant No. 15 in Neuhausen Remember? It was about the upscale French restaurant on Neureutherstrasse in Neuhausen, whose chef has now retired. A successor has long since been found, and so the restaurant has been operating since May of this year. Restaurant „PURE Wine & Food“ in the attractive premises. The focus: Great (Natural) Wines from Europe, served with delicious and modern interpretation of Mediterranean cuisine as well as a touch of Orient here and there. I was there to test it out, and I chatted with... Operator and owner Patrick Fischbacher and its southern Italian Mrs. and cook Claudia De Luca.
PURE Wine & Food
The restaurant's name embodies its philosophy, which is reflected in both the dishes and the wine glass. At PURE Wine & Food, in addition to depth and quality in the glass, passion and dedication, as well as the natural production of the wines listed on the wine list, play a crucial role. The selection features exclusively wines whose origins bear the signature of the producers and are diverse, profound, and authentic. The same is true upon first glance at the seasonally changing menu: clearly structured, well-conceived, and featuring dishes created with primarily regional ingredients from smaller producers and suppliers. The menu, spread across two pages in various categories ("Small," "Cold," "Hot," and "Sweet & Savory"), demonstrates once again that a smaller selection is often better. Even a quick glance whetted my appetite, and I opted for three individual courses. Alternatively, there is a "Chef's Choice 4-Course Menu," which, like the menu itself, constantly presents new creations from PURE Wine & Food.
A crucial criterion that characterizes PURE Wine & Food is the selection of suppliers. They specifically seek out small manufacturers, producers, and suppliers, conducting extensive research until the right partner is found. They prioritize regional sourcing and think ahead. For example, the vegetables used at PURE Wine & Food come from four different suppliers who are dedicated to reviving and promoting heirloom varieties. Long-forgotten heirloom vegetables find their place on the menu and on the plates of PURE Wine & Food. The tomatoes come from the modern gardener Peter Kunze in Nuremberg; the meat from the renowned butcher Franz Graf in Austria's Innviertel region; the potatoes from the Billesberg organic farm; and the fresh fish – always wild-caught – from Deutsche See or sometimes the Königssee fish farm. This well-thought-out concept is complemented by the meticulous attention to detail that prevails at PURE Wine & Food. For instance, they offer a daily selection of hummus varieties; Homemade pickled fruits and vegetables; freshly prepared sauces, dips, and the like, always with a subtle touch. I like that.
Ambiance, atmosphere and service
PURE Wine & Food offers seating for 50 guests both on the terrace and inside the restaurant, which is divided into two rooms. At 15 elegantly set tables, a team of six serves aromatic Mediterranean cuisine with a subtle oriental influence. Claudia De Luca and Konstantin Grailer are both at the helm of the kitchen. Warm colors, subtle lighting, and a harmonious blend of wood, decoration, art, and design create a pleasant ambiance. The tables are not too close together, allowing guests to feel just the right amount of privacy with their table companions as soon as they are seated. Contributing to the positive atmosphere and overall sense of well-being is the fact that guests are greeted warmly upon arrival and shown to their (ideally pre-reserved) table.
Menu and selection
My choice wasn't easy, so as a little something to tide me over, I started with a portion of aromatic, homemade pea hummus with peppercorns from Grimminger. (Variety changes daily | Category "Small" | for €5.90). It was served with freshly baked white bread with a crispy crumb. Anyone who doesn't like garlic probably wouldn't have understood my enthusiasm after emptying the small bowl; I found this little culinary start to the evening absolutely delicious. Perhaps it was also thanks to the accompanying glass of Mallorcan organic white wine. For water, I went Italian with Plose. Then the meal began, and the smoked swordfish carpaccio I had chosen, with ratatouille salad, caper berries, and Amalfi lemon cream (Category "Cold" | for €16.90), was served. A particularly delightful touch, in addition to the beautiful presentation on the plate, was the subtle smoky aroma of the delicate swordfish, which only emerged at the very end of the carpaccio, discreet and unobtrusive, thus never overshadowing the other components or the wine. In the glass, the Spanish theme continued, and so I initially stuck with the fresh cuvée of Chardonnay, Parellada, and Prensal Blanc, with its aromas of peach and white blossom.
The second course delighted me before I even picked up my cutlery and tasted it. They served absolutely wonderful, homemade ravioli with a porcini mushroom filling, two kinds of pumpkin, pumpkin seeds, and sage foam (category "Warm" | €16.90), accompanied by a dry, barrel-aged Chardonnay from Burgundy, a "Clos de la Perrière Monopole Bourgogne Blanc 2015." Complex, elegant, and the perfect accompaniment to my menu favorite. It would certainly also be a good match for seafood and fish. I skipped the dessert (category "Sweet & Savory" from €7.50) and instead devoted myself wholeheartedly to my melt-in-your-mouth short rib from grass-fed beef with whiskey jus, Pimientos del Padrón (small, green peppers from Spain), and roasted potato (category "Warm" | €25.90). The third wine served stole the show from its predecessors in terms of wine: a „Planetes de Nin Garnatxes en Amfora“ – 100% Garnacha from the Nin/Ortiz winery.

The PURE Wine & Food restaurant is open every day except Monday from 6 pm to 1 am; hot food is served until 10:30 pm. Whether you're looking for a simple glass of good wine after work or the extensive Chef's Choice 4-course menu, you're always welcome at PURE Wine & Food. The restaurant provides the perfect setting for a pleasant and relaxed evening with friends, family, or colleagues. When you put down your cutlery, I'm sure you'll have enjoyed a wonderful evening with a discerning palate. If you particularly enjoyed a wine during your visit, you can request a refund for any of the wines on the menu. Wine list It can be purchased by the bottle and taken home.
Attention is paid to even the smallest details: empty plates aren't left on the table for too long, water and wine glasses are refilled attentively, the service is discreet yet always attentive, and for colder days, those sitting outside are often offered a blanket. If you enjoy it so much that you'll return again and again, and can even imagine celebrating there, you can inquire about making a reservation for private/business events (from 15 to 35 people) during your visit (Christmas and the accompanying question of the perfect Christmas party location are just around the corner). Making a reservation at PURE Wine & Food is generally advisable, especially on Fridays and weekends. However, if you're spontaneously looking for good food and excellent wines, a walk-in visit is often worthwhile. I give it a resounding thumbs up. I didn't dislike anything, except perhaps that my stomach capacity isn't spontaneously expandable.
