GRAND OPENING: Rustikeria – Bottega Toscana – Munich's city center has gained a little piece of Italy. Since the end of April 2018, Rustikeria – Bottega Toscana has been a fixture of Munich's culinary scene, delighting diners with exclusively Italian delicacies from Tuscany. The menu features cheese, sausage, fish, topped wheat and whole-wheat focaccia (schiacciata), as well as taglieri, crotoni, and piatti. Anyone who loves Italian cuisine, appreciates high quality, and enjoys combining it with Italian flair will quickly fall in love with Rustikeria as a new hotspot.

The Rustikeria – Bottega Toscana

I love Italy and visited often as a child. So it's all the more wonderful that you can now experience a little bit of that Italian holiday feeling right here in Munich. Upon entering, Rustikeria resembles the kind of café or bistro you often find in Italy by the sea or surrounded by beautiful nature and lush green hills. Simple furniture, understated decor, wooden crates repurposed as shelves on the walls, a homemade cake on the counter, and a deli counter stocked with numerous hams and cheeses, antipasti, and spreads. In the background, the ham slicer and freshly baked schiacciatas (Tuscan flatbread; pronounced "ski-ah-cha-ta") – only a few at a time, to ensure everything is nice and fresh.

The Tuscan bottega is operated by Sabine and Massimo Chiti, who has his roots in Tuscany, have made it his mission to bring only the finest products from small, often friendly, producers to Munich. The city itself became his home for love, and Rustikeria – Bottega Toscana brings a piece of his love and connection to his homeland to Munich. The Tuscan flair – in addition to the exquisite delicacies on the menu – is further enhanced in the summer by the option of sitting and enjoying the food on the small terrace.

Simple & simply Italian: The Rusticeria

Ordering, food and drinks

You enter, are greeted warmly, and after a couple of steps you're already at the counter, with tables to the right and the menu hanging on the wall to the left. Whether you prefer to order from the chalkboard or the printed menu is entirely up to you; both are laid out identically. The focus is on the schiacciata, the various topped wheat or whole-wheat focaccias, available for €7.50 with meat, ham, etc., or €7 for the vegetarian option. "Della Casa," meaning "house style," is the most extensive category and includes eight different schiacciata combinations. Each schiacciata is named after a Tuscan city and features different ingredients sandwiched between the focaccia halves.

„La Fiorentina“ with fennel salami, short-aged pecorino sheep's cheese, truffle cream and arugula; „La Pistoiese“ with raw Tuscan ham, medium-aged sheep's cheese, fresh tomatoes and olive tapenade; „La Pisana“ with baked pork loin ham, tuna cream, fresh tomatoes and capers; „La Lucchese“ with air-dried pork neck, Gorgonzola, grilled peppers and spicy olive oil; „La Senese“ with bacon from saddleback pigs, fresh ricotta, acacia honey and walnuts; „La Chiantigiana“ with Tuscan salami, mixed milk soft cheese, dried tomatoes and oregano; „"La Bolognese"“ with mortadella, gorgonzola and grilled eggplant and „La Pratese“ With Tuscan mortadella, mild young sheep's cheese, artichoke cream, and arugula. Greetings from the sea, from the Schiacciata! „L’Elbana“ with tuna fillet, cherry tomatoes, red onions and capers; „La Viaregina“ with anchovy fillet, mozzarella, arugula and lemon zest; „La Grossetana“ with tuna fillet, young mild sheep's cheese and grilled zucchini as well as „La Livornese“ with anchovy fillet, grilled peppers, and olive tapenade. Vegetarians can also choose from four meatless options with mild young sheep's cheese, pears, acacia honey, and walnuts. („L'Arentina“); with short-aged Pecorino sheep's cheese, olive tapenade, sun-dried tomatoes and arugula („La Montalese“); with mozzarella, grilled vegetables, zucchini cream and spicy olive oil („La Campagnola“) or also with mixed milk soft cheese, grilled zucchini, onion jam and walnuts („L'Empolese“) choose. 

