eatly dough – fermented liquid batter for stir-fries – We're all having a tough time right now, and virtually every aspect of our lives is affected by the current situation. This naturally includes how and what we eat. Currently, we're "forced" to eat at home, order food, or cook for ourselves. For the latter, I've discovered a real market innovation: eatly teig. It's a fermented liquid made from organic ingredients for stir-fries – versatile, vegan, and gluten-free.

What is eatly?
eatly is batter. But not just any batter, it's fermented liquid, freshly prepared in Bavaria and bottled in reusable bottles. It consists of 100% natural ingredients of the highest organic quality: fermented rice, fermented lentils, and water, and contains very little salt and fat. The batter can be poured directly from the bottle into a pan, making it a time-saving, healthy, and versatile base for numerous stir-fries. eatly can be enjoyed not only with sweet, meaty, fishy, or savory toppings, but also tastes just as good on its own as it does with fruit or various spreads. The possibilities are virtually endless.
What makes eatly dough so special, with its very mild and slightly tangy flavor, is its natural fermentation process. This makes the dough particularly easy to digest – even for people with sensitive stomachs. How does it work? – So-called "friendly" lactic acid bacteria increase the biological value of the proteins, enhance the vitamins, and ensure that eatly dough keeps for a very long time even after opening – this is possible because the dough in the glass bottle is not pasteurized. Even weeks after opening, the dough remains of the same quality.
Application of eatly dough
So, what's the best way to learn? – Exactly! Get your hands dirty and cook. And that's exactly what I did. Beforehand, I learned from the a rich collection of recipes on the eatly website I chose two recipes, bought everything, and got started. Don't expect a long preparation time, because that's one of eatly's advantages: it's incredibly quick.
Since I love eggs, I opted for the "Breakfast eatly" and the "Flamm eatly" because I really like smoked salmon and beetroot. For my very first eatly attempt, I ventured to try the "Flamm eatly." The first batch of batter in the pan was very easy and worked perfectly according to the recipe. Including preparation, the entire process only took 12 minutes. After a few minutes over medium heat, the batter released itself from the pan, and even though it's unusual that eatly doesn't need to be flipped, it works perfectly. Afterward, the batter can be topped – according to the recipe.

The batter can also be prepared a little thicker in the pan: Here's a heart-shaped batter about 2 cm thick.
A tip from me – for every eatly – is to warm the plates beforehand, as some preparation and/or garnishing steps can only be done once the eatly batter is out of the pan. Also, make absolutely sure you use at least 80 milliliters of batter per eatly, otherwise it will be too thin and won't release from the pan as easily – that's what happened to me with my first breakfast eatly.
I then experimented a lot and even tried thicker doughs – see the heart-shaped picture in the gallery, which I then ate with jam – and I can only confirm that eatly is very versatile. The taste is exactly what you would expect from a "mild and slightly tangy" dough. Not too sour and goes well with a wide variety of toppings. In other words, the taste of pure eatly doesn't limit your choice of toppings or preparation methods. What I particularly liked about every variation was that I didn't feel stuffed or overstuffed afterward, but pleasantly satisfied. Thumbs up!
Who is behind it?
The creators of eatly are Claudia and Karl-Heinz Wenisch. Both are big fans of (South) India and found the idea in its street food scene to bring fermented dough to Germany in a high-quality form – easy to work with and also suitable for vegans and people with gluten intolerance. eatly has been around for two years now, the first year of which was spent experimenting and testing in their own kitchen. After that, they tackled the extensive organization and all the necessary arrangements until the eatly dough was perfected and ready to launch.
Why "eatly"?
The name and its origin do not, as one might assume, derive from "eat," but rather have Indian roots. "Idli" are white, steamed cakes made from fermented urad d'oeuvres and rice dough, and are predominantly eaten in the southern parts of India. The name "eatly dough" was derived from this, also because all the ingredients for the eatly dough are sourced from South India and are of the highest organic quality.
Hard facts and personal opinion
One bottle of eatly batter makes approximately four to five stir-fries. A bottle of eatly batter costs around five euros, or you can buy it in packs of two (9.98 euros), four (19.96 euros), or six (29.94 euros). Working out, that means each dish costs just 1 euro per bottle, assuming five dishes. The shop also sells a crepe pan with a batter spreader (24.99 euros), which helps you spread the eatly batter thinly and evenly.
My personal opinion in this case is 100% positive. eatly is perfect if you value healthy eating, have little time, and still want to eat wholesome and varied meals. The eatly dough bottles don't take up much space in the refrigerator door, don't need to be used within a few days of opening, and are made of environmentally friendly, reusable glass, which the founders are happy to take back when empty. Another plus: Even kitchen novices can easily use eatly. All you need is a non-stick pan, eatly dough, a few minutes, and some fresh ingredients.
