abc The Kitchen Bible – An Encyclopedia of Culinary Arts | Book Review What is a broche? And a brochet? And a brochette? Do you know? Very good – please read on anyway. Don't know? – Then you already have the first (of over 15,000) reason for this fantastic book, because these are just three of a total of 15,000 keywords from 40 subgroups, which are explained in my new – I confess – favorite book and reference work. Rarely have I been so delighted by a book in my hands as I was and am with "abc – The Kitchen Bible." Another work from the Gourmet Edition of the Süddeutsche Zeitung in cooperation with Tre Torri Verlag. (I have already written about the books "„What does Germany eat?“" and "„The legendary chef Hans Haas“from this series reports).
Contents of the Kitchen Bible
The Kitchen Bible. What makes it so special? It's a comprehensive work, an encyclopedia of culinary arts and a reference book with countless entries and explanations of terms from the kitchen and gastronomy, as well as a wealth of information about food, drink, and healthy living. A book like this has never existed before. On top of that, it also includes over 1,000 basic and specialty recipes, ideas and suggestions, and countless helpful tips from the areas of gastronomy, household management, health, and nutrition.
Helpful five-language translator
The 1,248-page culinary bible by author, chef, and restaurateur Hans-Joachim Rose fills a clear gap on the bookshelves of all restaurateurs, chefs, nutritionists, foodies, and basically anyone who enjoys exploring the topics of food, nutrition, cooking, and related subjects. I was absolutely thrilled with this book, and once you start reading and browsing, you'll hardly be able to put this hefty tome down. That might be its only "drawback." At over 2.7 kilos, it's definitely not something you'd carry in your handbag or take on vacation. 😉 But a lot of knowledge requires a lot of space. I also particularly appreciate the "five-language translator" located in the back (starting on page 1,165), so whether you have your recipe in German, English, French, Italian, or Spanish is irrelevant. (Did you know that watercress is called "crescione" in Italian?)
Numerous helpful tables
Also helpful is the purine and uric acid table, which spans over four pages and is included in the "Kitchen Bible." Purine levels in foods and the uric acid produced by the body from them must be carefully checked before meals, for example, by people suffering from gout. The table helps with this. The integrated nutrient table (starting on page 1185), with values for energy, nutrients, minerals, trace elements, and vitamins for a wide variety of foods, further supports a better understanding of individual foods and ingredients in various dishes. Those who enjoy exploring the nuances of flavor and have long been searching for a comprehensive work on spices will appreciate the nearly 50-page spice table (starting on page 1057). The integrated E-number table (starting on page 1105) and the subsequent vitamin table (starting on page 1156) in the back of the "Kitchen Bible" also reveal a wealth of interesting information.
My personal conclusion
In my opinion, this is a fascinating book, page after page, packed with endless knowledge. I highly recommend getting this culinary bible for yourself. It's been a true treasure for me personally, and even though I'm probably more interested in food, nutrition, and food in general than most people, I'm sure you'll also learn a lot of new, interesting, and personally valuable information from this book. (By the way, a broche is an iron roasting and/or grilling skewer, a brochet is a pike, and a brochette is a skewer (either loaded with meat or empty) with meat, vegetables, and so on – did you know that?)