The menu also lists the individual types of sausage, cheese, and fish, so you can customize your schiacciata to your liking. The "Della Casa" schiacciata are simply suggestions if you prefer a more traditional Italian experience. If you'd like more toppings between the split focaccia, they're available for an additional €1.50 each.

What else is there?

Taglieri are also on the menu. Translated into Bavarian, these are "Brotzeitbrettl" (snack boards), in this case laden with a generous selection of Tuscan delicacies. The aforementioned hams and cheeses, used for the schiacciata, can also be ordered as a small or large taglieri/bread board. Ideal for sharing, helping yourselves together, and—as Italians prefer—eating with your fingers. The bread board comes in three sizes. The smallest board, with one sausage and one cheese specialty, as well as a crostino, costs €8 for one person and €15 for two people. („L'Aperitivo“).Four sausage and three cheese specialties, as well as three crostini and grilled vegetables on the taglieri – so plenty to fill up a group – are available at the Rustikeria for 24 euros (one person) or 40 euros (two people). („La Rustikeria“). Those who simply want to indulge in the cheese paradise of Bottega Toscana can have all the cheeses from the Tuscan cheese factory served to them for 18 euros. („Il Cerchio“).

Also roasted delicacies („Crostoni“) Prices range from €3.50 to €8. This is Tuscan white bread, which has relatively little flavor on its own, allowing the toppings to shine through even more. At the Rustikeria, it's topped with a variety of ingredients, such as handmade Tuscan sausage, Gorgonzola, tomatoes, and truffle oil. („Il Bono Di Nulla“). The „I Piatti“ (from 8 euros), such as „Antipasto Veggi“, „Il Tonnato“ or „La Caprese“ provide a small snack.

The focus is also on quality over quantity when it comes to drinks. Coffee from the "New York Coffee Company," a 70/30 Arabica/Robusta blend, is served in the coffee cup, and espresso cups feature specialties like "Espresso al ginseng" (for €2.60). Caffè Lungo (€2.60), Latte Macchiato (€3.30), Chai Tea Latte (€3.00), and Matcha Tea Latte (€4.00) are also available. The menu also includes several open red and white wines – primarily from Tuscany, of course – (0.2l glass from €6.00), as well as soft drinks, beer (Ayinger and Peroni Nastro Azzurro), aperitifs, and digestifs.

Personal opinion

At Rustikeria – Bottega Toscana, it's all about ham, cheese, sausage, and bread. If you don't like that sort of thing, you won't be happy here. But if you love it, especially in the Italian ambiance described above, then you'll appreciate Rustikeria just as much as I do. I like it when you can tell that thought has gone into a shop and that everything is done with passion. That's exactly what Rustikeria is all about. Only the best Italian products are served. It starts with the selection of coffee, continues with the homemade cakes, and includes all the little details that you're sure to notice when you visit. I recommend ordering a taglieri, which means trying the different types of sausage and cheese on their own. It's a truly Italian experience, and it has the added benefit of letting you know exactly what you'll enjoy most between your slices of schiacciata next time. I'm a cheese junkie and thought the cheese with pistachio kernels, dipped in onion marmalade (included with the "Brotzeitbrettl" - a traditional German snack platter), was amazing. The mortadella from Tuscany was also delicious. („Mortadella di Prato IGP“) It was fantastic. But be sure to leave room for a small, homemade dessert while you're feasting. They're served in manageable sizes here, too. You simply have to come and see for yourselves; then you'll understand my enthusiasm.

Hard facts

Rustikeria is open Tuesday to Friday from 10:00 AM to 9:00 PM and Saturdays and Sundays from 11:00 AM. All cheeses and sausages can also be sliced to take home, either as cold cuts or whole. If you're coming as a group, it's a good idea to call ahead and pre-order so the team can prepare and you won't have to wait as long.
