Tyrolean cheese tasting menu – the event
Do you love cheese, class, and culinary delights? – Then you're in the right place on March 13th in Kitzbühel. Joining you will be the hotel's head chef, Marcel Dornheim, as well as Maitre d' Jules Camaral, hotel director Johannes Lehberger, and cheese sommelier and friend of the hotel, Harald Weidacher. What's on offer? – Five refined courses will be served, each showcasing the diversity and variety of Tyrolean cheeses and the culinary masterpieces that can be created. Marcel Dornheim explains: "Tyrol's culinary scene is incredibly diverse – this is also reflected in the world of cheese, and I'm delighted to be able to present our guests with a fantastic menu, created in collaboration with our long-time partner, Harald Weidacher. For the menu and the evening, we've once again embraced our motto, 'A Piece of Austria,' and will also be serving fine Austrian wines by the glass with each course."‘
I also contacted cheese sommelier Harald about the upcoming event. He not only teaches at the tourism schools (Wilder Kaiser in St. Johann/Tyrol), where he provides practical instruction in serving, beverage knowledge, and cheese identification, but he also leads the cheese sommelier training program in Vienna. As the former chairman of the Austrian Cheese Sommelier Association and a member of the Guilde Internationale des Fromagers, Harald Weidacher truly knows everything there is to know about cheese and gastronomy. Through various events and training courses, he collaborated with Hotel Schloss Lebenberg, and the idea for this exciting cheese evening was born. "On this evening, we want to showcase the wide range of Austrian cheeses and products, exclusively featuring Austrian varieties," said Weidacher. And further: „Showcasing regional and seasonal products from the Tyrolean region is just as important to us for this fantastic event. That’s why I’m also very pleased that the menu will be accompanied by wines from the Erich & Walter Polz winery in Grassnitzberg in southern Styria.“

The Tyrolean cheese tasting menu
I asked what Marcel had planned for this special evening and was given a sneak peek at the menu. The cheese menu begins with trout fillet, cream cheese terrine, spring salad, radishes, and honey cress. The second course is a spicy Asmonte cream soup with grape chutney and bread chips, followed by chili ribbon pasta, grilled green asparagus, cheese espuma, cherry tomatoes, and spring onions. "Two Ways with Beef"—fillet and cheek, mountain cheese risotto, and broccoli—will be served as the final course before dessert: quark cream, apple crumble, and walnut ice cream. The evening concludes with a cheese buffet curated by cheese sommelier Harald Weidacher, offering another opportunity to sample all the cheeses featured in the menu. Look forward to some special cheese selections that Mr. Weidacher will also be bringing along.
Of course, variety and surprises are also guaranteed in the glass. Course by course, wines perfectly matched to the menu (2018 Sauvignon Blanc – Kitzeck-Sausal DAC; 2018 Chardonnay – Leutschach DAC; 2017 Sauvignon Blanc – Czamilla; 2018 Chardonnay – Grassnitzberg DAC; and 2015 Cuvée Urbani; 2017 Beerenauslese – Hochgrassnitzberg) are poured and skillfully combined. All the wines are characterized by their typical vibrant and fresh character and prove to be a wonderful complement to the menu. This evening's wine selection is not only... Polz Winery not only to impress with its wines, but also Morandell, the reliable wine partner of Hotel Schloss Lebenberg for many years.
