The history of the Boneberger butcher shop
By now you know: Before we get to the tasting, I always share a little background information. After all, the right input is essential for perfect enjoyment, right? So, who's behind the Boneberger butcher shop, and what does this Bavarian company stand for? – The Boneberger butcher shop has been around since 1966, exactly 20 years longer than me :-). Besides freshness and quality, Boneberger's unique selling points are a passion for the butcher's craft, attention to detail, and, of course, the resulting regional focus on their products.
Boneberger is a family-run butcher shop with roots in Schongau and branches in the Munich area (in Dachau, Erding, Freising, Fürstenfeldbruck, Gauting, Gräfelfing, Kaufbeuren, Landsberg, Marktobersdorf, Neufahrn, Starnberg, Schongau, and Weilheim) and in Munich itself. In our beautiful Bavarian capital, you can shop at Boneberger at nine locations (in Moosach, Trudering, Giesing, Großhadern, Lochhausen, Haidhausen, Pasing (Arcaden), and Solln) and stock up on the finest meat, sausages, and more.
The beginnings of the Boneberger butcher shop – It all began in 1966 with the takeover of the traditional Großmann butcher shop in Schongau's old town. Even then, the butcher shop was very popular with the people of Schongau, and its popularity, along with the initial slaughtering stock of just five pigs and half a cow, grew in parallel with the continuous optimization and modernization of the business. Boneberger became increasingly well-known thanks to its outstanding quality, its own slaughtering facilities, and the Schongau branch; its popularity continued to grow. Consequently, the small butcher shop of the 1960s evolved into a larger, specialized butcher store.
In 1992, Boneberger opened its first specialist butcher shop outside of Schongau, located in Landsberg am Lech. Here, too, "top quality," "traditional butchery craftsmanship," and the "time-tested, homemade quality" that characterize Boneberger were paramount. Incidentally, "homemade" at Boneberger still truly means "produced in-house." From 1995 to 1998, Boneberger specialist butcher shops were added in Marktoberdorf, Fürstenfeldbruck, Kaufbeuren, and Großhadern – all of them traditional butcher shops with the same high quality standards that Boneberger demands. Incidentally, in every butcher shop acquisition, the employees, meaning their existing potential and expertise, were retained.
The new Boneberger production facility – Around the year 2000, the steadily growing Boneberger butcher shop outgrew its existing facilities, leading to the planning and construction of a new, state-of-the-art slaughterhouse in Schongau-West. With considerable expertise and meticulous planning, Boneberger's new production site was created – to this day the main production facility of the family-run butcher shop. This facility enabled even more modern and comprehensive quality control, as well as an even higher quality guarantee for the products – from farm to counter.
The new and expanded production facility also opened up new optimization potential for numerous other processes within the Boneberger butcher shop: The product range could be expanded to include exciting highlights (for example, new salami varieties, air-dried ham, etc.), and fresh sausage could be produced daily. Two slaughter days per week were also introduced. Thus, even more than 20 years ago, Boneberger customers had a significantly wider selection at the counter than was typical at other butcher shops.
Boneberger expansion from 2000 – Between 2000 and 2008, Boneberger opened several more specialist butcher shops. First in Weilheim and Starnberg (2000), then in Gauting (2001), and a second one in Kaufbeuren (2002). The Munich district of Giesing has had a Boneberger specialist butcher shop since the end of 2002, followed by Freising (2003), Lochhausen (2006), Pasing (2007), and Gräfelfing (2008) – all former traditional butcher shops acquired by Boneberger, which had previously operated according to the same company philosophy. To this day, all these specialist butcher shops offer exclusively high-quality, fresh, and locally sourced products – always produced according to the proven "Boneberger values.".
Innovations at Boneberger from 2010 onwards – Boneberger is constantly thinking ahead and optimizing. In addition to renovations and remodeling of its stores (Großhadern in 2010), the butcher shop expanded its in-house salami and ham ripening facility in 2010 with authentic Italian ripening equipment, enabling the production of even better premium products. These newly installed facilities are just one example of the ongoing innovations, modernizations, and renovations at Boneberger.
Awards for Boneberger – And so the exciting story of Boneberger continues. The many years of this specialist butcher shop have been marked by new openings, modernizations, and numerous awards for outstanding product quality. In 2015, for example, they received the "Bavaria's Best 50" award from the Bavarian State Ministry for Economic Affairs, Regional Development and Energy; followed in 2019 by the State Honorary Prize from the Bavarian State Ministry for Food, Agriculture and Forestry, which is awarded for outstanding performance in the annual product quality tests. This year, Boneberger has already received the highest praise in the form of two "Gold" awards – one for their Weisswurst and one for their head cheese. Thumbs up!
