Masterpiece in Pasing "What a delicious meal I had!" was my first and only thought after leaving Meisterstück in Pasing – the former Pasing pumping station. I was already familiar with the location from previous visits to its former restaurant, but I'll be completely honest – I like it better now, with its new concept, superb bratwurst, smoked meats, snacks, and side dishes. "Fire and smoke cooking" is the focus of Meisterstück Pasing, along with its more than 120 different (craft) beers. In a previous short post (Link to the short post) I've already told you about the fantastic beer garden at this quietly located spot. Well, the time had finally come, and I took my time enjoying a leisurely meal with my companion in the cozy inn. One thing to note: Do you like meat? Do you like beer? – Then this is the place for you! Let's get started.
What awaits you at the Pasing masterpiece?
First of all? Why "Meisterstück" (Masterpiece) and what's the idea behind it? – The concept is really cool! There are now four Meisterstück locations, two in Munich and two in Berlin. The name says it all: all four Meisterstück restaurants offer only the very best "pieces" from various "masters"—farmers, brewers, bakers, vintners, and so on. This means the concept puts the "producers" of meat, sausage, beer, and other products in the spotlight. The focus for the guest is deliberately placed on the quality and origin of the food.
You decide whether you prefer "fire" or "smoke"—that is, bratwurst cooked over a beechwood fire or succulent meat from the smokehouse with homemade BBQ sauces. A total of eight different sausage varieties are offered—including the "best currywurst in town" (…a little surprise included…)—as well as six different meat options, from chicken drumsticks or pulled pork, to turkey in a sesame bun or pastrami, to entrecote or vegetarian organic celery steak. For a side dish, you can choose from almost ten different options (starting at €3 per side). The salads are really great!
The concise menu also features various "Combos & Samplers" with regional and international delicacies. "Fire 1" and "Fire 2," for example, whet the appetite with Würmtaler bratwurst, Irschenberger, Nuremberg Rostbratwurst, sauerkraut, and Grassbrunner potato salad ("Fire 1" for €18.50) or with "Frog in the Straw," Ritterblutwurst, daily sausage, wasabi white wine, and sauerkraut ("Fire 2" for €22.50). Those who appreciate the best of smoked cuisine can sample a variety of dishes with "Smoke 1" (pulled pork and ribs from Swabian-Hall pork, chicken drumsticks, smoked baked beans, and coleslaw – €19) or "Smoke 2" (pastrami smoked for eight to nine hours, chicken feet, smoked turkey, smoked baked beans, and coleslaw – €24.50). These combo sets are a great way to get a first impression of Meisterstück Pasing. Each dish can be topped off with your choice of three homemade BBQ sauces (Classic BBQ, Pineapple Sweet Sour, or Hot BBQ). If you come as a couple and are really hungry, the „Meister“ with ribs from Swabian-Hall pork, pulled pork, pastrami, Irschenberger, frog in the straw, Würmtaler pork, smoked celery, pickled vegetables, smoked baked beans and potatoes cooked in embers with sour cream should be just the thing for you (for €27.50 per person).
Besides the exclusive use of the highest quality ingredients, all the dishes share one thing in common: they pair perfectly with the diverse selection of craft beers (around 120 different artisanal varieties – about 20-25 of which are non-alcoholic) offered by Meisterstück. On Saturdays and Sundays, there's also a small breakfast selection ranging from €4.50 (for two organic eggs in a glass) to €12 (for the Meisterstück breakfast), as well as snacks and "Bread & Stem" sets (from €5.50). If you're just looking for a light bite, order these sets with various spreads (such as "Honey Mustard" with young leeks and garden cress, "Piri Piri" with Stracke sausage, "Apricot & Rosemary," or "Beetroot & Green Apple") and fresh Würmtal farmhouse bread. The tiresome question "What sweet treat does one eat after a hearty meat meal?" is skillfully answered with "Pasinger Cheesecake", "Brownie", "wrapped Würmtaler organic apple with crumble" and "cheese with fruit mustard".
The Masters and the Beer
What would a true masterpiece be without honoring the respective master? Thus, the individual businesses, farmers, and suppliers ("masters") are highlighted both on the walls and in the menu, or you can find them all listed on the... Website Take a look and learn where meat, sausage, beer and bread come from.
Just as exciting, and also part of the four masterpieces, are the numerous beers mentioned. At Pasinger Meisterstück, you'll find brews from small breweries that dare to create unique brews, as well as classics and rare finds. The beers can be purchased either on-site with your meal or to take home. So be sure to take your time and browse the surprisingly extensive little shop with its beers. If you want to delve deeper, you can also book a small beer tasting at your table – just ask. I myself am not the biggest beer drinker, but at Meisterstück, with its storytelling and perfectly coordinated food and beer concept, even I find myself enjoying it.
Ambience
Click through the photo gallery to get a good impression of the Meisterstück Pasing's ambiance. If I tell you that little cuckoo clocks chime on the hour, the air is filled with the pleasant aroma of grilled sausages and smoked meat, and there's something to see and discover everywhere you look, that should be an extra incentive to come by. I felt very comfortable, partly because the dining room is divided into separate seating areas, and the different table groups and sizes create a cozy, welcoming atmosphere. Besides the open fireplace, the highlight is undoubtedly the sunny beer garden with space for 250 people. Inside, there's room for 100 guests downstairs and another 60 in the separate upstairs room – ideal for events and functions. There's also a small terrace that offers space for an additional 30-40 guests. All in all, it's cozy and inviting, perfect for lingering.
And how does the food taste at Meisterstück Pasing?
Good! Very good indeed! And especially in combination with the (rare) craft beers, it's a skillful and unique offering. My companion and I tried the aforementioned "Fire 2" and "Smoke 2" sets, both of which I found excellent – even though there were some items on the plate that I probably wouldn't have ordered separately. Both the classic Nuremberg bratwurst and the "Frog in the Straw" bratwurst were really good, nicely seasoned, and had a firm bite. "I can't stand blood sausage!" I always said, until I tried the one from Pasinger Meisterstück ("Knight's Blood Sausage"). Exquisite, exquisite, and definitely something different. The sauces harmonize perfectly, and a discerning palate will surely notice the genuine harmony between the sausage/meat and the sauce. I tried several beers, sipping the Munich Kellerbier in its chilled stoneware mug, and also tasting the "Schneeeule" (you have to try it!). None of these names ring a bell? No problem, because that's what Meisterstück Pasing is for – discovering new beers and trying your way through them. It certainly won't get boring anytime soon, as the selection changes roughly every quarter, with new beers constantly being added for you to try and explore. So come on down! I highly recommend a visit.
