Post-event report: This is how "WINE MEAL" went at Brasserie Colette Tim Raue – Last Friday, it was once again "WINE MEAL" in Munich. This time, the meal was served at the popular Munich brasserie "Colette" by Tim Raue. Known for its unusual creations and excellent wines, this time the four-course meal, accompanied by fantastic wines from Lake Constance, took place in the centrally located and inviting brasserie.

Looking back: Wine Dinner – October '18 (Brasserie Colette Tim Raue)

Presented by Mastercard Priceless Munich, this month's "Wine Dinner" event took place at the French-international Brasserie Colette Tim Raue. Anyone who has dined at the restaurant before knows what to expect upon entering: a blend of chic, stylish industrial design with a dominant bar, benches made from old railway furniture, subtle lighting throughout, elegantly set tables, dark walls, and a rather dimly lit, cozy atmosphere.

The evening began with an introduction of the brasserie's culinary director, Steve Karlsch, who spoke briefly about the restaurant and kitchen concept, presented the menu, and kicked off the evening's culinary offerings. Further expertise was provided by the evening's winemaker, Manfred Aufricht, from the eponymous winery near Meersburg on Lake Constance, who accompanied his perfectly paired wines, poured with each course. He spoke with charm and wit about the wines, the winery, the associated family tradition, and the unique location of his vineyards on Lake Constance – completely free from rail or road traffic.

Then it all began, and the menu started. The first course was a Pinot Brut Rosé, made using the traditional Champagne method – a wonderfully tasty dry sparkling wine made from the Pinot Noir grape. Delicious, and the perfect start to what would be a wine-centric evening. As the glass was nearly empty, the first course was served at the ideal moment. It was "Duck Liver, Apple, and Chestnut" – elegantly presented as an elongated piece of unstuffed duck liver on puffed quinoa with small apple balls, thyme, and chestnut cream. The plates were served by consistently friendly staff, accompanied by commentary and background information from the host, Steve Karlsch. I personally found the first course and the introduction to the menu to be very successful and an exciting combination. To accompany it, I had a 2016 Cuvée of Riesling and Pinot Gris – my favorite of the evening. The second course – the intermediate course of the Colette menu – was a pleasant surprise, featuring perfectly cooked slices of plaice fillet with mashed potatoes, sorrel and spinach essence, and baby spinach leaves. Garlic chips and chopped macadamia nuts added a nice crunch as a topping. The wine pairing continued the high standard, with an excellent 2017 Pinot Gris "3 Lilies." The main course was a (for me, too) large portion of "Chicken in Puff Pastry with Jerusalem Artichoke and Grape." The meat was absolutely delicious, the pastry a bit too heavy for my taste, but overall it was a well-rounded dish. The wine pairing, however, was another resounding success: a 2014 Pinot Noir "2 Lilies" from the Trielberg vineyard; a German Pinot Noir. I also gave full marks to the dessert; the delicious apple tart with vanilla ice cream and salted caramel disappeared completely into my stomach. It was accompanied by a delicately dry Yellow Muscat – a truly wonderful combination with a lovely interplay of fruit flavors.

If I were to rank all nine "Wine Dinner" events, this one at Brasserie Colette Tim Raue would definitely be near the top. The wines were superb, and I happily asked for refills. I also noted all the wines (except for the Muscatel, which was good but didn't blow me away) on my personal "Would Drink Again" list. The menu was also delicious, if not particularly extravagant; the service was friendly and competent. As I laid down my napkin and left the restaurant, I was already looking forward to the Wine Dinner event in November. As usual: new restaurant, new concept, new menu, and new wines. Let's see what awaits us.

Culinary delights at resihuber – November 2018 (already fully booked)

Even though all the spots for November are already booked, I want to show you what's included in this month's wine tasting menu. The certified organic restaurant resihuber exclusively uses products from partner farms within the VollCorner organic network. Great emphasis is placed on the direct link between the origin of the food and the connection between the dishes and drinks. Resihuber's head chef, Andreas Lübber, and his team have created a very special five-course menu. It begins with homemade spreads and local bread from the "Brotzeit" bakery; followed by "Pumpkin Carpaccio with Lamb's Lettuce and Pomegranate Vinaigrette." Next comes "Cream of Salsify Soup with Crispy Herb Chip" and "Roasted Guinea Fowl Breast on Mixed Mushrooms and Panisse." The main course is "Pink Roast Lamb Saddle with Herb Crust, Red Wine Shallots, and Potato Gratin." The dessert is a delight: a warm chocolate tart with orange and spiced ragout (clove, cinnamon, bay leaf). The wine tasting is equally exciting, featuring selections from the small southern French winery "Domaine Monplezy," run by Anna Sutra de Germa and her son Benoit Gil. Their light white and red wines are known for their exceptional fruitiness and freshness.

The wine dinner on November 18th at resihuber is unfortunately already fully booked. In December, the next wine dinner will take place on December 16th at the MURAL restaurant on Hotterstraße in the city center. Information about the menu and the winemaker will follow on my website.
