Quinoa Chicken Salad | Vegan Salad Cream from THOMY – More and more often I feel like cooking something for myself. It doesn't have to be a four- or five-course meal for myself, but I'd like to try something new. That's how I came across this while browsing the internet. Quinoa Chicken Salad With pomegranate, avocado, and THOMY yogurt cream. I liked the recipe, so I went out to get everything I needed. Instead of the yogurt cream, I used THOMY's new vegan salad dressing. Vegan salad dressing – new to me, so I was curious about the taste. Let's get started!
THOMY's vegan salad cream – what is it used to prepare?
I'll get to the cooking details in a moment. First, let's talk about what I consider the true star of the recipe: the vegan salad cream. It's incredibly versatile – perfect for dips and spreads, but also as a sandwich cream or salad dressing. Its creamy consistency – similar to a slightly thicker mayonnaise – makes it easy to blend. For example, when I used cooked quinoa (tip: use organic white quinoa!), I was initially worried that the vegan salad cream would end up as a lumpy, difficult-to-mix mixture, but that wasn't the case at all, and I quickly had a smooth, even consistency in my bowl.
You can buy the cream in a 250 ml glass jar – resealable and airtight. Personally, I'm not a fan of dressings or salad creams in tubes, pouches, or sachets and prefer working with hygienic glass jars. The cream is 100% vegan and contains water, sunflower oil, spirit vinegar, sugar, starch, fava bean protein, iodized salt, spices, apple juice concentrate, mustard seeds, curry, lemon juice concentrate, thickener, and locust bean gum.
Let's go – I'm cooking!
To be honest, getting a pomegranate was the biggest challenge of this recipe at the end of September. I wanted the seeds to be as fresh as possible and to remove them myself. I finally found one at the fourth supermarket I went to. 🙂 The vegan salad dressing, on the other hand, was very easy to find – as were the original yogurt dressing and the pure sunflower oil. Add to that a medium-ripe avocado, a lemon, salt and pepper, quinoa, chicken breast, celery, and parsley – all for just under €18.
First, bring the quinoa – I used 250 grams – to a boil on the stovetop and then let it simmer until all the water is gone. Meanwhile, I prepared the avocado, pomegranate, celery, and herbs (the pomegranate makes a bit of a mess! ;-)) and sautéed the chicken in THOMY's pure sunflower oil, seasoned with salt, pepper, and paprika. It's a great oil, rich in vitamin E and high in unsaturated fatty acids. Just one tablespoon covers almost 501 TPI of your daily vitamin E requirement.
Okay, back to the stove… once the quinoa is cooked (there should be no liquid left) and has cooled down a bit, all you have to do is mix everything together. Add the avocado last, otherwise it'll get a little mushy. I also added a bit more chicken than the recipe called for and wasn't stingy with the pomegranate seeds. It's best to mix it to your liking. Don't be flexible with the amount of THOMY vegan salad cream; you absolutely have to use the whole jar. Don't worry – it won't make your salad greasy or too heavy. With the ingredients mentioned, you'll have a light yet satisfying salad – especially thanks to the quinoa. The vegan salad cream makes it creamier and juicier. A truly delicious combination. Of course, you can add other ingredients, but I would stick with the original recipe, as it was really good and I was quite proud of myself. I shared some of it, of course, and received only positive feedback.
