Del Fiore Gelato – Ice cream of the highest quality made from top ingredients I've probably already shared this as a personal tip with some of you when you've asked me about the best ice cream in Munich. Now, after my recent visit to the new Del Fiore ice cream factory in Sendling, I feel compelled to say it publicly again: If you appreciate good ice cream, you'll love Del Fiore Gelato! There's no doubt about it: The ice cream is different and tastes different. If you've previously been grabbing ice cream from the supermarket freezer or eating it from trays of ice cream boxes stacked up to 20 cm high, you'll be amazed after the first spoonful. And after the second, you'll never want to eat anything else.
What's happened at Del Fiore Gelato
When Del Fiore Gelato was still in its infancy, in mid-2014, I was already interested in it and told you about the café at Gärtnerplatz, including the menu and of course the ice cream. reported. A lot has happened, and I'm happy to share it with you. Del Fiore Gelato is now available in stores, or rather, it's already available in 30 different shops in Munich.(Here You can buy Del Fiore ice cream to take home in 500ml tubs (and soon 150ml tubs). Starting in May, numerous other delicatessens, organic stores, and similar outlets will gradually follow suit. Organic? Yes, that's right! Del Fiore ice cream is now certified organic. However, only those varieties where Stefano De Giglio – the owner and developer of Del Fiore Gelato – can guarantee that the ingredients are of the highest organic quality are explicitly labeled organic. If this isn't the case, the ice cream is made with non-organic ingredients to maintain the high quality standards. And that's the most important thing about their ice cream: top quality! This depends on various criteria. Del Fiore ice cream differs significantly from all other ice cream providers in Munich in one crucial aspect: its production method.
The special production process, or "What makes Del Fiore Gelato so special?"
While many other ice cream producers rely on industry-standard production methods and cost-saving techniques, Del Fiore Gelato has developed its own unique manufacturing process. Crucially, the result is the finished premium ice cream, which, as the final product, exhibits significant quality differences compared to other Munich ice cream parlors. Unlike the typical approach to ice cream production, Del Fiore doesn't use a standard sugar base enriched with various flavors and aromas. Instead, the specific "ice cream base" is created for each fruit. (The term "ice cream base" is actually a newly coined one in this context, as such an innovative and almost revolutionary method of ice cream production as Del Fiore employs has never been implemented before; to put it bluntly, there's no existing word for it in the industry.) Specifically, this means that a hazelnut ice cream from Del Fiore Gelato has a completely different composition and type of sugar as its base than a coconut, pistachio, or vanilla ice cream. Simply put: the focus is on the fruit. First, the best hazelnut, the best coconut (young coconuts with the best aroma), or even the highest quality vanilla bean is selected, and then a framework – the aforementioned "ice cream base" – is built around it. Fascinating, isn't it? A completely new approach and the main reason why each ice cream tastes so special and different. At the factory, I had the opportunity to see firsthand, using hazelnut as an example, just how significant the differences in flavor are. While many hazelnut varieties require a long roasting process to enhance their aroma, the hazelnuts chosen for Del Fiore ice cream are a very specific type from Piedmont. They are only lightly roasted and, in the end – prepared for further ice cream production – have a much milder yet nuttier aroma than their counterparts.
Different not just in terms of "comparing flavors," but also completely different from any ice cream you may have eaten before. With Del Fiore ice cream, and its 12 different flavors available at each location, you'll always taste an average of 301mg/kg less sugar and meticulously crafted down to the last detail. The vanilla ice cream, for example, contains nothing more than milk (organic milk from Berchtesgaden), cream, egg yolks, and natural vanilla. No added vanilla flavoring, just pure vanilla. So there's no "one-size-fits-all formula" for perfect ice cream. At Del Fiore, the formula is clear: treat each fruit individually and create the perfect sugar base to complement it.
Del Fiore Gelato ice cream also undergoes a standard ripening period of at least 12 hours. This is the time the high-quality ice cream mix is given to fully develop its flavor. Another important point: Del Fiore Gelato places great emphasis on sustainability and the environment, in addition to quality. For example, the ice cream cups are made from environmentally friendly, compostable materials, and the ice cream spoons are made from completely biodegradable cornstarch/cellulose.
The offerings of Del Fiore Gelato
A total of 20 flavors are offered. At each ice cream parlor, you can always choose from 12 different flavors and create your own combination. Starting in May 2017, seven organic flavors (three sorbets and four milk-based ice creams) are available. The sorbets include "Chocolate" (500ml), "Lemon and Ginger," and "Strawberry and Mint" (both 500ml and 150ml). The milk-based ice creams include "Madagascar Vanilla" and "Gianduia Nougat" (both 500ml), as well as "Piedmont Hazelnut" and "Grand Cru Chocolate" (both 500ml and 150ml). All sorbets are vegan. The "Yogurt and Honey," "Mango and Lemongrass," and "Young Coconut Sorbet" flavors are not organic. A 500-gram tub currently costs €7 in stores. It's different in ice cream parlors, where prices are differentiated between "regular" and "premium" varieties. Facts, information, opinion
Not all ice cream is created equal! Of course, I already knew that, and even the biggest culinary philistine will taste the difference between the various ice cream flavors. In my opinion, Del Fiore Gelato has what it takes to become Munich's first true "premium ice cream brand." Don't get me wrong: we have plenty of good ice cream in Munich, and at some stands, the lines are as long as if the new iPhone had just been released. But such an elaborate ice cream production process, one that doesn't even remotely focus on "minimal production costs," combined with top-quality ingredients, is something I haven't encountered in Munich before.
As described at the beginning: Certainly, some people who have never had Del Fiore ice cream before will, quite literally, be taken aback at first, but the clear difference in quality is immediately noticeable. Not too sweet, not at all sticky, and leaving no unpleasant sugary aftertaste, the flavors are consistently impressive. My favorite: yogurt and honey, which is also the sweetest flavor. Next comes coconut and pistachio. The "classics" vanilla and chocolate are, in my opinion, the pioneers in terms of "unexpected flavor." It's difficult to describe in words what awaits you here, but I'm sure that anyone who appreciates quality and is perhaps even looking for a vegan and/or organic alternative for top-notch ice cream will become a regular at Del Fiore Gelato.
