The Munich kitchen of the Donisl at Marienplatz

Cooking kitchen at the Donisl on Marienplatz So simple, yet so good: boiled meat! Besides its wholesome flavor and high satiety value, it's also the reason why traditional boiled meat cuisine is experiencing a resurgence in popularity at the Donisl inn on Marienplatz in Munich. A little research quickly reveals that this type of cuisine isn't so easy to find elsewhere in Munich. The typical boiled meat cuisine is distinguished by its long tradition, while the Donisl also presents it in a modern way. Reason enough to take a closer look and try Bavarian boiled meat cuisine.

Boiling kitchen at Donisl – What's behind it?

Here's how it works: Whether you're dining alone, as a couple, or in a group, you'll receive a pot full of fresh soup, served by a waiter in traditional Bavarian dress in specially selected pots. In this soup, alongside fresh root vegetables and herbs, lies the meat you've chosen – portioned according to the number of diners. Numerous side dishes accompany the meat, which are then eaten with the meat in the broth. This style of cooking is characterized, in part, by the use of various cuts of beef, which are slowly simmered and then attractively presented. Once the rich beef broth – optionally with or without strips of pancake – has been emptied, the real highlight of the meal begins: eating the beef in the soup along with the accompanying side dishes. Round 1: spoon up rich beef broth; Round 2: enjoy the meat and its side dishes (buttered potatoes with fresh herbs, creamy spinach, fresh market vegetables, and apple-horseradish and chive sauce). You can choose from various cuts of beef. From lean and tender rump cap to brisket covered with a fine layer of fat, to pickled tongue, everything is available. The special hallmark of this "boiled meat" cuisine, besides the "two dishes in one," is the unique preparation method. The meat simmers for several hours in its own broth until it is tender and practically melts in your mouth.

Beef from boiled meat preparation – meat origin and quality

The exceptionally good meat at Donisl comes from Upper Bavarian cattle raised according to animal welfare standards in the Chiemgau region. This area is known for its traditional small-scale grassland farming, and in this case, the beef is supplied by the Magg butcher shop – the inn's regular beef provider. This ensures that Donisl guarantees its guests the highest quality and regional sourcing.

After the broth, it's time to get down to brass tacks…

Test of the Munich boiled cuisine at the Donisl

To be perfectly honest, I knew I'd enjoy it even before ordering. As someone who loves soup and beef in all its forms, I knew I could only win in terms of enjoyment. Since I was already familiar with the quality of Donisl's cuisine, my feelings during the wait were limited to hunger and anticipation. Both were ultimately satisfied, as my expectations were met.

Besides the friendly service – which is simply part of the overall experience – the soup was definitely above average. I know this partly because I've eaten a lot of soup in my life, and partly because I was sitting at the table with someone who, in turn, had cooked a lot of soup for me ;-). We were both delighted after the first spoonful. You can expect a very rich and perfectly flavorful beef broth with plenty of meat and other ingredients. As delicious as it is, be careful, because the amount of meat, along with the generously portioned side dishes, is substantial. After finishing the soup, we put the empty bowls and saucers aside and turned our attention to the melt-in-your-mouth tender beef. For the two of us, there were three slices of boiled beef. My companion didn't even notice that her knife had slipped off the table, because you didn't really need to cut the perfectly prepared beef at all.

It's fun alone or in a group!

My conclusion: The boiled meat dish at Donisl is a perfectly balanced meal (soup, meat, vegetables, spinach…) that leaves you feeling thoroughly satisfied (and happy). Because you're actively involved at the table, serving yourself soup and plating the meat and side dishes, you quickly feel like you're eating "at home" and immediately feel comfortable. The ambiance, such as the Bavarian tableware provided specifically for the boiled meat dish, also contributes to this feeling. Next time, I'll try the boiled meat dish as Donisl also offers it – as a set called "Dreierlei gemischte Stückel" (breast, tongue, and rump roast), meaning three of the four different cuts of meat in one pot with a side dish. As for drinks, I can recommend – even for those of you who don't usually drink beer – a beer with it. It's simply the best match, and if you're going to do it, do it right. I would order it again in a heartbeat and thought it was absolutely fantastic.

Hard facts and what else is to come…

You can order the boiled meat dish whenever the Donisl is open (see opening hours below). This dish is a kind of signature dish for the traditional inn and is a permanent fixture on the menu. It's best to skip the appetizer, even if you're very hungry – save room for a Bavarian dessert. The boiled meat dish is most enjoyable at the Donisl on Marienplatz as a couple or in a larger group, as this ensures nothing goes to waste and allows you to sample several different types of meat. Alternatively, you can simply order the "Dreierlei gemischten Stückler" (three mixed cuts of meat). You'll definitely leave satisfied. And be sure to take a look around the Donisl – it's well worth it. In my opinion, it's an extremely cozy inn, especially since its renovation.
